Pullman, WA Extension Oregon State University Val Hillers Corvallis, OR 97331 Dept. of Food Science and Human Nutrition Washington State University Pullman, WA Theo Thomas Washington State University Pullman, WA Yakima County Cooperative Extension Cheeses made in traditional ways, including use of raw milk, develop unique flavor and texture characteristics and are highly valued in many cultures. However, fresh (soft, unaged) cheeses made from raw milk have been more frequently associated with foodbome illness than any other type of cheese.[1] Queso fresco is a popular fresh cheese in Latin America that is traditionally made with raw milk.[2] In 1997, raw milk queso fresco was implicated as the source of a major outbreak of Salmonella typhimurium in Yakima County, Washington.[3] In response to the outbreak, we developed an intervention that included development of a recipe for pasteurized milk queso fresco and safe cheese workshops conducted by Hispanic grandmothers. The effectiveness of using grandmothers (Abuelas) as educators was documented in the Healthy Kitchen project from Colorado State University.[4]

In cooperation with the University of Palermo in Buenos Aires, Knox offers a term of accredited academic study specially designed to emphasize the social sciences and language. Distinctive features of the Program are its environmental outlook, its concentration on the southern cone of South America, and the possibility of internships. Courses are taught in Spanish by University of Palermo professors. All students take a core course (which includes two educational trips), language, and pursue a combination of electives, mostly chosen from those offered by the program. A series of talks are given by prominent figures on different aspects of Argentine culture. All students live in the homes of Argentine families in Buenos Aires. Studies in Latin American Culture and Society is an interdisciplinary program for students seeking a comprehensive understanding of life in Latin America and wishing to develop fluency in Spanish. This program, which focuses on the humanities and social sciences, is designed to take full advantage of its Costa Rican setting. Language study is stressed as the key to understanding the culture. Course work in language, literature, geography, anthropology, politics and cultural change enables students to develop insights which are reinforced by field trips and two weeks of field work in rural areas. In San Jose and its environs, students live with families both to improve their language ability and enjoy personal involvement in the daily life of a Latin American community.

Latin American Studies The Latin American Studies Minor is an Area Studies program designed to foster an appreciation and knowledge of Latin America. With an area two-and-one-half times larger than the United States and a population nearly twice that of the United States, Latin America is a region of great significance. Its historical development has been influenced by indigenous cultures, European colonialism, and the tension between state sovereignty and foreign influence. While this development has produced the diverse cultures of Latin America, it also contributes to a shared identity. The Latin American Studies Minor promotes the study of Latin America as a significant world region of intrinsic interest - its cultures, history, literature, and politics. The program also offers students the opportunity to examine Latin America’s relationship with the United States. Latin America is one of the United States’ most vigorous export markets, and the expansion of regional trade agreements illustrates the increasing interconnectedness of the Americas. The Minor offers students the opportunity to study trade and other aspects of U.S.-Latin American relations such as economic aid, immigration, and the environment.

For 2004 FLAAR is initiating several new programs in Maya iconography in cooperation with the Museo Popol Vuh. Check back this summer for more information. If you wish to work on any of these projects, we accept volunteers from universities, museums, or individuals who have special talents. Sorry, no short time volunteers (has to be a reasonable period), no volunteers off the street (has to be arranged in advance).     Introduction A pathfinder is a tool for finding the way. It is not meant to be a comprehensive, all-inclusive bibliography, but instead a starting point for students with little idea where to begin research. The ideal pathfinder is one that leads to other places of learning and discovery. For those who seek to learn more about the important region of Latin America (here used to refer to all lands south of the United States), this pathfinder offers fundamental resources to begin investigation. Upon consulting these works one will have a much better grasp of the subject matter and ideas about where to proceed next. Back to the top Browsing Areas The Library of Congress classifies Latin American resources in a couple of general areas. It is useful to know these call numbers in order to browse works that may be of great help in research. Some other useful materials are located in other places based upon the predominant subject content, so don't rely solely on these areas but instead think broadly. For example, there are books about education or economics that have substantial information relevant to Latin America but they located in the areas for their respective disciplines instead of the general area for Latin America. Think interdisciplinary and look around in order to achieve the most effective results in your research.
