    meatball ingredients
  • 1 1/2 lb. lean ground beef
  • 2/3 cup bread crumbs
  • 1/2 cup minced onion
  • 1 egg
  • 1/4 tsp. ginger
  • 1/2 tsp. salt
  • 1/4 cup milk other ingredients
  • 1/2 cup brown sugar
  • 1/2 cup vinegar
  • 1 can pineapple tidbits, 16 to 20 oz. (reserve juice)
  • 1 T. Worcestershire sauce
  • 2 T. cornstarch
  • 1 medium green bell pepper, chopped
Preparation -
Combine meatball ingredients, shape into small meatballs. Bake at 325 º for 15-20 minutes. Drain and set aside. In a large skillet, combine sugar and cornstarch. Stir in vinegar, pineapple juice, and Worcestershire sauce. Bring to a boil, reduce heat to medium; Cook and stir until smooth and thickened. Stir in pineapple tidbits, green pepper, and meatballs . Cook a minute or two to heat through. Serve over rice.

1 teaspoon coconut extract optional
1 tablespoon olive oil
2 tablespoons malt powder or honey or sugar
1 teaspoon salt
3-1/3 cups bread flour
1 tablespoon wheat gluten, optional
2 teaspoons yeast
1/2 cup dried pineapple , diced
5/8 cup dried coconut shredded or flaked Instructions Place ingredients in the bread machine in the order listed. Add the pineapple and coconut 5 minutes before the end of the kneading phase or work into the dough before shaping. Use the dough setting. Or stop the machine after the rises. Prepare the baking sheets or use nonstick sheets. Remove dough from the machine, punch it down, and roll it out into a rectangle about 14 x 18 inches. Divide into equal pieces and shape into bagel form or use a cutter. Place the bagels on the sheets and let them rise again in a draft free location. This rise can be anywhere from 20 minutes to 4 hours. Fill a 4 to 6 qt soup pot with water 3 to 4 inches deep. You can add 2 Tbsp of malt syrup, honey, sugar or non-diastatic malt powder. Get the water to boiling. Preheat the oven to 400 degrees F.

1/2 cup crushed pineapple, not drained
1 tbsp butter
1 tsp vanilla
1/2 cup pecans
Instructions
Cook sugars, milk and pineapple until mixture forms a soft ball when a little is dropped in cold water. Remove from fire; add butter, vanilla, nuts. Beat until creamy, drop by spoonfuls onto waxed paper. Sometimes it helps to cook just a hair beyond the soft ball stage to get the candy to harden. The beating is the big secret. The color will change as the candy gets stiff. If it is too stiff to drop from the spoon, add a spoonful of hot water as needed, being sure to beat after every addition of water. Credits

    ingredients for 4 servings: 1 1/2 lb Ground beef 1/4 ts Nutmeg 1 ts Salt 2 tb Salad oil 1/2 c Brown sugar 2 c Fresh pineapple chunks 2 ea Eggs 1 ea Onion, minced 2 ea Green peppers,bite size 1/4 ts Garlic powder or minced garl 4 tb Cornstarch 1 1/4 c Pineapple juice 1 tb Soy sauce 1/3 c Water 3 tb Vinegar Preparation: Blend together beef, eggs, 1 t cornstarch, onion, pepper, nutmeg, salt, and garlic. Form into 1-inch balls. Heat oil in skillet; brown meatballs on all sides. In large saucepan add remaining cornstarch, soy sauce, vinegar, water, and brown sugar to pineapple juice. Cook until thickened; stir constantly. Add meatballs, fruit, and peppers. Cook 5 minutes or until fruit is well heated. Yield 4 to 6 servings.
