As evidence of the interest in herbal medicine, the New York Botanical Garden held a two-day symposium this fall featuring lectures on healing plants through the ages. The creators of the wide-ranging program overlooked little related to herbs. One lecture centered on slowing the aging process and another on using herbs to ease stress One could learn about American Indian curing strategies, or be taken back to the Indian subcontinent to delve into the rise of Ayurveda 2,500 years ago, considered the first complete medical system based on holistic therapies.

Planning an Herb Garden

Herbs have been used by humans since the beginning of time for medicinal purposes, for flavor and for fragrance. Whenever and wherever people have moved, herbs have gone too. Their "magical properties" are entwined in the lore of every culture, and their flavor and fragrance add a distinctive character to regional cooking.
Herbs as Garden Plants
The garden value of most herbs is derived from their form, foliage, texture and color, rather than their flowers. Herbs are best used in gardens that have structure, form and design. Choose herbs and space them to compliment the garden design. Take care in placing rank-growing herbs that can overpower and obscure other plants and the pattern of the garden.
Designing an Herb Garden
Choose a location that has full sun for all or most of the day. Choose an area where the formal pattern of the herb garden is appropriate. Locations separated from the rest of the landscape by walks, walls, fences, or an outbuilding work out well. The garden should fit the scale of the area, but also scale it to your time to take care of it. Many patterns can be used but simple designs are best. To be effective, make the boundaries between various parts of the garden clearly visible. Bricks are easy to work with, make excellent edging and blend well with the texture and colors of the herb foliage.
Culture
Most herbs are easy to grow. Plant in well-drained soil prepare as for any garden. Avoid too much fertilizer, manure and compost as most herbs are better in soil that is not too rich. Many herbs are annuals and the seed must be sown each year. In small gardens, it is best to sow the seed in trays and transplant the seedlings. When herbs are grown in rows in the vegetable garden, they can be seeded directly. Perennial kinds can be grown from seed, cuttings or divisions. Again, in the designed garden, it is best to use established plants rather than seeds.

Do you want herbs year-round? Plant an indoor, winter, herb garden. Select a container that will hold several plants and provides good drainage. Clay, wood or ceramic pots work well. Or, use multiple containers, each with a different kind or herb. If you have herbs in your garden, fall is a great time to divide them. Perennial herbs such as parsley, sage, mint and chives can be divided in the fall. When dividing these plants, place some back into the garden and pot one or two for your indoor herb garden. Tender perennials such as bay, rosemary, pineapple sage and others will be killed by a hard frost. These are best grown in pots year round. Bring plants indoors prior to frost and set them where they will get maximum sunlight to encourage growth. You can enjoy fresh herbs throughout the winter. Current Situation
Growing these versatile plants in our southern climate can be a challenge. The keys to success with herbs is plant selection and site preparation. Don't expect to harvest armloads of English lavender blooms or great handfuls of French tarragon. Sage and thyme can also be difficult to grow, disappearing mysteriously after a few years. Don't blame yourself. These perennial herbs should be considered as short-lived plants in our hot, humid climate. Count yourself among the lucky ones if you can get 3 or 4 productive years from these herbs before they pass on. Although our climate makes it difficult to grow some herbs, there are many that we can grow very successfully. We just have to select the right ones! You can harvest armloads of basil, lemon balm, Texas tarragon, (Tagetes lucida), catnip, German chamomile, Spanish Lavender (Lavandula stoechas), chives, mints, and many others. These herbs thrive in our part of the South. A major cause of failure with herbs in the South (other than climate) is poor drainage of the soil. Planting your herbs in a well-drained bed area, a container or raised bed, will more likely result in success. This is of particular importance for the following herbs that cannot tolerate wet feet: sage, oregano, thyme, lavender, rosemary, French tarragon, and scented geraniums.

Herb gardens are very popular, but what if you don't have room for a garden? Simply plant your herbs in containers. Almost any herb can be grown in a container. In hot, humid climates some herbs actually grow better in containers because the amount of water the plant receives can be carefully controlled.
To grow a container herb garden, select a clay, wood or plastic pot and fill it with a loose well-drained soil. Look for premixed soils made especially for containers or try a cactus soil mix. Depending on containers used, herbs grown, exposure and temperatures, the soil may benefit from additional perlite, vermiculite, fine bark or granite sand. You'll also need a location receiving sun or partial shade.
Pot your favorite herbs such as basil, sage, parsley, balm, mint and oregano in one large container or several small containers. Since most herbs don't need a lot of water, moisten the soil, then allow it to dry slightly before watering again. Herbs don't need much fertilizer either, so apply a balanced fertilizer mixture every other month. With a little tender loving care, you'll be rewarded with fresh herbs for your favorite recipes.
You don't have to spray to keep pests away.

You can plant an entire herb garden in clay pots and arrange them on your deck, patio or balcony. For an extra touch, paint the rims of the pots with latex paint and then paint the names of the herbs on the pots.
If your garden is confined to a deck, you can still grow herbs. In fact, putting potted herbs close to your kitchen makes incorporating fresh herbs into your cooking a breeze. Running to the deck for a few snips of chives and parsley can make your whipped potatoes extra-special. You'll need different sized pots for the various herbs.

This strawberry jar accommodates seven different herbs in one space-saving pot. Common thyme, curly parsley and chives are in the bottom three pockets; sweet basil, variegated sage and oregano in the upper pockets; and lemon thyme tops off the pot.
To ensure that all parts of the strawberry jar receive adequate water, drill holes in a piece of PVC pipe, cover the bottom end with duct tape and insert it into the jar. Water through the open end at the top.
Would you believe that you can grow an herb garden in less than one square foot? Strawberry jars are great for growing strawberries, but they can also be used for annual flowers and herbs. The pocket-like openings around the sides enable you to grow several different plants in one container. Now you can enjoy your favorite herbs fresh from a single pot. Herbs tolerate a variety of growing conditions, but they don't do well in wet soil. Use a loose, well-drained potting soil that holds moisture without becoming waterlogged or compacted.

Members of the Western Pennsylvania unit of the Herb Society of America met on a recent Monday to pull weeds at the Elizabethan Herb Garden, Phipps Garden Center in Mellon Park, Shadyside. I went for insights on herbs but was immediately attracted to the society part. "That's fine," said member Liz DePiero. "It's in our mandate to socialize." And so we did, me and this band of dedicated good-folks, dedicated, as their mission statement makes clear, "to promoting the knowledge, use and delight of herbs." At the gathering, greetings came first, followed by gossip, then information was dispensed and lunch shared before everyone got down on their knees in homage to the weeds. The garden in which they are working this day is in the middle of Mellon Park. The component parts or patches of this space include a knot garden, a Shakespeare garden (where plants with evocative names such as pinks, columbine, rosemary and rue struggle to grow), a fragrance garden where butterflies flit and hummingbirds flutter, and a Lewis and Clark garden with a scattering of plants like those that the explorers, leaving Pittsburgh in 1803, sent back to Thomas Jefferson. There is magic in this place, which also includes a culinary herb garden about which I had many questions, mostly directed toward how to start a garden of one's own. Among the experts at least six are master gardeners there was agreement that the first step should be a visit to the Phipps May Market, between the Garden Center and the Elizabethan Garden on Friday from 10 a.m. to 8 p.m. and Saturday from 10 a.m. to 5 p.m. Herbs ready to plant will be available and advice about them dispensed.

... A Holiday in the Courtyard The beech hedge that forms the long boundaries of the herb garden was probably areas dates back to circa 1870. The 6-8 foot deep beech hedges which divide the main garden into three distinct. By the early 1980s the hedges were losing their shape and had grown into thin, lanky trees completely overgrown with ivy. They have responded brilliantly to an initial 'chain saw massacre' and later careful pruning; the base has thickened up and they have filled out in a way that has confounded the experts. They have now returned to their formal glory, with the arches again clipped back into the exact shape as they appeared in the watercolours painted by Lydia Strangman in the early part of this century. The inspiration for the now famous Herb garden at Kinoith sprang from a visit to the glorious gardens at Vilandry in the Loire Valley. The first plans for the Kinoith herb was drawn as every inspired design should be on the back of an envelope! The garden is set in a compartment of ancient beech hedges with arched entrances, part of Kinoith’s once neglected nineteenth-century garden. A wide variety of herbs including lemon balm, bronze fennel, purple sage, lovage, summer savoury, sweet cicely, parsley, garlic, chives and angelica are planted in sculpted beds. These are laid out in a formal parterre edged with box wood and set in gravel paths. The herbs are planted in patterns of contrasting colour. Scarlet runner beans grow on decorative iron bean poles and globe artichokes and cardoons give height to the design. There are over 70 different herbs in this garden.

Create a Sun Space You will eat better and even save money by growing herbs indoors, because fresh ingredients for your cold-weather cooking cost next to nothing.
Place your herb containers by the sunniest window you have. Put the diehard sun lovers in the center and the less demanding off to the sides. Of the five herbs we recommend for indoor culture, oregano requires the most light.
Even if you don't have an herb garden outdoors, you can start from scratch indoors despite the fact that icy weather is starting to threaten.
It's not too late to buy herb plants. In many areas of the country, prices are being slashed on the last lonely herbs in garden centers. If your local nurseries are already shuttered for the season, you can make a quick call to mail-order nurseries and have them ship you a selection. Do make sure they are astute enough not to send your new garden out the door just as a sudden spell of particularly nasty weather strikes.
