  • The Chill Factor: Refrigerate or freeze perishables, prepared foods, and leftovers within two hours or less. Marinate foods in the refrigerator. The Thaw Law: Never defrost food at room temperature. Thaw food in the refrigerator, in cold water or in the microwave if you'll be cooking it immediately. This is because protein consists of smaller units called amino acids, which chain together in many different combinations to achieve different things. Some amino acid chains are created by your body, but some - essential amino acids - must come from your diet. Though all animal and plant cells contain some protein, the amount and the quality of the protein varies a lot. High biological value foods contain enough indispensable amino acids for an adult diet and are considered to be good quality protein. Meat, fish and eggs sit in this category.

Child care providers and parents know how quickly illness can spread among the children in a center. Food is a common way for illness to spread. Workers who have recently been ill can unknowingly contaminate the foods prepared and served to children. Contaminated food products brought into the kitchen can also be the cause of an outbreak. Usually we think of food safety as a summertime concern, but foodborne illness can occur any time of the year. Food contaminated with harmful bacteria and viruses that cause illness spread quickly among children as they share toys, food, toilet facilities, mats, and come in contact with other articles handled by children who are sick or have recently been sick. Bacteria, viruses, molds, and parasites may contaminate both raw and cooked food products. The good news is that most of the foods produced and sold in the United States are safe to eat. The United States Department of Agriculture, the Food and Drug Administration, and other government agencies establish regulations and monitoring systems to ensure a safe food supply. Food products can be mishandled anywhere along the food production chain and contamination with harmful microorganisms can occur. Because microorganisms (organisms too small to be seen by the unaided eye) cannot be seen, all food products must be handled carefully. Some microorganisms cause food to spoil-smell and look bad. When food smells bad, we get the message and do not eat it. Unfortunately, many of the microorganisms (pathogens) that cause foodborne illness do not alter the smell or the appearance of food.

Have you ever cut into a roast or a turkey in the oven to see if it has finished cooking? It's an inconvenience, especially if you have to do it several times. Use a meat thermometer! It takes the guesswork out of cooking. A meat thermometer can help you:
  • Prevent food borne illness;
  • Prevent overcooking; and
  • Hold foods at a safe temperature.
If you don't regularly use a meat thermometer, you should get into the habit of using one. A meat thermometer can be used for all foods, not just meat. It measures the internal temperature of your cooked meat and poultry, or any casseroles, to assure that a safe temperature has been reached and that harmful bacteria like certain strains of Salmonella and E. Coli O157:H7 have been destroyed. A meat thermometer should not be a "sometime thing." Use it every time you prepare foods like poultry, roasts, ham, casseroles, meat loaves and egg dishes.

Guidelines Sudden power outages can be frustrating and troublesome, especially when they are prolonged. Perishable foods should not be held above 40 degrees for more than 2 hours. If a power outage is 2 hours or less, you need not be concerned, but how do you save your food when the refrigerator is out for longer times? Being prepared can help. By planning ahead, you can save your perishables. What do I need?
  • One or more coolers. Inexpensive styrofoam coolers can do an excellent job as well. Shelf-stable foods, such as canned goods and powdered or boxed milk. These can be eaten cold or heated on the grill. A digital quick-response thermometer. A digital thermometer should be a necessity in your kitchen anyway. With these thermometers you can quickly check the internal temperatures of food for doneness and safety.
