Despite the constant stereotyping, Irish cooking or baking does NOT consist of adding whiskey to a recipe. There are a great many traditional and modern Irish recipes that go beyond "corned beef and cabage" (a combination invented in the US by Irish immigrants because that was the cheapest cut of meat available to them.). By all means try all of the recipes in these books but remember to show your children some of the dishes made in the 19th century so the tradition can be caried on. Irish Heritage Cookbook

by David Bulla In Texas on Saint Patrick's Day, green is the theme, excessive behavior is the norm, and Corned Beef and Cabbage is a staple for many. Most people would not necessarily think of Irish heritage when they think of Texas, but like just about everywhere else in the country, Irish roots run deep in this state. Texas has a long Irish heritage, dating all the way back to when the first settlers migrated to the Spanish ruled colony. Hugo O'Connor was one of the first Irish settlers in Texas, and became governor ad interim in 1767. Irish settlers were significant contributors to the Texas Revolution. Close to 15 percent of the Texan forces at the battle of San Jacinto were Irish. Eleven Irishmen died at the Alamo. By 1860, the census listed over 3400 Irish-born Texans. It's safe to say that the Irish contributed significantly to the history and heritage of the state.

No longer condemned to breakfasts loaded with several kinds of fried pork, followed by a day of overcooked, monotonous pub fare, visitors now savor gourmet dishes as healthful as they are memorable. For breakfast, you might enjoy toasted oat porridge studded with chopped nuts and drizzled with honey, or farm-fresh eggs baked in a nest of braised mushrooms, potatoes and carrots, accompanied by sliced tomatoes, a topping of melted Cheddar cheese and slabs of buttermilk brown bread. For dinner, you could have several innovative entrées to choose from, like lean pork cutlets with barley-stuffed cabbage rolls, or roasted pheasant served with apple-grape sauce and a parsnip-and-potato puree. Eat hearty, lads and lassies, Ireland invites walking... If you are heading out for a walk under the drizzle that Ireland calls rain, you need a breakfast that will sustain you, and an Irish breakfast is substantial. You will be offered farm fresh eggs with the sunniest of yolks along with sausage, eggs, bacon, grilled tomatoes, black pudding, white pudding. On the side is Irish brown bread served with sweet Irish butter and the famous Irish preserves. Top off breakfast with a cup of Irish breakfast tea, a medium rich tea, and put in lots of milk. Bacon in Ireland is back bacon, a meatier bacon than is sold in the United States, its closest equivalent being what is called Canadian bacon in the US. And then there are the puddings, sold in packages the size of salami. Black pudding is really a blood pudding which is a staple across the European continent. The French call theirs 'boudin noir,' the Spanish 'morcilla,' the Germans 'blutwurst,' and the Italians 'sanguinaccio.' The Italians even make a sweet pudding for dessert from blood pudding.

St. Patrick's Day is a holiday unique to itself. There is no single personage, such as jolly old Saint Nick, to celebrate. The good Saint Patrick is overlooked in favor of the celebration of an entire nation of people and their descendants. Instead of hiring someone to dress up like Santa, we outfit ourselves in green, and celebrate whatever claim to Irish blood we have. Green derbies with shamrocks, worn by people who have no Irish roots, replace artificial beards and red stocking caps. It is also a holiday that has specified only corned beef and cabbage for its celebratory meal. As much as we love this classic, we think there may be other dishes to taste. Irish cooking reflects the temperament of the people. The Irish are a lyric group, so poetic by nature that they have a saying: 'Never harm a poet, never love a poet, and never be a poet." The Irish have given us the finest poets and writers, and their instinct toward the music inherent in language spices their food.

I used to believe that food had to be either boiled to a pulp, stewed or covered in grease. It was only when I came to Australia that I was able to eat vegetables that had a crunch to them (I still prefer my veggies boiled to a pulp). Food was easy to prepare then, pop it in the pan and forget it. A dinner was not a dinner without a potato on the plate. I remember when Spaghetti Bolognaise was introduced to my home; my father had to have potatoes instead of spaghetti. Today Irish cooking is becoming as famous as French cooking, thanks to the likes of Mary Kinsella for her book "An Irish Farmhouse Cookbook"; Keith Floyd for "Floyd on Britain & Ireland" and numerous magazines like Family Circle's "Step by Step Irish Cooking. As I said previously this is a page of working class foods, you will find no Lobster of Pheasant recipes on this page.
