  • Chicken broth and fresh herbs are a delicious butter/margarine substitute for vegetables. Toss the vegetables with sauce made from chicken broth and fresh herbs such as dill, basil, oregano, thyme, chives, lemon grass and rosemary. Just one of these fresh herbs can make a great difference in the finished dish. Add a little marmalade to the broth and you add sweetness and shine to your vegetables.
    Sweeten winter squash with apple juice concentrate, light syrup, all fruit preserves or maple syrup. Season with cinnamon, cloves and nutmeg.

Many RVs come with a combination microwave/convection oven in place of a traditional oven. This can present a problem for experienced cooks and a disaster for the inexperienced. Convection ovens save energy and cook faster than conventional ovens, but how do you determine cooking times? And why would you want to use a convection oven? Well, it seems that many famous chefs actually prefer them and here are some of their reasons.

A convection oven cooks through the process of circulating hot air around food. In principle, all ovens are convection. The difference is the use of a fan and special baffles in the oven. I have to admit that I haven't used our combination oven as anything but a microwave. But after doing some research, I've found out that convection ovens aren't supposed to be difficult to use. There are two easy formulas that can be used to determine cooking times. You either bake at the same temperature the recipe recommends for 25% less time or you bake for the same amount of time and drop the temperature of the oven 50 degrees. Sounds easy - right? By Jean Kressy, Globe Correspondent, 11/19/2003 Roasting pans, like ovens, are meant to last a lifetime. The pan should be large enough (about 16 by 13 inches) to hold the holiday bird and have two handles that are easy to grasp and are sturdy enough to lift a hot, heavy, stuffed bird out of the oven. ADVERTISEMENT You also want to be able to set this pan on the stove to make gravy. That means heavy pans and, for a brown turkey, curved or V-shaped racks. The common lore is that a nonstick pan does not do the job because turkeys can slide and drippings don't brown. But they're easy to clean, so they were included in my pan testing, along with a lightweight enameled steel roasting pan with a flat rack. I used plump chickens and set the pans on the lowest oven shelf, then made gravy with the drippings. Before cleaning, I soaked the pans in hot soapy water for about an hour. The All-Clad stainless steel roasting pan ($169.99 to $199.99) weighs 8 pounds and has a lifetime warranty. The rack, which comes with most models, adds another 3 pounds. A stuffed turkey in the pan with the rack is a back breaker. But my chicken was crisp and golden brown, and the drippings were browned well, too.

Get Ready for Holiday Cooking and Eating
At this time of year more than any other, the kitchen becomes the focus of frenzied activity. It's also a time when it's important to take deep breaths, relax, and have fun. Here are a few tips to help you do just that.
  • Before you cook even one holiday recipe, remove kitchen clutter, making as much room as you can for holiday preparations. Cast a cold, hard eye on those kitchen counters. Pack away the chicken-shaped egg timer you haven't used since last Easter, or consolidate the four crocks of whisks and wooden spoons into one. Get out a large cardboard box and fill it with all the things you won't need, and stash the box in the attic or basement.
  • Attack the refrigerator. Discard everything that's past its prime, especially containers full of science experiments. Make space to chill bowls of cookie dough, batches of eggnog, and perishable food gifts you may receive.

Registered Dietitian Kim Galeaz is a big fan of holiday cooking and will be at the 2002 Corn and Soybean Conference on Dec. 4 in Indianapolis to demonstrate several new holiday recipes and put a healthy spin on some tried and true holiday favorites.
The holidays can also be a very hectic time, so Galeaz will demonstrate a quick dish any family member can easily make for a fast and healthy dinner. This taco skillet supper dish uses frozen corn kernels, black soybeans, soy crumbles, soy pasta and soy cheese.
