A Taste of Italian Cooking at Villa Di Monte Solare
Trip #34143 After years of living in Rome and battling city life as a corporate attorney, Filippo Iannarone and his wife Rosy decided to see if there could be a better quality to life. After much searching, they found the property of their dreams, nestled among olive groves, vineyards and woods. Extensive renovation and restoration brought the property up to the exacting standards of the Iannarone's, and now Villa di Monte Solare is one of the most beautiful country estates in Umbria, ideally positioned close to Perugia, Lake Trasimeno, Assisi and Orvieto. Filippo and Rosy are incredibly charming and devoted to meeting their guests' needs and ensuring a wonderful experience. About the cooking lessons: Your cooking lessons will be at the hands of Chef Antonio Bondi, who has been running courses for the past six years. An extremely talented chef, he has had experience at some of the most important restaurants in Italy. At the tender age of 24, Chef Bondi received his first Michelin star at "La Grotta" near Bologna, and his star continues to rise!

The Story Behind DeAngelo's
Vincent DeAngelo grew up in New York's Italian neighborhoods. His father was a chef and his mother carried on the tradition of Italian cooking at home.
Vincent is a graduate of the Culinary Institute of America, the oldest and finest culinary arts school in the country. While still on the east coast he worked at the the famous Rainbow Room and the Helmsley Place Hotel.
Vincent came to California and worked as a chef at Palermo's in San Jose and Palo Alto. He was the first person to work there that had not been born and raised in Italy. He also created his award winning dishes at Valerano's in Los Gatos. We are very fortunate to have him here in Merced, a place he feels at home where he can carry on the excitement of robust foods and fine dining.
We only use the finest and freshest ingredients available for our dishes. Fresh fish and seafood is flown from all over the country; Mussels from the East Coast, Clams from the Pacific Northwest, Sea Bass from Chilean waters, and Hawaiian Swordfish when available.
We take advantage of the abundance of fresh local produce when in season. Fresh summer tomatoes from Rogina Farms and baby lettuce and radicchio from Marchini and Son, just to name a few.

    by Brad Edmonds I wrote recently of one of my best recipes (making no claims that my bests are better than anyone else’s), one I call walnut chili. If you graze through my archive, you’ll find plenty of articles extolling, in one way or another, Italian – pronounced Eye-talian, please – cooking. Cooking is not necessarily isomorphic with culture, by the way; Italians once were so cultured that J. S. Bach himself composed often "in the Italian style," Italian opera was the center of the musical universe, and Italian painters and scientists were at the forefront of human artisanship and technology. Alas, much of that high culture faded away before Italian cooking became everything it is. The tomato, after all, didn’t find it’s way into Mama’s recipes much before the 19 th century. But of course, the roots of Italian culinary supremacy reach back 500 years, to the beginnings of Parmesan cheese; and another 500 years, to the beginnings of balsamic vinegar.
