Cooking with herbs is like icing a cake: it makes the dish complete. It may seem daunting at first. There are so many herbs and so many recipes to choose from. And, while using recipes that include herbs is a good way to get started, the excitement comes when the unique flavor of each herb is understood and can be used to create your own special dish. Here are three tips to get you started. Take a clean leaf of the herb and chew but don't swallow. Experience your herbs like you would a fine wine; check the fragrant bouquet, let the leaf meet the tongue and chew thoughtfully. It is not necessary to swallow. Learning about the flavor of the herb this way will help you to decide if it will make the perfect pot roast or sorbet. Add fresh chopped herbs (one at a time) to something bland yet familiar, like butter or sour cream or potatoes. This allows the intensity of the herb to stand on its own and helps you to know how much of the herb to add. Just start playing; add a little Rosemary or Tarragon to the potatoes or the chicken; sprinkle some Oregano on your pizza or pasta; lay sprigs of Thyme on your roast. Keep notes, at least at first of what was pleasing, how much was used and what didn’t work. Note whether the herbs were fresh or dried or a combination of both. You will find this invaluable, especially when you start blending herbs together to get more complex flavors

Herbs are essential ingredients for flavoring and spicing up recipes all over the world. Without them, eating would be pretty bland. Herbs add flavor, character, and uniqueness to recipes. Used alone or in combination, they help to make cooking fun and enjoyable, and eating a sheer joy! Varieties: There are a wide variety of herbs which you can use. Depending on who is counting, there are 40 to 60 different kinds of herbs. Each one has it's own distinct flavoring. Most are easy to grow. There are annuals, perennials and even biennials. With that many herbs, there should be lots or uses, right!?! Absolutely! Listed below are the different categories of herbs. Note, many fall into two or more categories. Aromatic- Grown for their scent, aromatics herbs are used in flower vases or dried arrangements. Their oils are used in perfumes, candles, and toiletries to name a few. A couple of favorites are Lavender and Mint. Culinary- We think of this category of herb first and foremost. Most gardeners grow a few or several varieties. Needless to say, food would be plain and boring without this group of herbs. Some of the more popular include Basil, Chives and Dill.

Herbs, both the historic and newer cultivars, are used to flavor food, make a soothing tea, or add fragrance to the landscape or home; some have medicinal value. Whatever their uses, herbs embrace a large and varied group of many diverse kinds of plants. The group as a whole includes some very easy plants, enjoyed for centuries with little or no care, and others which are all but impossible to grow in Mississippi by even the best gardeners. The beginner can be an instant success, and as time goes by, develop into a master gardener, growing more difficult and esoteric plants.     Herb Gardening for Bees by Heather Apple Did you know that bees are instinctive and highly skilled herbalists? Juliette de Bairacli Levy, the Master Herbalist, has found that bees are wonderful doctors in their own right and know how to dose themselves with herbs to maintain health within the hive. When I read this, I did not keep bees myself, but was very aware of the many bees that visited my garden. There was a wonderful variety ranging from tiny wild bees, to domestic honey bees, to great fat bumble bees. I realized that bees were facing incredible challenges with pollution, acid rain and especially the pesticides sprayed on crops and roadside weeds. I decided that I would combine my love of herbs with my love for bees and plant a special medicinal garden to help the bees cope with our present environment. I did some research to discover which herbs were especially beneficial to bees. These include aromatic herbs such as lavender, rosemary, thyme, sage, bee balm (bergamot), hyssop, anise-hyssop, basil and marjoram; wild herbs such as Motherwort, catnip and purple loosestrife; bitter herbs such as southernwood, wormwood and rue; nectar rich herbs such as clover and alfalfa; all the mints; the Borage family; and the rose family. I had already known that bees loved Borage and I had planted it among my squashes, cucumbers and melons in order to attract bees for pollination. Now, I planted patches all over the garden, making good use of the plants that had self-seeded from the previous year.

    Herb Gardening the Ancient Way
    The traditional wiccan herb garden is in the shape of a five-pointed star set inside a nine foot circle. Choose a sunny area, preferably a private spot. Map out the circle by inserting a broken limb at the center. Tie one end of a four and a half foot string loosely about the limb and the other end to the handle of your athame. Pulling the string taut from the center, trace a nine foot circle on the ground.
    The ideal time to begin is in the fall during a waning moon in a barren moon sign. Consecrate the entire area with incense and purified water. Consecrate your garden tools as well, asking for the Gods' blessings. Then begin turning the soil to a depth of 13 inches. Remove any weeds to your compost pile and break up any large clods of earth. Cover the area with several inches of compost or natural fertilizer and leaves. This can be left to winter over. Turn over lightly again in the spring.
    If you had rather begin in the spring, wait until the soil has warmed up and be sure to add only composted manure to the garden plot. Remove any rough debris and turn up the nine foot circle of earth. The top point of the star should be in the North. Use a compass or go to the garden spot on a clear night and locate the North Star which is always on a direct line out from the top of the Big Dipper's cup. With more string, lay out a five pointed star inside the circle. In the center of the star place a special stone or rock painted with the sun's symbol or a growth rune.

    Indoor Herb Gardening
    As gardening slows down with the approach of cooler weather, gardeners turn their attentions to indoor gardening activities such as going through catalogs and gardening books, planning garden designs, maintaining houseplants and cuttings, and as the winter draws to a close, seed starting. All of these keep those who garden in the northern reaches active and do help to feed the gardening spirit within us. There are other activities we can pursue, and one of them is indoor herb gardening.
    One doesn't need to have a greenhouse or sunroom to develop and maintain an indoor herb garden. In fact, indoor herb gardens can be maintained in south and west window exposures, with low-cost supplemental lighting. This is a gardening venture than can be truly low-tech and satisfying during the long, cold season.
    After picking your window location and your supplemental lights, think about what you want to grow and what will grow successfully indoors. Some plants do better when started plants are brought in from outdoors, while other plants will do well from seeds.
    Some plants that can be repotted or started from cuttings for indoor use are parsley, chives, thyme, and rosemary. In the case of parsley, make sure the taproot is intact, and cut the plant back before repotting the entire root system. For chives, Take some of the bulbs from the mother plant and pot them up. Thyme, mint, and rosemary can be started from cuttings or from new, young plants purchased from a greenhouse. When repotting herbs for an indoor location, use a soilless mix with peat, vermiculite, and perlite. Water the transplanted herbs well, and allow them to thoroughly dry out between watering. Also inspect plants for insects before moving them inside for the season. Use insecticidal soap and a quick dip in a bucket of soapy water to dislodge and kill unwanted pests. Mealy bugs can be controlled by cotton swabs dipped in alcohol to dispel these pests.

    Gardening Indoors can be done easily if you have the proper conditions in your home. The key to success is having enough light for the plants to do well. West and South facing windows provide the most light. If the herbs are not getting enough light they will just stop growing and may eventually have insects or diseases attack them. Another problem with growing indoors is humidity or lack of it. Our heating systems are primarily dry heat and the plants can suffer from lack of moisture in their leaves even though they are watered. This can be corrected by misting or washing your plant's leaves every 2 weeks. Most herbs prefer temperatures from 65-80 degrees and watering when the soil is dry to the touch. Never let your plants sit in a tray of water as their roots will drown. Also, make sure that the pots you use are large enough for the plant to grow for up to 6 months. Pots that are 8" in diameter are best. It is generally best to move your plants outdoors as soon as it is warm and they will really appreciate an afternoon of sunshine on warm days, just remember to bring them back indoors during the cool nights.
