Customer Reviews Jewish Cooking in America : Expanded Edition A Taste for Mind and Tongue
The receipes are functional, even if you are not a gourmet chef. But the stories behind them are just fun to read! A tastefor the mind and tongueof what life was like for some of our ancestors. I recommend the story of the orange, and the recipe for cranberry applesauce! An excellent cookbook to read and to cook from What I love most about this cookbook is how international it is. I've never seen another cookbook with so many great recipes from so many different countries. It makes sense really, if you consider that Jews have come to the U.S. not only from Eastern Europe, but also from Egypt, Iran, Turkey, Cuba, Mexico, Morocco, Spain, etc. Consequently, many of the recipes, such as ceviche and chicken adobo, were a welcome surprise in addition to Jewish favorites such as knishes, hamantashen, and matzoh ball soup. Introducing most of the recipes are fascinating personal stories of the people who've brought their wonderful culinary traditions to America. Any food lover/cook will appreciate the heartfelt style of this excellent cookbook.

Jews have lived in just about every country in the world, from Mongolia to Zimbabwe. In each country that the Jews have found themselves in they have adapted local recipes to meet with the dietary laws found in the Torah. Those adaptations that became popular, easily migrated from one Jewish community to another. This is one of the reasons that Jewish cooking has, at its very core, an international flavor.
In the Kosher Kettle: International Adventures in Jewish Cooking , Sybil Ruth Kaplan has compiled over 350 kosher recipes from around the world. These recipes highlight the breadth and scope of the Jewish culinary experience and they provide cooks with a wealth of dishes to add to their repertoire. The recipes found in this book come from 27 different countries including Belgium, Hungry, Greece, India, Israel, New Zealand, Russia, and Thailand. Secrets of the Silk Road
Elaine Hallgarten meets a grandmother in north London who continues the Jewish cooking traditions handed down by her forebears in Uzbekistan. Photographs by Arthur Meehan. Little did I realise, when I went to Finchley, in north London, to talk to Miriam Abramoff, that I would be transported, gastronomically speaking, along the road to Samarkand. As I discovered, her reputation as an inspired cook is well founded. Miriam's forebears were part of the Jewish community of Bukhara, Samarkand and Tashkent, in the area that is now the republic of Uzbekistan. In 1922, her parents emigrated to Palestine, from where she came to London, 50 years ago, to marry her second cousin, Jack. "I remember that he looked like Tyrone Power," she says, with a twinkle in her eye. Sitting at her kitchen table, talking with Miriam and her daughter Lilian about the food she cooks, I can almost imagine we are in Bukhara. The location may be very different but, in many ways, the rhythm of Miriam's life is similar to that of her mother and grandmother. Her weekly cooking routine is bound up in this tradition, because it is geared towards the Sabbath. Orthodox Jews may not work on Saturdays, but food may be put into the oven to be ready for lunch on return from the synagogue. Preparation starts on Thursday, when Miriam invariably makes sholeh, a heavy risotto-type dish. Rice is a staple of Bukharan cuisine, which was influenced by the surrounding cultures of Russia, Persia and Afghanistan, and different varieties of rice are used for different dishes. Miriam makes sholeh with pudding rice, vegetables, turmeric, and either chicken or red meat. It is a good way to use up bits and pieces in the fridge, so that she can start afresh for the cookery marathon on Friday.

If you answered "yes" to any of these questions, you may want to join us in a B'nai Havurah Jewish Cooking Group WHO Up to 10 people (adults only please) with at least some cooking experience and an interest in exploring contemporary Jewish/ethnic cooking WHERE We will meet in the homes of Dan Taubman and Susan Cooper. Exact dates and locations to be determined. WHEN As your hosts, we've selected the following dates/times that work for the two of us, and have tentatively planned a theme for each session. All are Sunday afternoons from 4:30-6:30 November 23 Contenporary Israeli Dinner December 14 Hannukah/Designer latkes January 18 SOuthern American Sephardic February 22 Purim Dinner WHAT Prior to each session, we'll ask each person to sign-up with a partner to prepare one of the dishes for that session's meal. Most will involve some advance preparation to be done at home and then will be completed while we're together. We'll share what we learn about the preparation of each of the dishes and of course we'll all share in the tasting! At the end of the four sessions, the members of the group will discuss whether to continue.
