    I spent 6 months in Mexico and Central America in 1972 and '73. My tastebuds remember the experience vividly. I haven't been able to find seed for everything I came to enjoy in that part of the world, in fact some of the vegetables I remember keenly, I still haven't been able to identify and doubtless there are some that we would have difficulty growing.     These small black beans are used throughout Mexico and Central America in refritos, refried beans, as well as soups, stews, etc. Grown as regular bush beans, they also make an acceptable snap bean. Flavor is rich. 2 ounce package Herbs W554. CILANTRO-LARGE LEAF
    Cilantro and coriander are the same plant. However, the primary use of coriander is the seeds so your standard US coriander is bred to bolt quickly and set lots of seed. The primary use of cilantro in Latin American cooking, on the other hand, is the leaves. Now we have a special variety that is bred to maximize foliage production and not to bolt. In our trials, this variety produced three times the yield of regular coriander and over a much longer period. The first thing you notice about cilantro in the garden is its unique odor, hard to describe, fresh and wild, I'd say. It is often used in combination with tomatillo, tomatoes, and chiles, creating unforgettable sauces. It is also known as Mexican parsley or Chinese parsley.

    I would never have thought of making a soup with pureed avocados! A lot of the recipes sound odd but are delicious. A few, admittedly, are just odd. I was having a look here to see if there might be a hardback edition. My current copy needs to be replaced!

They have all been very intersting and delightful so far. Some of the dishes can be a little complicated to prepare though.     Latin American cuisine is a mix of worlds, old and new, near and far, native and imported. The region’s culinary magic offers food manufacturers a wealth of opportunity. Latin American cuisine has a mixed genealogy. Like its very name, it is a blend of the foods and preparation styles of the native peoples of Central and South America and the culinary traditions of the European peoples that “discovered” the new land. Latin American cuisine begins in the Halls of Montezuma, when Hernando Cortez met the Aztec chieftain. Cortez’s brigands may have marched away with the gold, but they left behind sufficient seeds of Old World cuisine to mix with the culinary patterns of the native land. The pattern was similar throughout Central and South America.
    Hot, Hot, Hot—But Mostly For Flavor
    Culinary experts regard Mexican food as the most interesting and complex in Latin America, perhaps because it has the deepest roots in the indigenous cuisine of mezo-America. The “mestizo” phenomenon—blending the food of the indigenous tribes with Spanish cuisine—commenced in 1519 and developed over the next three centuries, picking up a French influence along the way. Mestizo found freedom and emerged as a respectable cuisine after the masses received the first bones of recognition from the ruling class following the Mexican Revolution of 1910.

    I tried the Jerk marinade recipe for chicken and curry goat (lamb) and both came out delicious. Even though the jerk recipe I have been following for a while now calls for green onions and brown sugar, both of which are omitted in the recipe from this book, the result (it uses ginger and garlic that I havent seen in other jerk rubs before) was delectable. Following the recommendation of the author, we recently visited Vernon's Jerk place in the Bronx and were very pleased with the food!! I have been dabbling in caribbean/cuban/spanish cuisine for a little while now and this book is a must have if you wanna prepare authentic latin american dishes! This book also has a huge dessert section. Colombian American Guava Bread, Pumpkin Flan and Coconut Bread Pudding all came out excellent! Happy cooking! I am sure this will be a book you'll keep coming back to every time you feel like whipping together something spicy and exotic!
