I've worked in El Salvador in the NGO sector, teaching related. I'm going back there - this time looking to teach in a college (adults, probably a lot of business English too). I've just finished a brush-up course - the TESOL through the company Teach International. It's based in Brisbane but I did the in-class part in Melbourne. The rest is online. I was really happy with doing it this way, and I am certainly one to be comfortable with doing courses in Latin America. I just feel that it's comfortable doing it in your own country, and Australia has such a fantastic ESL reputation. I'd suggest doing the course here, and then gather teaching resources - here - to take to LAm with you.
Feel free to email back if you want, and I REALLY hope that if you're going to Central America, you spend some time in El Salvador. It's a really different experience, I think it would touch you deeply.

T he Center of Latin American Studies maintains an ever-expanding collection of classroom materials (for a variety of age-levels), which are available on loan to both K-12 and college-level educators in Kansas. Items available include over 360 videos, 150 compact discs, 55 music cassette tapes, 21 slide collections, 30 country and topical packets, 22 books on incorporating Latin America into the curriculum, 14 sample classroom units, and a variety of bibliographies.     At www.alaskool.org we feature some of the greatest materials on Alaska Native history and culture available, and the tools to help teachers use them in the classroom. We feature an Interactive Curriculum Planner and Class Bookmarks as well as news and historical documents, photographs, and streaming audio and video recordings. The Alaska Native Curriculum and Teacher Development Project brings together teams of teachers, elders, and community members in various parts of Alaska with university-based specialists to develop curricula on Alaska Native studies and language that is available to all schools through the internet or on CD. The project is supported by a grant from the U.S. Department of Education. Alaska's Native people include Inupiaq, Yup'ik, and Cup'ik Eskimos, the Aleut, and Tlingit and Athabaskan Indians.
