    Source: News media Via: Clyde Markon Several northern and eastern Indian states banned the sale of mustard oil last week as the death toll in the capital climbed. Mustard oil is used mostly in the eastern and northern states for cooking. Hundreds of people complained of swollen limbs, vomiting and breathing and cardiac problems after consuming adulterated oil. At least 15 people have died and more than 500 have been treated in hospital.

Most of this has changed today , although the importance of the Indian kitchens are essentially very simple, with the stove ( angithi ) set in the center.Modern appliances like cooking ranges and electric gadgets, are slowly appearing in urban Indian homes, but many of these households can afford kitchen help, traditional methods are preserved for taste and authenticity.
    The Indian Kitchen
    Angithi (stove) which is normally used by Indian women (in rural areas), they place it in the center and women sitting down around it. A large wok-like utensil, the kadai , is used for frying and sautéing. Traditional granite grinding slab is used for crushing spices which is still found in many Indian houses. TOP

    Introduction
    In January and February of 1997, in conjunction with the British charity Salt of the Earth , the author visited the main campus of the aid organisation Social Change and Development (SCAD) near Cheranmahadevi, Tamil Nadu, India, to investigate the possibilities of introducing fuel-saving cooking techniques to the local villages served by that organisation. SCAD provides aid to over 150 villages in southern Tamil Nadu, populated by about 125,000 people from the most neglected groups in Indian society, such as gypsies, salt-pan workers, leprosy-affected people, and other Harijans ("unthouchables"). The aid provided includes education, health care, agricultural assistance, small savings schemes, and other community organisation and rural development services. SCAD employs about 17 administrators and 20 "animators". The animators are responsible for bringing SCAD's aid services to the villages, each animator taking care of about 6 villages, normally visiting and living at one each day of the working week. All of the animators except one are women.

    Now linked by The Global Gastronomer Most Indian cuisines are related by similiar usage of spices . Often, Indian cooking is distinguished by the use of a larger variety of vegetables than many other well-known cuisines. Within these recognisable similarities, there is an enormous variety of local styles. In the north and the west, Kashmiri and Mughlai cuisines show strong central Asian influences. Through the medium of Mughlai food, this influence has propagated into many regional kitchens. To the east, the Bengali and Assamese styles shade off into the cuisines of East Asia. All coastal kitchens make strong use of fish and coconuts. The desert cuisines of Rajasthan and Gujarat use an immense variety of dals and achars (preserves) to substitute for the relative lack of fresh vegetables. The use of tamarind to impart sourness distinguishes Tamil food. The Andhra kitchen is accused, sometimes unfairly, of using excessive amounts of chilies. All along the northern plain, from Punjab through Uttar Pradesh and Bihar, a variety of flours are used to make chapatis and other closely related breads. In the rain-swept regions of the north-eastern foothills and along the coasts, a large variety of rices are used. Potatoes are not used as the staple carbohydrate in any part of India.

    This woman is literally squatting by the roadside, right on the sidewalk at a major intersection in Calcutta, inches from the curb.. She is preparing food to give to a goddess, as she does every Tuesday. Her fuel is "cowdung" or the dried cakes made from cow's droppings, which she most likely purchased from a local vendor. This is a primary fuel source for people in less developed countries all over the world. It is often, though not exclusively, the job of younger children to collect the cow dung for market or family use. Although it is unknown whether this woman has formal employment or not, the majority of women in India are un- or underemployed. Their daily lifestyle consists of countless hours of meal preparation. Many people spend 80% of their income on food, and are still malnourished.

    My family and friends have enjoyed great Indian food at Gold India, Sometime cheff himself comes out and makes sures that food is cooked to your expecation, wait staff is great who explains and follow ups with order. I usually start with award winning Idian lager beer and some Tandoori sizelres, Mr.Singh makes me great Chiily Nan or Lachha Paratha(very few Indian cheff knows how to do it right) with Shrimp Tikka masala. (clay oven grilled shrimp in tandoor with creamy hot sauce) I am glad to see one of the best place to eat in greensboro. Cheff is unique and talented He sure brings multi skills of hard to find Indian cooking.

    Wipe a slice of veal one-half inch thick, weighing one and one-half pounds, and cook in frying-pan without butter, quickly searing one side, then the other. Place on a board and cut in one and one-half inch pieces. Fry two sliced onions in one-half cup butter until brown, remove onions, and add to the butter, meat, and one-half tablespoon curry powder, then cover with boiling water.     Chicken Tandoori
    Tandoori is another of those dishes that is spectacular and easy to make if you have the right ingredients. Apparently this way of cooking from the north-west of India was unknown even in the rest of India until about 1945 when it made its first appearance in Delhi. The word tandoor refers to the earthenware pot-oven that the food is cooked in, not the tandoori spice mixture. The tandoor is immensely hot and cooks the meat very fast from all sides at once. However since the important main characteristics are the delicious spice and colour, you can produce a fairly good imitation in a domestic oven or grill. You can make a straightforward tikka spice mixture yourself if you want to from ground coriander, cumin, turmeric, garlic and fresh ginger, but it is much easier to buy the tandoori spice ready-made.
