USDA Says Use "Thermy™" For Holiday Cooking Safety
WASHINGTON, Nov. 2, 2000 No matter how you slice it, holiday meat will be done safely and turn out better if cooks use a food thermometer. To educate cooks on food safety and encourage the use of a food thermometer, USDA's Food Safety and Inspection Service (FSIS) created "Thermy™," a new food safety messenger. Thermy™ is a characterization of a digital food thermometer. Using a food thermometer is the only way to tell if food has reached a high enough temperature to destroy harmful bacteria and that it is the desired doneness. Unfortunately not all cooks use a food thermometer and thousands of Americans could fall victim to foodborne illnesses this holiday season after consuming food that isn’t cooked to a safe temperature. Susan Conley, director of Food Safety Education for FSIS, says, "We're using Thermy™ to encourage consumers to use food thermometers throughout the year, but it's very important at holiday time. Thermy™'s message is, ‘It's safe to bite when the temperature's right.’ That means if a food has reached a high enough temperature to kill harmful bacteria, it is safe to eat. It will also be a tastier, more juicy product because it’s not overcooked!"

Then there are those of us who enjoy preparing the season's gustatory delights, yet don't plan on spending a major portion of the holidays over a hot stove. With low desert temperatures becoming positively comfortable, I'd much rather be outside hiking, biking and camping instead of slaving for hours over complicated menu items, fancy sauces and greasy dishes, so let's keep the holiday menu simple and traditional. If you have a ham, turkey or roast, there's no great mystery to baking it so it's tender and moist on serving. Most important is selection of the meat/cut in the first place. Then, follow any recipe book or even the on the packaging for baking. Supplement your traditional main course with these simple, tasty recipes that will add a Southwestern flair to your holiday season.

As we reported earlier this year when the American Diabetes Association published their latest dietary guidelines, table sugar and other forms of sweeteners (honey, molasses, brown sugar, etc.) can be included as part of a diabetes meal plan. Getting Started For some of you, feeding the family at Thanksgiving is as easy as pie. But for those who are uncertain about tackling a turkey dinner, don't panic. We've presented tips for making dishes ahead, garnishing, and selecting the best of seasonal produce to help turn your holiday meal into a memorable feast.
Stuffing the bird To stuff the neck cavity, place the bird breast side down. Lightly spoon stuffing into the cavity. Pull the neck skin over the opening, then secure to the back of the bird with a skewer.
After lightly stuffing the body cavity, tuck the legs under the band of skin crossing the tail, or reset the legs into the leg clamp.
Thermometer and Food Safety Temperature should be your guide to doneness. To ensure that the turkey and stuffing have reached a safe temperature, always use a thermometer when you roast turkey. Because there is no visual test for stuffing doneness, the USDA recommends that you not stuff a turkey if you don't have a thermometer.
A meat thermometer measures the internal temperature of foods as they cook. These thermometers can be used for larger cuts of poultry, beef, pork, and other meats. Insert a meat thermometer into the food at the beginning of the cooking time, making sure it is not touching bone. When buying a meat thermometer, look for an easy-to-read dial with a stainless-steel face and shatterproof lens. A meat thermometer can be checked for accuracy by submerging at least 2 inches of the stem in boiling water. It should read 212 degrees F. Some thermometers have "test" marks on them at 212 degrees F.

What size bird should I buy? It depends on how many people you will be serving, and how big a bird your oven can hold. A larger turkey is more efficient at producing meat. For instance, turkeys weighing less than 12 pounds will serve 1 person for each pound of weight. A 10-pound bird will serve 10 people. But a turkey weighing more than 12 pounds will feed 1 guest for each 3/4 pound of turkey weight. So, if you're having 20 guests, you'll only need a 15-pound bird.
What's the best way to thaw a turkey? The easiest and safest way to thaw a turkey is to place the wrapped bird on a tray in the refrigerator. Plan about 24 hours for each 5 pounds of the bird's weight. Remember not to count the day you will be roasting it. Turkey should never be thawed at room temperature.
