If there is anything that most Americans know about India beyond turbans and the Taj Mahal, it is the aromatic smell of curry. Indian food is the reflection of the heritage of its people. All through the centuries, different cooking styles existed, each highly distinctive. All these different styles find a place in the cookbooks and other resources listed below.
General Chilis to Chutneys: American Home Cooking with Flavors from India by Neelam Batra (1998): In this book Batra brings an Indian sensibility to typical American food. Classic Indian Cooking by Julie Sahni (1998): This extraordinary cookbook is really a classic among Indian cookbooks. It amounts to a complete course in Indian cooking. Flavors of India: Classics and New Discoveries by Madhur Jaffrey (1995): In this book Madhur Jaffrey takes her fans through many staple recipes, ranging from appetizers to chutneys, main courses to side dishes. Introduction
From the earliest settlements along the Indus River, the Dravidians and later the Aryans spread their settlements deep into the sub-continent. Protected by geographic barriers, the valley inhabitants had limited contact with the outside world. Farmers cultivated cotton and processed it into cloth which became a valuable trade commodity. Their cities were well planned with shops, granaries, extensive sewer systems and protective walls. Two major religions, Buddhism and Hinduism, developed in India and spread throughout Asia. Art served religion well in India. The artists of the area cut unique Buddhist Temples from rocky cliffs with facades and interiors intricately carved to imitate the wooden constructions of the period. From the earliest simple structures to the ornate and imposing later ones, the Hindu Temples must be appreciated as sculpture as well as architecture. Their paintings, particularly from the Gupta dynasty, are classed as some of the finest in history. Back to Top

India is huge; its geography and climate ranges from the landlocked mountains around Kashmir, to the fertile Ganges river valley, to the arid Deccan plateau, to the steamy coastal regions around Goa and Madras. Her cooking is as varied as her land, and so, with apologies to the illimitable reality, here is a discussion of some of the elements and aesthetics common to "Indian food." India`s people are Hindu, Jain, Buddhist, Sikh, Moslem, Zoroastrian , and Jewish. The gulfs between her classes are substantial. Eating prohibitions determining the sacred and the profane are taken very seriously. Hindus and Sikhs won`t eat the sacred cow. Strictly vegetarian Brahmins and Jains refuse even the spices associated with the preparation of meat, such as onions and garlic. The Parsees were originally Persian Zoroastrians who gave up beef as a gesture of thanks to the Hindu ruler who gave them asylum around Calcutta and Bombay in the middle of the 7th century. The Turkish Moghuls of Delhi and Punjab, being Muslim, refuse pork, but are great experts in the preparation of meats. Likewise, the Jews of Calcutta, who claim descendants from among the Babylonian diaspora over two millennia past, are prohibited from eating pork.

  • The Dowry system prevalent in India calls for a large sum of money to be paid to the groom at the time of marriage. Brides that cannot meet the husband's expectations are sometimes harassed after the wedding. Desire for male progeny has caused natural imbalance and numerous problems for women. Unwanted touching of women in public places this problem is known as Eve teasing in India. Unequal share of inheritance in most Hindu families, only the sons inherit the wealth of the parents as married girls are considered no longer part of the family. Lack of public toilets this is more of a hygiene problem of India, but making even more difficult for women to get out of the house.
