At the dawn of the 17th century, a Dutch merchant ship landed on the shores of Europe full of treasures that would change the eating habits of the European middle class forever. The Dutch East India company was formed in 1602 and quickly seized control of the profitable Spice Islands stretching from the coast of East Africa, across the India Ocean to present day Indonesia and Malaysia. And from the famous ports of Java, Malacca, and Ceylon came exotic spices. bodyOffer(28594) Spices had been exported from the Indian Ocean islands to Europe since the ancient Romans and Greeks. But merchants knew of only laborious land routes navigated by caravans. The fall of Constantinople in 1453 to the Muslims made the prices of spices even more expensive, and their enjoyment was reserved for the nobility that could afford them. Free and open sea routes were soon discovered, and the spices began to flood Europe. At first, European middleclass households had little knowledge of how to use the spices in cooking, and followed the ancient Roman traditions of using the spices for medicinal purposes. But flavorful sausages, stews and pastries so well known in European cooking today, prove that European cooks soon found a myriad of uses for spices in the kitchen. Today the cultivated spices that find their way on to grocery store shelves are of a wondrous variety, each with their own distinctive flavor, smell and history. COOKING FOR THE GODS is an exhibition organised for The Newark Museum and on display there from October 1995 through July 1996, then at the Palmer Museum of Art , Pennsylvania State University, State College PA. The exhibition puts implements and images used for home worship into their ritual setting in Bengal.
This exhibition is now travelling to other venues in the US. It currently is part of the Asian Art Museum of San Francisco's commemoration of the 50th anniversary of India's independence from June 28-September 28, 1997.
"Cooking for the Gods" is also scheduled at the Art Gallery at Mt. Holyoke College, Massachusetts, in 1998. Other institutions interested in scheduling this exhibition should contact Valrae Reynolds, Curator at the Newark Museum, for more information. The research coordinator and research associate at The University of Pennsylvania for this project have been Michael W. Meister and Pika Ghosh; the curator at the Newark Museum is Valrae Renolds; the exhibition draws on the Nalin collection in the Newark Museum and on the generous gifts of Dr. David Nalin to the University of Pennsylvania for preparation of the exhibition. Photographs are courtesy of Dr. Nalin. A review of this exhibition by Holland Cotter appeared in The New York Times on June 30, 1996.

    S Narayanaswamy sheds light on solar cooking
    June 2001 : The energy of the sun can be harnessed in a simple way to cook food, without complex lenses and mirrors to accomplish this task. When sunlight falls on a black surface it is absorbed and transformed into heat. Glass has the property of letting in light but not heat. If a shallow glass covered chamber coated black inside and insulated all around is exposed to sunlight the temperature inside exceeds 100 degree Celsius, sufficient to cook food. More heat can be achieved by having an exterior reflector. The solar box cooker incorporates these features. The author and his wife demonstrate the use of the solar cooker to a Kudumbasree group in Thiruvananthapuram, Kerala. Kudumbasree is a state-funded initiative to combat poverty through programs for women. The cooker resembles a square suitcase with two hinged lids - an inner lid consisting of a glass pane (typically a double-glass pane enclosing air for better insulation) and an outer lid holding the reflector, which is simply a plane glass mirror. There are arms to rest the lids at any desired position. There is heat resistant rubber beading all round for a good seal at the seating of the inner lid. The lower half of the box is insulated on all four sides and the bottom and has four cooking pots. All the pots are coated black outside with matt finish paint. The cooker has four castor wheels for easy movement. The outer case of the cooker is made of aluminium or fibreglass reinforced plastic (FRP) which is a light and tough material. The cooker weighs about 8 kg.

In India there is a higher level of bureaucracy in the state and federal governments called the Indian Administrative Service (IAS). This used to be a prestigious service at a time when Government was big and omnipresent. Now with private sector expanding and government shrinking and with increased powers for local administration its importance is on the decline. One just coasts along in that service serving various departments and alternating between the Federal Govt. and the State govt. in one’s career. I rose to the position Chief Secretary to the Government of Kerala State (1987-90) which is the highest administrative level in a State. The Chief Secretary is the secretary to the Council of Ministers, the head of the state bureaucracy and coordinates all administrative action in the State. I have been a regular user of solar box cooker for the past ten years. I reside in the south-west Indian state of Kerala where it rains heavily for many months. Yet my enthusiasm for solar cooking has not been dampened by the rains. I am not in agreement with Dr. Jagadeesh on some of the points he has made. Indian menus are always diverse in color, flavour and taste; different at every meal. On the culinary level, it was the East which conquered the West. And the universal popularity of curry is the delicious proof. It is a wrong notion that Indian food is 'hot'. All spices and herbs are used, not just for flavour and aroma, but for their digestive and nutritional values. Chilies are rich in Vitamin C;.
