System of Education History Culture and Tradition Cuisine System of Education History Culture and Tradition Kespe (Noodles) a la Kazakh Ingredients: 130 g beef or mutton (brisket), 64 g vegetable oil, 120 g onion, 3 g garlic, 1 g ground red pepper, 240 g wheat flour, 6 eggs, 50 g water and 1 g salt. Prepare thick dough and let it sit for 30 to 40 minutes. Roll out the dough into small sheets 1.5 mm thick, dry them a little, roll them up and slice them into thin strips (noodles). Cut meat into 23 mm cubes, fry in vegetable oil, add salt, pepper and bouillon and cook until done. Boil noodles, then serve them with meat, and sprinkle the mixture with greens. Serves four.
Pumpkin Samsa Ingredients: 300 g wheat flour, 140 g water, 2 g salt, 400 g pumpkin, 80 g fat of sheep's tail, 100 g onion and 10 g ground pepper. Cut pumpkin and fat into small cubes, add some chopped onion, salt and pepper, and mix everything. Bake for 25 to 30 minutes at a temperature of 200-220 degrees Centigrade. The pumpkin samsa can be served hot or cold.

Pop music plays in cafes with decor from the previous century. Highly skilled engineers return to their ancestral villages every weekend, where they tend farm animals, raise vegetables, keep bees and make wine. There's a small village several hours outside of Sophia where water buffalo are still herded out to the river each morning (and elderly women in the village make the most wonderful feta-style cheese from buffalo milk.) In which case, you should visit the bazaar. They keep the heads of the slaughtered animals so that you can be sure the animal was bright-eyed and healthy when its throat was cut. Almaty Actually, Almaty is nice and there's some good hiking in the beautiful surrounding mountains. In fact, there's good hiking in lots of places around Kazakhstan. This might be the reason that Kazakhstan is heavily featured in trekking guides, but almost invisible in other tour books.

Kazakhstan, not the first country to think of when you are looking for a holiday destination. Most people know the country because of the space center Baykonur. Others will remember that the city Alma-Ata (now renamed to Almaty) was once the place where world records were broken on the highland ice skating ring of Medeo. Only very few will know that this is the homeland of the Dutch tulip and many rare animal and flower species. Kazakhstan is one of the largest countries in the world. Most of the area is covered with desert or steppe. Only the south border of the country is an exception. Where the flat land merges with the Talass Alatau mountain range, a unique habitat has been created for flora and fauna. This was already recognized in the early years of the twentieth century. In 1926 the Aksu-Jabagly nature reserve was created in this region, the oldest in whole Central Asia, named after the two main rivers Aksu and Jabagly in the reserve. By being a protected nature reserve for more than 75 years, much of the original animals and flowers were able to survive in this region, creating one of the best preserved nature regions in the world. Independent if you are looking for ibex, bears, birds, insects, flowers or want to catch a glimpse of the endangered snow leopard, this is your one-stop holiday destination on the globe.

E ATING THE K AZAKH W AY T raditional Kazakh food reflects the customs of the nomadic peoples and also Middle Eastern influences. The nomads feasted on mutton, milk, cheese and bread. To these basics Middle Eastern methods of preparing rice, savoury seasonings, vegetables, legumes and yoghurt have been added. The many Russians in Kazakhstan eat a more typically Russian diet, with meat, potatoes, dumplings and vegetables. A t a traditional meal, tea, called chai , is served first, with breads, nuts and sweets, as an appetizer. The main dish may be boiled mutton. Foods for special occasions include cold noodles with a horsemeat sausage called qazy , a rich mutton stew known as kuyrdak and a meat-and-noodle stew called besbarmak Pulau is a much-loved mixture of rice, fruit and spices. Noodle soup with radishes and peppers is called kespe Y ogurt, known as katyk , is often used in cooking. Cookies, halva, raisins, nuts and fresh fruit are enjoyed for dessert. Milky drinks are popular. Koumyss is fermented mare's milk and shubat is fermented camel milk. Vodka toasts at celebrations are part of Kazakh and Russian custom.
