PERI-PERI SAUCE FOR BBQ CHICKEN In a food processor or blender: place approx 1/2 cup of peeled garlic cloves, approx 2 cups dried red peppers, seeds removed, 1 cup oil (olive oil pref), salt to taste, 1 tablespoon mixed herbs, 2 tablespoons angostura bitters, lemon juice to taste, black pepper to taste. Blend until smooth and liquefied. The important thing is to get the oil and peppers to liquefy so that the sauce can come together. There should not be parts of the pepper in oil, but rather a smooth sauce with the peppers assimilated into the oil. The ingredients are approximate so don't be afraid to trust your taste buds. To make the traditional Peri-Peri chicken: cut a chicken in half, wash and pat dry with paper towels, trim excess fat, and place the chicken in a plastic bag, pour peri-peri on, marinate 24 hrs, barbeque slowly for 1 hour, brushing with sauce. The Webber BBQ method works best. CHILE-CRUST CHORIZO QUICHE 1 Tbsp unsalted butter, room temperature

Chili Bob's Gourmet Foods, Seasonings and Spices
Cheesy Garlic Spread 2 cups finely shredded cheddar cheese 1 cup shredded mozzarella cheese 1 cup shredded Parmesan (not powdered) 3/4 cup mayonnaise 2 Tbs. milk 1 1/2 Tbs Chili Bob's Garlic Lovers Seasoning 1 loaf french bread cut into 1" thick slices Blend all ingredients except for bread. Spread 1 to 2 Tbs. of cheese mixture on each bread slice. Put on cookie sheet and place under broiler in oven until cheese melts and is slightly browned. OPTIONAL: Sprinkle Island Fever Powdered Hot Sauce or Pepper Lovers Seasoning on each slice before broiling.
Slow Cooked Peppered Pork Loin
3-4 lbs. pork loin 1 cup chicken broth 1/4 cup soy sauce 1/4 cup wine or sherry 1 stalk celery, coarsely chopped 1 Tbs. of Chili Bob's Pepper Lovers Seasoning 1/2 Tbs. of Chili Bob's Garlic Lovers Seasoning 1/2 Tbs. of Chili Bob's Onion Lovers Seasoning 1 Tbs. of brown sugar Rub pork loin liberally with Pepper Lovers Seasoning. Place in a large glass baking dish with a tight fitting lid, large enough so the loin doesn't touch the sides or lid(if you have a Crock Pot with a removable liner, that will work great!). Add the remaining ingredients around the base of the loin. Place in a 225 degree oven and cook for 5-6 furs. DO NOT LIFT LID! The juices will self baste the loin if the lid is tight and you don't peek!

in non-stick skillet saute bass fillets skin side down until crisp

Jorich's Suicidal Fancy Salsa   Skin and chop 6-8 nice size Italian plum tomatoes to desired size, Peel and chop fine 1 good medium size vidalia onion, Puree 1 nice size habanero pepper(ripe), Chop 2 green onions very fine using only green tops, Chop fine 1 teaspoon only cilantro, Juice 1 lime using only 1 tablespoon lime juice. Mix all ingredients and add 1 teaspoon sugar, 1/2 teaspoon salt, 1/2 teaspoon fine ground black pepper. stir well and refrigerate overnight and stir well before serving. Serve with taco chips or better yet, lay taco chips in single layer on microwavable dish, cover with salsa as thick as you like and cover with grated cheddar cheese and microwave for 60-90 seconds until cheese is melted. Present with your favorite draft beer and your friends will love you forever. Do not serve this salsa to any child!  Enjoy From Christopher L. Jorich SALSA A LA JEAUX   Ingredients: One 20 ounce can of Hunt's all natural peeled Whole Tomatoes One large jalapeno 3 cloves of garlic One teaspoon of salt (or to taste) One tablespoon fresh cilantro Directions: Boil jalapeno until soft.  Finely chop garlic and boil in 6 ounces of water until there is 2-3 ounces left.  Blend jalapeno, garlic (with water), and cilantro thoroughly in blender. Drain the can of tomatoes and combine tomatoes and salt with previous mixture and blend to desired consistency.  I suggest tapping the pulse button about three times. Chill in refrigerator about 1 hour. Works great as a dip with Tostitos restaurant-style tortilla chips. Enjoy!

4 c. water
1 T. whole anise seeds
2 pieces ginger root, bruised
2 whole cloves
2 cinnamon sticks
4 tsp. sugar, or more
4 walnuts or almonds
