A quick review of Hungarian gastronomy
Hungary is famous for its very distinct flavors, mainly due to the generous use of Paprika and other strong spices. Hungarian food may also be a tiny bit too "heavy" or fatty for those accustomed to more toned down dishes. But don't get the impression that everything is soaking in pork fat and smells of heaps of onions and paprika here. It is a fact that the above mentioned ingredients give the Hungarian dishes their unique taste when portioned or substituted properly, but with the dawn of health-contious nutrition and vegetarianism, there are plenty of options to eat healthy but flavourful dishes, the traditional recipes have been modernised.
Paprika
Definitely the mascot spice of Hungary. You can obtain Hungarian paprika in most well-stocked supermarkets and specialty food stores. It comes in two varieties "eros" (hot) or "csemege édes" (delicate). Experiment with dosage as the hot variety can give a dish a fiery hot taste, which is indeed very popular in Hungary, but may be a bit too much if you're not used to such strong flavors. The delicate type is often used generously, several spoonfuls in stews and soups, and gives the dish the distinct red color and a very good taste. As a general rule, when cooking always use the delicate type and only add the hot type when the dish is ready, to flavor

The Bottom Line Rich sauces, heavy in paprika, Hungarian food is definately different to typical food from neighbouring countries. Give it a try - it is certainly interesting!
PAPRIKA PAPRIKA PAPRIKA!!
"PAPRIKA" is really the biggest thing you need to know about Hungarian cuisine!
The sweetish, mildly hot Paprika pepper is absolutely everywhere in Hungary. If you wander the streets of Budapest, you will see elderly ladies on almost every street corner, at entrances to traain stations, and Underground stations, selling fresh Paprika peppers. It makes you want to explain the economic theory of supply and demand to them..... "the reason you arn't making much money, is that you are over supplying the market with Paprika..... why don't you diversify?....".
If you go into Budapest's huge market, you will see stalls selling huge rings of sausage, and ground paprika ....... (incidentaly, they also sell huge bags of dried mushrooms (Cepes, Penny Buns and Chantarelles, amongst others), for £3-£4 a bag - the bargin of my holiday!
However, one look at any traditional resturant menu will also tell you that demand is also huge.... Paprika sausage, Gulyas soup, Chicken in Lesco, even the salads have peppers in them, and the list is endless - the country is Paprika mad!!

One of my favorite cookbooks is simply titled Central European Cooking . It was given to me by a young man I worked with in New York who told me he was a gypsy.
I make a Hungarian dish in honor of a departed friend from San Francisco. He was Scandinavian, and lived in Vienna (kept) for years. I make it in early summer using smoked pork chops, onions, caraway seeds, chicken broth, white wine, garlic, paprika and the freshest of green string beans from our local green markets.
Every fall I make a hearty beef goulasch that's loaded with onions, green and red peppers, paprika, dill, caraway seeds, garlic and fresh tomato . . . again, all from the green markets. It's topped with sour cream and slivered dill pickles.

And what MIGHT be the best part of any trip to Budapest...
THE FOOD! I must say that I don't think I had anything bad the whole time I was there. We ate in a variety of places, both upscale and out-of-the way, and the food was consistently good. In some of the places the service was fashionably slow (some Americans would say excruciatingly slow) but the food was always worth the wait. The one meal that especially stands out was begun with a chopped tomato soup and topped off with whole trout wrapped in bacon (which was really more of a prosciutto). Everywhere we went seemed to have excellent soup, which I must have had in some variety every single day. I picked up a cookbook in a local bookstore (yes... in English) which is a reprint of a book first published in 1934. The author, Karoly Gundel, was a famous Hungarian chef of the early 20th century, who in addition to relating list of ingredients seemed interested in preserving the authentic local cooking traditions. So, the recipes do not just list ingredients and measures, they have wonderful descriptions of the cooking techniques and preferences of the various Hungarian culinary traditions (For example, he spends a whole page on how to brown onions and add the paprika!). The following recipe is my version of one that is quite typical of the region (and that I have had good success with). Sorry that I don't have the descriptive flair or knowledge of a Chef Gundel, but I love to eat and I know what I like! The following recipe is based on the book but adapted... (I personally don't follow the original instructions of frying the onions in 80 grams of fine lard!) Add a little hot bread and this makes a fine meal.

Hungary is known for its exotic, tasty and spicy food and delicious wine.
What is different about Hungarian cooking? In general, the preference is for rich and spicy sauces, stews and sweets over rather "drier" dishes. In particular, the liberal use of a few special ingredients which give it its own inimitable and original flavour. These are first of all red pepper, fresh green peppers and tomatoes, sour cream and lard. The use of lard or goose-fat instead of other forms of fat for cooking is traditional and certainly typical but nowadays more and more Hungarians are worried about the cholesterol content of lard, so often other fats are substituted The most well-known specialities of the Hungarian cuisine such as goulash soup, or "Gulyásleves", the different varieties of stew or "pörkölt" etc. are red with paprika. It should be noted that dishes flavoured with paprika need not be hot. In fact, some of the finest brands of paprika are not strong at all. Fresh green peppers and tomatoes are also frequently used to flavour these dishes, the essence of which is the same: braise any kind of meat in lard/oil with onions, and season it richly with red pepper.
Sour Cream is an essential ingredient in many Hungarian dishes too. It is a basic ingredient of "paprikash" (any kind of meat. or just plain potatoes prepared in paprika sauce, to which sour cream has been added). as well as in many Hungarian vegetable dishes and casserole stews.
