Despite its lukewarm reception in Britain, paprika has been a feature of Hungarian cooking for centuries. Michael Bateman discovers why, in its homeland, this is the ultimate spice. Photographs by Georgia Glynn Smith. Paprika powder doesn't rank very high in the ever-expanding British spice rack. It's surely not up there with whole black peppercorns and mustard, or chilli powder, ginger and cinnamon, or even coriander seed, cumin and turmeric. It doesn't make much of a contribution to the modern, explosive taste revolution. If anything, this pleasant, rust-coloured powder is dismissed as a food cosmetic and colouring. A pinch of it adds a speckled effect to the white blobs of yoghurt or sour cream you dribble onto soup to improve its appearance. But there is a country in Europe that knows better. Paprika has been the single most important ingredient in Hungarian cooking for more than two centuries. Hungarians consume 6,000 tonnes a year, half of which goes into food processing (to give that rosy glow to Hungarian salami). The rest is used in the home. There are dozens of dishes which begin with onions being sizzled in lard followed by two heaped tablespoons of red paprika.

    Okay, Okay. So it's been a good long time since anything new has been posted up here. Well, to soothe your appetite, please find below the recipe for Hungarian goulash that I made for one of the cast parties. And, once I dig it out, I may even throw a recipe for paprikash up here. And I promise I'm going to get better at updating this thing. Goulash
    This was a crockpot meal, thrown into the pot before the show and ready to eat at the cast party. The recipe is loosely based on a recipe in a book I have, and made at 150%, so it "serves 9." One word of advice - make sure your crockpot is big enough - I had to ladle out quite a bit of (really excellent) broth about halfway through. The original recipe called for potatoes as well - which I didn't add because of space and starch concerns. I think I'd just throw in more parsnips. 1 large onion
    3 cloves garlic
    3T sweet paprika
    2cans beef broth 3lbs stew beef 2 large green bell peppers 1 large red bell pepper 6 plum tomatoes 2 parsnips 1box egg noodles
  • Coarsely chop the onion and throw it in the pot; dice the garlic and throw that in, too. Add the three tablespoons paprika.

    Description:

    Rabbit loins are Frenched and coiled into crowns, their bones standing up in a circle around the top of the meat. They are served with letchko, a traditional Hungarian vegetable dish similar to ratatouille, and tournéed potatoes. The onions for the letchko should not be browned, but they are more than just sweated in the oil; one of the secrets of Hungarian cooking is the care taken to cook down the onions without browning them.
    One important key to the beautiful presentation of this dish is the iron cylinder used by the chef to reach down inside the crown of bones and sear the tops of the coiled loins. Without such a device, the top can't be reached to be browned. Chef Kalla's cylinder is a cast-iron piece about 3 inches in diameter by 3 inches tall; he lets it heat on top of his stove for 30 minutes before using it. One at a time, he turns the rabbit crowns upside down and fits them down over the cylinder; a quick sizzle and they're browned. Look for a similar cast-iron piece at hardware or ironworks places. Or, try using a salamander.

    1 pounds (4 pieces) rabbit loin with bones
    Salt and freshly ground black pepper to taste
    2 teaspoons fresh chopped rosemary 4 large stiff rosemary twigs, leaves on

    Recipe Index Page All of these recipes are heirloom recipes, handed down through many generations. Some are hundreds of years old, some dating to pagan times. (see Moon Strudel) I love to cook, and I enjoy cooking and eating many different ethnic foods. But there is something spiritual and comforting about cooking and baking foods that your ancestors loved and thrived on. Most of these recipes have their origin in Austria-Hungary. They are peasant dishes which took advantage of the bounty of the land, requiring slow cooking while the farmers worked in the fields. These are stick to the ribs, clog your arteries food. But they are exceptionally flavorful and unforgettable. (Nouvelle Cuisine this ain't)
