Greek Cooking Greek Cooking Out of necessity one has to cook almost everyday, so much the better if one enjoys it and knows a large variety of dishes to prepare. I vary my menu with classic American, Chinese, Italian and Greek dishes. Logically enough, after living in Greece for 19 years, the food that reaches the table is more often than not standard Greek fare. In these pages which are devoted mostly to Greek cooking, I will share with you many of my favorite recipes. Each month there will be a featured recipe usually corresponding to ingredient availability or to the celebration of a Greek holiday.   • Cheese Graveiera is a firm cheese that resembles gruyere, while kasseri kefalotiri made in Crete and in Epirus in the north-west reaches of Greece. Similar to pecorino, it has a good, salty flavour and lovely texture. It is particularly good, cut into narrow fingers, rolled in seasoned flour and pan-fried in butter and oil until crisp and golden on the outside, with the cheese melting inside. The fingers of cheese should be rested in the refrigerator prior to frying. They are excellent eaten with proper tzatziki.

Traditional Greek island food is reputed to be very good for promoting one's longevity. Perhaps this is because meat is a luxury; so fruits, nuts, salads, vegetables and the ubiquitous olive form the staple diet. I've also read that it's the daily yoghurt that does the trick. Ironically, Greece turned me from a semi-vegetarian back into a carnivore; all my best intentions went out the window when I saw that food. bodyOffer(674) Since then, I've done quite a bit of research. My sessions in the kitchen are sometimes long, but I switch on the local Greek station and then I'm quite happy to busy myself in the kitchen for a couple of hours. That's the down side for some. This is probably not what you'll want to cook after a long day. When you can spare the time, though, consider a full Greek meal: on the table you'll have bread and salad and olives, and your meat dish will only be a part of your meal. Greek food is about freshness, so you're not going to use canned or frozen vegetables, except for the convenient can of tomatoes. Buy some good quality extra-virgin olive oil, some retsina, and you're ready to embark on a culinary adventure. SPANAKOPITA (Spinach Pie) This is a delicious snack. As part of a whole meal, you might include Spanakopita with the mezedhes, or starters.

Adapted From: Cooking Around the World All-in-One For Dummies Almost anyone who has eaten Greek food is familiar with that wonderful Greek specialty spanakopita, or spinach pie, or the most renowned of Greek sweets, baklava (see the recipe later in this article). While one dish is savory and the other sweet, both are recognizable from their baked-up, golden, crispy appearance, a telltale sign that they're made from phyllo (or filo) dough. Phyllo (which means leaf in Greek) dough is finely rolled and stretched sheets of wheat dough. Paper-thin and almost translucent, the sheets are approximately 12 x 20 inches and are stacked, rolled, wrapped, and then frozen. Phyllo dough is readily available at most supermarkets and at Greek and Middle Eastern specialty food stores. Because the dough is already rolled and cut, phyllo is easy to work with when handled properly. Be aware, however, that the sheets of dough are so thin that they dry out quickly and can tear, leading to less than satisfactory results. The Cooking of Greece
Sometime in the early 1980s, I went with a friend to a Thai restaurant in Boston. There was a line extending out its door and everyone else in that line was a college student. Each generation has one or two particular cuisines inextricably connected to its culinary coming of age, a foreign food that is both wonderfully exotic and cheap. Back in the late 1960s, the dishes we stood in line for were garlicky skorthalia souvlakia , baklava, moussaka, and spanakopitta . At home, although I did make some of these dishes skewered lamb, a basic moussaka, the occasional spanakopitta worked up from frozen filo dough and frozen spinachnothing ever really took hold. And as the Acropolis gave way first to the Szechuan Palace and then to the Bangkok House, Greek cooking pretty much left my life. Why? It wasn't for a lack of cookbooks. I acquired three, starting with The Art of Greek Cooking , published in the late 1960s by the Women of St. Paul's Greek Orthodox Church, followed in 1974 by both Theonie Mark's Greek Islands Cooking (Boston: Little, Brown) and Vilma Liacouras Chantiles' noteworthy
