With increased interest in recent years in continental or gourmet cooking the word "herb" is nearly always thought of by home gardeners to mean the "culinary" herb. The Herb Garden The herbs I have grown are listed below with instructions for growing them. Perhaps inexperienced gardeners as well as those who have not yet had the pleasure of growing these interesting plants will give some thought to starting a small herb garden. Even a small plot 4 by 6 feet will grow all a small family would need. If not grown for use in cooking, herbs are worth growing for pleasant aromatic foliage and some of them for the beauty of the flowers as well. Herbs can be used fresh for garnish in salads and to perk up the flavors of bland vegetables or to add flavor to meats and stews in which case one needs only to nip off a few leaves when wanted.

Woodruff History of Herbs Herbs have played an important part in man's life for countless years in his politics, romance, love, religion, health, and superstition. Celery was used by the Abyssinians for stuffing pillows. Ancient Greeks and Romans crowned their heroes with dill and laurel. Dill also was used by the Romans to purify the air in their banquet halls. Some herbs were given magical properties, probably because of their medicinal uses. The early Chinese considered artemisia to have special charms. In France during the Middle Ages, babies were rubbed with artemisia juices to protect them from the cold. Ancient Greeks used sweet marjoram as a valuable tonic, and parsley as a cure for stomach ailments. Rosemary was eaten in the Middle Ages for its tranquilizing effects and as a cure-all for headaches. Chives, still a common herb often found growing wild, had economic importance throughout Asia and many Mediterranean countries. Odd as it seems now, the early Dutch settlers in this country intentionally planted chives in the meadows so cows would give chive-flavored milk.

An herb garden can be a place of enchantment on a summers day. You can watch the hummingbirds feeding on the bright-red bergamot flowers, bees sipping nectar from the pale pink thyme blossoms, inhale the fragrance of mints and lavender and delight in the butterflies dancing around the echinacea.
These are the simple pleasures that my visitors see that entice them enough to start their own herb garden. Then they are hooked when I show them the many other rewards of herb gardening. The herbal wreath on my front door, the dried herb arrangements scattered around our home, the assorted herbal vinegars lined up across the kitchen counter, the way my sheets smell of lavender from the linen closet and not to mention the fresh herbs I use in my cooking.
Then comes the question... "How do I start one of my own?" I will try my best to give a good start here. Please feel free to email me if you have specific questions. I will do my best to find out. When we started to garden we used such herbs as creeping thyme as a low plant to grow between the flagstones of our terrace for its attractive tiny foliage and aromatic odor, and we grew the familiar parsley and mint. So, this is the year, you are finally going to plant an herb garden. Whatever the plan, successful herb gardening starts will a well draining soil.

New To Herbs? ...then go shopping! So, this is the year, you are finally going to plant an herb garden. During the dead of winter you have imagined yourself sipping a steaming cup of lemon balm tea as you stroll through your garden clipping aromatic herbs to add to your evening meal. Sitting in your arm chair, you can smell whiffs of rosemary as your imaginary walk takes you down a path full of thyme, peppermint, sage and rosemary. Well, DO IT! But, where to start... Laurus nobilis ) buy it! Sooner or later all herbies want a bay tree. These slow growers are a bit hard to find so you might as well make the purchase, even if you have never thrown a bay leaf into a stew in your whole life. Northern gardeners will want to keep some of the less hardy plants, such as rosemary, sweet bay, pineapple sage and lemon verbena, in pots to bring inside when winter beckons. Southern gardeners can eventually transplant their "starter garden" into an herb bed, if they wish. Get your new herb babies off to a good start by growing them in well draining potting soil. Use either clay or plastic pots but be warned, accidental drownings are much more likely to occur in plastic pots. A drink of a dilute seaweed (kelp) solution will stimulate root growth of your newly transplanted herbs. Place them in a sunny location and water only when dry. Stick you finger into the dirt to decide if it is time to water. Feed monthly with fish emulsion or Medina Hasta Gro.
