(Kolbasz) My father was only 5 years old when he came to America from Romainia in 1905. He made sausage, wine, beer, smoked bacon, and all the Hungarian dishes that were brought to America by my maternal relations. He had a gusto for life. Everything he did he did when whistling. You knew he was happy. Our city house always had a small smoke house at the back of the yard. It was used to sugar cure bacon the hungarian way, and to smoke links of Hungarian Sausage. My father would make sausage when it got cold out, and we would eat some fresh cooked, and the rest would be smoked and dried like pepperoni to be used in Potato Soup or Sauerkraut dishes all winter long. (The fresh sausage freezes well. Years ago we did not have large freezer, so sausage was smoked to keep good). This sausage is heavy on garlic and paprika. If you do not have a sausage stuffer you can still make this sausage by making patties and frying it in a pan. The recipe that follows is for fresh sausage. Regards, June Meyer.

  • 1 Large onion, diced
  • 3 Medium potatoes, diced
  • 2 Cups diced rutabaga (or turnip, I prefer rutabaga)
  • 1 Roasted red bell pepper, finely minced
  • 1 Clove garlic, finely minced
  • 1.5 teaspoon caraway seeds
  • 2 tablespoon hungarian sweet paprika
  • 2 Quarts vegetable stock
  • Salt and pepper to taste
  • 2 tablespoon corn starch , disolved in 1/2 cup COLD water
  • 1 tablespoon olive oil
Directions: 1) Saute the diced onion in the olive oil until translucent. 2) Add the paprika, stir for 1 minute. 3) Add garlic, saute for 2 minutes more. 4) Add this mixture to the vegetable broth. 6) After simmering for 25 minutes (NOT boiling), add the corn starch mixture to thicken. This recipe is based on my grandmother's which used beef and beef broth. It's absolutely delicious, and on a cold day, I'll eat a large bowl of this with vegan bread for dipping into it. As a variation, one can remove 12 oz of vegetable broth, and add 12 ounces of dark vegan beer. Adding 2 diced parsnips is also a nice variation, if one likes them. Serves: 6-8 Preparation time: 1 Hour Votes: 5 = excellent 1 = poor Add Comments Where you say veggie stock (?), can you use Tomatoe juice or V-8 Juice? I recall something like this when I was a kid (many, many moons ago), and my mother also would ad cooked maccaroni. Your thoughts.?

1 cup flour
2 large eggs
1/2 cup milk, skim
3/4 cup club soda
3/4 tablespoon canola oil
Filling
2 ounces hazelnuts
1/3 cup 1% milk
2 tablespoons sugar 1 tablespoon rum, 80 proof 1 tablespoon orange zest Sauce 1 cup 2% milk 3 1/2 tablespoons powdered sugar 1 1/4 tablespoons cornstarch 1 1/2 tablespoons cocoa 1 1/4 tablespoons Neufchatel cheese 1 teaspoon vanilla extract Instructions To prepare the crepes, combine the flour, eggs, milk, and club soda in the bowl of a food processor. Blend at top speed for about 1 minute, then scrape down the sides and blend again until the ingredients are well combined. Add more soda if necessary to make a batter the consistency of heavy cream. Cover and let it stand for about 30 minutes. Heat a 6 1/2- to 7 1/2-inch bottom diameter coated skillet with sloping sides until very hot, then brush the pan with canola oil. Pour 1/3 cup of batter into the hot, greased skillet. Quickly turn the skillet around so that the batter spreads up the sides and thinly covers the entire bottom of the pan. Put the pan back on the heat for about 1 minute. Give it a few shakes to loosen the pancake then turn the crepe over with a spatula. Cook briefly, about 30 seconds, on the second side or until light brown spots appear, then turn it out onto a warm plate. Repeat with the remaining batter, brushing the skillet with oil each time.

    Christmas cooking is an important part of the celebration. In the old villages kichen table was always the center of the houses, which was covered and decorated only for holidays. The Christmas table-cloth had a magic meaning of power: health and abundance. People put straw under the table remembering to the manger in Betlehem. Main dishes were: turkey and brioche with walnut and poppy-seed, which is called 'beigli.' Almost all Christmas food had magic meaning: poppy-seed and pear brought abundance, honey made life sweet, galic brought health, apple meant beauty and love.
    Another common dish of today's Christmas-dinner is fried fish, which is a tradition mostly in towns. The scale of fish means money, wealth.
    The leftover morsels from Christmas table were kept in the next 12 days,then were spread over the fields believing in good harvest in the next year. In some places they were burnt and the ash and smoke was used to cure sick children and animals.
    Most of these traditions originate in the pre-Christian history, since Christmas is about the shortest day of the year, which was the end of the year for long. These traditions include superstitious predictions for future health, wealth, harvest and family life.
    Ginger-bread has been an important part of Christmas baking usually made weeks before the holiday. Gingerbread figurines are used to decorate house or the tree.

    Serves 4
    Traditionally, this soup would be made with cubes of beef, but when you want a quick weeknight dinner, who can wait for meat to braise? We use ground beef instead. If you like your soup spicy, substitute hot paprika for some of the sweet paprika here.
    WINE RECOMMENDATION:
    1 pound ground beef
    1 large onion , chopped 1 green bell pepper , chopped 2 tablespoons flour 1 pound boiling potatoes (about 3), peeled and cut into 1/2-inch cubes 2 tablespoons paprika 1/4 teaspoon cayenne pepper 1 teaspoon dried marjoram 1 1/4 teaspoons caraway seeds 1 1/4 teaspoons salt 1 tablespoon tomato paste 3 cups canned low-sodium beef broth or homemade stock 3 cups water Set a large pot over moderate heat. Add the ground beef and cook, stirring to break it up, until the meat is no longer pink, about 2 minutes. Reduce the heat to moderately low. Add the onion and bell pepper and cook, stirring occasionally, until the vegetables start to soften, about 10 minutes. Stir in the flour. Cook, stirring, for 1 minute. Add the potatoes, paprika, cayenne, marjoram, caraway seeds, salt, tomato paste, broth, and water. Bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 10 minutes.

The recipes were never written down, but have been handed down for many generations in my family, by example. I want to preserve these recipes for my children, grandchildren and great grandchildren, and all the generations of other families who thought these recipes were lost to them. There has been an unbelievable response to the recipes and cookbook since it's initial printing in 1995, thousands of books have been sold in North America, South America, Australia, Europe, and the United Kingdom. The recipes have been collected by people over the Internet in virtually every corner of the world. Mention the most remote island, mountain top, or secluded hamlet and you will find my recipes being cooked there. Eastern European fare, in contrast, is often associated with dull, starchy dishes, mounds of cabbage, and overfed peasants in babushkas. That's why when I left to spend a year in Hungary, I didn't have high expectations for the food. I was shocked to find that it is, simply, exquisite. It is also unique, and without a doubt ranks with the world's better-known culinary treasures. Even the cafeteria fare at the school where I worked had me going back for seconds and thirds, and long after I returned home, I continued to hunger for , and The unique flavor of Hungarian food arises from a special confluence of cultures. Nestled between north and south, east and west, these descendants of nomadic horsemen have been occupied by both the Turks and the Austrians. As a result, their food blends the heartiness of Northern European fare with the spice of the South. It was the Turks who introduced paprika to Hungarian cooking. Simply translated, it means pepper, and can refer to Hungarian varieties like the pale green, sweet type most closely approximated by Italian peppers here. Usually, however, it means the crushed pepper powder that gives the classic dishes their bright red hue and distinguished spicy flavor.
