Cooking Up a Business, Hawaiian Style By Bill Spencer, President, Hawaii Venture Capital Association What do you do when you have a great idea for a new mousetrap, but haven’t got a clue about running a business? This is not a problem that most entrepreneurs like to acknowledge, but the truth is, very few people have the talent, time or tenacity to take a good idea from concept to commercialization. The reality is, that to be successful, the entrepreneur must surrounding themselves with a team of talented people. This team must include a board of directors with seasoning and industry knowledge, key advisors, partners and employees who can work with the entrepreneur to make their dream into a reality. Once a concept is fleshed out, prototyped and/or proven and the business plan is ready to be shopped to venture capital, the entrepreneur’s team should be well established. This probably sounds like a tall order and it is, but this is what it takes to attract funding beyond the seed stage from professional venture capital. Hawaiian Yellow Fin Tuna Tataki
Ingredients:
2 lb. Tuna
1 lb. lettuce
4 Oba leaves
Marinade Sauce:
8 oz. Vinegar
8 oz. Soy Sauce
2 oz. Sake
4 oz. Mirin (sweet sake)
1 cup bonito flake 1 coffee spoon ginger (chopped) Instructions: Cut tuna in half and sprinkle with salt and pepper. Put tuna in a refrigerator for 20-30 minutes. Combine all the marinade sauce ingredients in a saucepan and boil. Once the sauce boils, set the sauce aside to cool it off. Add finely minced ginger and garlic. Remove the tuna from the refrigerator and grill it until the surface changes to white color. Then quickly put the tuna in a ice water to cool it then pat dry. Marinate the tuna in a marinade sauce for about an hour. Serve lettuce, onion slices and Kaiware radish on a center of the plate with tuna slices around it. Pour the marinade sauce over. The first thing to consider when using honey to cook with is that it is judged to be twice (2 X) as sweet as sugar. Therefore, to get the same sweetness as sugar, you use one half as much as you would of sugar
The formula for using honey in cooking also makes use of what we know about the composition of honey.
Honey is about 18% water. If you round that off to 20% you can easily figure that about 1/5th of the honey you add to your recipe is water. Therefore, you cut back on the moisture in your recipe by 20%
Examples- Figuring how much honey to substitute-
  • Recipe uses 1 cup of sugar.
  • Since you know that honey is twice as sweet as sugar, you use 1/2 cup of honey.
Figuring how much water to use-
  • Same recipe uses 1 cup of water
  • Since you used 1/2 cup of honey, you can figure that 20% (1/5th) of that 1/2 cup of honey (or 1/10th cup) is water.
  • So you cut back on the water in the recipe by 1/10th cup , and end up adding 9/10th cup of water, instead of a full cup.

Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight. Preheat a grill for high heat. Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter. In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

Pit Cooking
PIT-COOKING is perhaps the most glamorous of all primitive types because it is so largely associated with picturesque places, hearty group effort and holiday spirit. Pits may be small holes of just sufficient depth and width to take a bean pot, a three-legged kettle or a true braising pot with a depression on top for coals, as sketched in the chapter heading. Or the pit may be big enough to accommodate all the makings of a king-sized luau, replete with suckling pigs. In direct pit-fire cooking, hardwood embers are left in the pit, and steel rods are put across it, a few inches above the fire on rocks or logs set around its periphery; the rods, in turn, support a wire mesh grid on which the food is cooked. A switch from direct pit-firing to fireless pit-cooking can achieve a completely different range of culinary effects. Fairly large-scale cookery of the latter type requires digging a pit not less than 2 feet deep, 3 feet across and 4 feet long. If pit-cooking is more than occasional and the locale does not vary, you may find it more convenient to build a surface pit by constructing a hollow rectangle of concrete blocks, about the same height as a true pit is deep. The next step is to line the bottom and sides of the pit with medium-sized flat rocks, -> never with shale, which may explode when heated. Toss in enough additional rock to to approximate the area of the pit. Now spread over the rocks a substantial bonfire of hardwood deadfall or driftwood. Hickory, beech, maple or ironwood are prime for this purpose. And grapevine cuttings lend grilled food special distinction. The French, incidentally, regard food broiled over grape wood, or
