Kwanzaa
To experience the evolution of a cultural holiday is a rare event not often seen in most lifetimes. Like sensing the shifting but steady change of light in a total eclipse of the sun, we are coming into the brighter light of Kwanzaa. This African-American holiday was first created just thirty years ago and over time has spread to become a welcome tradition among those of African heritage. Despite its awareness among the literati and the scholars, Kwanzaa is still not widely observed across all audiences. Many African-Americans have heard the name but know little of the traditions and cultural aspects of Kwanzaa. Yet, Kwanzaa has really gone mainstream, in the sense that it has attracted a good deal of media attention. There are no less than three books on Kwanzaa and their recipes have been released from major publishers. Kwanzaa is the African American cultural celebration that occurs between Christmas and New Years Day. While it is not founded on religion, it does bear a strong spiritual base in the sense that it emphasizes thought and meditation on seven key principles. And with all holidays, food and cooking become a focal point on which the customs and rituals revolve.

A Kwanzaa Keepsake: Celebrating the Holiday with New Traditions and Feasts Although Kwanzaa is celebrated at the end of the year at the same time as the Christian celebration of Christmas, the Hindu celebration of Devalue, the Jewish celebration of Chanukah, and traditional New Year's celebrations, Harris notes that it is not necessarily a replacement for any of the holidays. "Kwanzaa may be celebrated jointly with any or all of the year-end holidays," Harris says. "More importantly, it offers a time for reflection and self-affirmation that is in contrast with the rampant commercialization that has overtaken some of the other holidays." While the basic Nguzo Saba or Seven Principles remain unchanged, Harris points out that celebrants are open to find the way to the holiday that best expresses their individuality. "There are as many different types of Kwanzaa as there are types of families in the African-American community," Harris says. "Wherever we have stepped, our transformational skills have changed the country and the hemisphere in domains as wide-ranging as retail sales, cooking, music and language. In our world, there's always room for improvisation and each celebration brings something else to the kaleidoscope of possibilities that is the holiday."

December 29, 1997 JOLLOF RICE WITH CHICKEN 1 tablespoon seasoning salt 2 teaspoons thyme 1 1/4 teaspoons black pepper, divided 1 (3-pound) chicken, cut up 2 pounds stewing or stir-fry beef 1 cup canola or peanut oil, plus 2 tablespoons, divided 6 cups water, divided 2 cups uncooked long-grain rice 3 cups shredded green cabbage 1 bag (16 ounces) frozen mixed vegetables 1 can (28 ounces) stewed tomatoes 1 can (8 ounces) tomato paste 2 teaspoons salt 3/4 cup (about 1/2 pound) smoked turkey, cubed 1 large onion, chopped 1/2 teaspoon cayenne pepper Sprinkle the seasoning salt, thyme and 1 teaspoon of the black pepper on the chicken and beef. Heat 1 cup of the oil in a large skillet or wok. Brown the chicken and beef in the oil. Set aside. Meanwhile, in a large saucepan, bring 4 cups of water to a boil. Add the rice and cook until about half done, approximately 30 minutes. In a large skillet, saute the cabbage in the remaining two tablespoons of oil. Add the frozen vegetables. Set aside. Add the stewed tomatoes, tomato paste, salt, the remaining 1/4 teaspoon of pepper, the smoked turkey, onion, cayenne pepper and the cabbage mixture to the half-cooked rice. Add the remaining 2 cups of water. Bring to a boil.

  • Kujichagulia (self-determination) to define ourselves, name ourselves, create for ourselves, and speak for ourselves.
  • Ujima (collective work and responsibility) to build and maintain our community together and make our sister's and brother's problems our problems and to solve them together.
  • Ujamaa (cooperative economics) to build and maintain our stores, shops, and other businesses together.

    • 1/2 cup chopped onions
    • 1/2 tsp salt
    • 14 oz tuna
    • 3 tbsp olive oil
    • 2 tbsp tomato paste
    • 2 cups dried, cooked, black-eyed peas
    • 2 tsp hot red crushed pepper
    • 1 large chopped tomato
    STEP BY STEP:
  • Preheat an oven to 350 degrees F
  • Sauté 1/2 cup of chopped onions, in 3 tablespoons of olive oil. Transfer to baking dish
  • Pour this mixture over 2 cups of dried, cooked, black-eyed peas
  • Combine with 1 large chopped tomato, 2 teaspoons of hot red crushed pepper
  • Bake this mixture for 10 minutes. Then add, 1/2 teaspoon salt, 14 ounces of tuna, 2 tablespoons of tomato paste
