A brief history of

Bread is a baked food made from a dough of ground or milled cereal grain, usually wheat flour, and leavened by chemical or microbiological action. Because of the leavening process, the making of even the simplest kind of bread is a fairly complicated procedure. Only wheat flour contains gluten, a substance that supplies the structure needed for leavening. Many non-wheat-growing cultures have never known bread.
Bread making may have originated in Egypt. Archaeologists have found pieces of bread that show clear evidence of leavening action in deposits dating from about 3500 BC. The "sun bread" of Upper Egypt, made today by a method that must be very old, is prepared from a thick batter that is placed in the sun to leaven and partially dry before it is baked into a hard-crusted loaf with a sweet, soft interior. By the dynastic period, loaves of special shapes and sizes were made for religious purposes and for consumption by different social groups.
Bread was a common foodstuff in Rome, and a sophisticated baking industry developed, using mechanical kneading devices. During the early Middle Ages, baking technology regressed; although eventually the growth of bakers' guilds resulted in improvements in techniques and tools. During the Industrial Revolution, an acceleration occurred in the development of baking technology, and today the making of bread is a highly mechanised process in most Western countries.

It is made from sweet or hot red peppers that have been dried and finely ground. The pepper plant was brought to Hungary from South America in the 16th century. T he best-known Hungarian dish is gulyás (goulash), a meat stew prepared with onions, paprika, potatoes and noodles. Tarhonya , a kind of dumpling, is made with flour, water, onions and paprika, formed into little balls, browned in lard, cooked and served with meat. H ungarians like to eat pork and pork products, such as bacon. Lard, which is made from pork fat, is often used instead of butter or oil for cooking and making pastry. Disznótoros is an important winter event in rural areas. This two-day event involves pig killing and sausage making. Hungary is often called the sausage lover's paradise! R étes , a form of strudel, is a very popular dessert in Hungary. The dough is made from flour, sour cream, lard and egg yolks and rolled out as thin as tissue paper. The filling, which may be poppy seeds, cherries or sweetened cottage cheese, is spread over the pastry, which is then rolled up and baked. Sugary doughnuts called fank , are also popular and are served piping hot.

That Hungarian's in My Kitchen Review #1 The Joy of Hungarian Kosher Cooking I grew up with Hungarian kosher cooking. My family comes from Kisvarda and Szeredne and Tokaj, and it's an insult to us, and to the martyrs from those places, to say that their cooking was a joke. There's nothing like the smell of a hot goulash cooking on a cold winter day to warm a person, and to lift his/her spirits. I enjoy and continue to enjoy Linda Radke's recipes. I just wish she had included more, such as fluden and g'ribener peas.
That Hungarian's in My Kitchen Review #2 from a Hungarian mom First of all, Hungarian food and kosher just won't match!!! What a joke! Then, I have no idea where these recipes came from... not from a Hungarian's kitchen, for sure.
Instead of this, I'd recommend "Magdi's Quick and Easy Hungarian and Gourmet Recipes" for great tasting real Hungarian food, with detailed step-by-step pictures and explanations.

, although having many influences over the ages, has created its own unique identity, renowned world wide for its richness in flavours. The Magyar people, a nomadic tribe, used bogracs - large cauldrons, to cook their food over open fires. These are still used today in the cooking of many of its dishes like Gulyas soup (goulash) or Porkolt (meat cooked in a thick paprika and onion sauce). Through a series of foreign marriages by the Hungarian monarchy, cooking began o take on a foreign influence, mainly from the French courts, which then intensified under centuries of Turkish rule. It was the Turks that introduced paprika, stuffed vegetables and Filo pastry (from the latter Hungarians introduced Strudel to the Austrians). During your weeks holiday you will be taught how these influences have been introduced into Hungarian cooking and you will learn about and sample traditional dishes such as Gulyas Soup, Paprika Chicken with home-made dumplings, Stuffed Cabbage with dill and sour cream, Cold Fruit Soup (served as a starter), Halaszle (fish soup), Fried Goose Liver, Filo Pastry with a walnut and poppy seed filling and many more dishes…… and you will be sampling some Hungarian wines.

Hungary is known for its exotic, tasty and spicy food and delicious wine.
What is different about Hungarian cooking? In general, the preference is for rich and spicy sauces, stews and sweets over rather "drier" dishes. In particular, the liberal use of a few special ingredients which give it its own inimitable and original flavour. These are first of all red pepper, fresh green peppers and tomatoes, sour cream and lard. The use of lard or goose-fat instead of other forms of fat for cooking is traditional and certainly typical but nowadays more and more Hungarians are worried about the cholesterol content of lard, so often other fats are substituted The most well-known specialities of the Hungarian cuisine such as goulash soup, or "Gulyásleves", the different varieties of stew or "pörkölt" etc. are red with paprika. It should be noted that dishes flavoured with paprika need not be hot. In fact, some of the finest brands of paprika are not strong at all. Fresh green peppers and tomatoes are also frequently used to flavour these dishes, the essence of which is the same: braise any kind of meat in lard/oil with onions, and season it richly with red pepper.
Sour Cream is an essential ingredient in many Hungarian dishes too. It is a basic ingredient of "paprikash" (any kind of meat. or just plain potatoes prepared in paprika sauce, to which sour cream has been added). as well as in many Hungarian vegetable dishes and casserole stews.
