Here are a few basics of Japanese cooking that are used in other recipes in this section. Katsuo Dashi (Basic Dashi Stock)
Ingredients:
  • 2 1/2 x 1 1/2 in. (6 x 4 cm) dried kelp (konbu)
  • 7 cups (1 3/4 liters) water
  • 4 cups (50g) dried bonito flakes
Directions: Wipe the kelp with a damp cloth, then put it in a saucepan with the water. Bring to a boil uncovered; just before the water comes to a boil, remove and discard the kelp. Sprinkle in the bonito flakes and remove saucepan from heat. As soon as the bonito flakes start to sink, strain stock and discard bonito flakes. This stock, which is the basis of many sauces and soups, can be refrigerated for up to 3 days.
Helpful hint: Instant dashi granules (dashi-no-moto) make a quick alternative if small amounts of the stock are needed; however, for soups and stock for simmered dishes, it is preferable to make your own dashi.
Dengaku Miso
Ingredients:
  • 1 3/4 cups (500g) red or white miso
  • 1/3 cup (100ml) sake
  • 1/3 cup (100ml) mirin
  • 3 tablespoons (50g) sugar
Directions: Put all ingredients into a saucepan, preferably nonstick, and heat slowly, stirring from time to time. When it has come to a boil, reduce heat to a minimum and cook, stirring from time to time, for 20 minutes. Cool and refrigerate for up to 1 month.

Now he's put the results of his own experiments in fusion cooking into a book, "The Breakaway Japanese Kitchen: Inspired New Tastes" (Kodansha, 2003, $27), full of easy recipes for American home cooks to try. Most of them take very little time to prepare - including the two sampled here. With the "bacon" recipe, Gower says, the idea is to slice the lean pork very thinly so it doesn't need much cooking; the sugars in the marmalade brown very quickly under a hot broiler. The "bacon" is good with rice, some pickles, and perhaps a salad or other vegetable side dish.

Iron Chef - Popular Japanese TV Show
Each episode presents a culinary battle between two chefs in "Kitchen Stadium". A contestant, usually a famous chef from Japan or elsewhere, is pitted against one of the show's four "Iron Chefs". Each of the Iron Chefs is an expert in a different cuisine, either Japanese, Chinese, French, or Italian. Almost all battles require the opponents to cook a multicourse meal in which a special theme ingredient plays a starring role. The chefs have one hour to complete their dishes. At the end of the hour, a panel of celebrities tastes and rates the dishes and crown a victor. The winner is said to be the chef who best expresses the unique qualities of the theme ingredient.

sesame seeds Filling options: fish, cooked and flaked ume paste canned tuna hot dog pieces chopped, cooked vegetables Figure A Preparation: Season the rice with salt and sesame seeds. Wet hands and shape a small handful of rice into a ball or triangle (figure A) . Make an indentation in the rice, then place your choice of filling in the indentation and shape the rice around the filling. Hand Roll Using the rice and fillings from Onigiri, or Rice Balls (above), place some rice and your choice of filling at one end of a nori sheet and roll the sheet into a cone. Insert some thinly sliced fresh veggies such as carrots, onions or squash.
