Prepack hot and cold lunch is available at the elementary schools. Buffet style lunch is available at the middle and high schools, with high schools also offering ala carte items and milk for cash. A computerized debit lunch account program will automatically keep track of each student's account balance. When a student eats breakfast or lunch, their card with their personal identification number (PIN) is scanned and the cost of the meal is automatically deducted from their account. Because this is a debit system, meals must be paid for in advance. The cost per lunch for elementary students $1.65, middle school and high school students $1.85, breakfast $1.10, and milk is $0.30.

Overview The United States Department of Agriculture's Food Guide Pyramid outlines foods that individuals aged two and over should eat each day. This general nutrition guide encourages Americans to eat a variety of foods from each of five basic food groups. Foods in each group provide important nutrients, and individuals need to eat foods from each group daily in order to get the necessary amounts of these essential nutrients. This fact sheet provides a closer look at the Breads, Cereals, Rice and Pasta Group. The Pyramid recommends getting six to 11 servings of breads, cereals or other grain products each day.

Omega-3 fatty acids are a type of polyunsaturated fat that are best known for their heart protective and proposed anti-inflammatory effects. Fatty fish and cold water fish are excellent sources of omega-3 fatty acids. These include: salmon sardines tuna mackerel trout herring , and swordfish Walnuts canola or soybean oil ground flaxseed products , and omega-3 enriched eggs are also good sources of omega-3 fatty acids. I have high cholesterol. Can I eat eggs?
Studies show that for most healthy people, it's the total fat, especially saturated fat (found in fatty meat, chicken skin, full-fat dairy products and coconut and palm oil) and trans fats (found in processed foods and many snack foods) that have the greatest effect on blood cholesterol levels. When total fat and saturated fat are reduced, dietary cholesterol will be reduced as well. A large egg contains about 70 calories, 6g of protein, 5g of fat (of which less than 2g is saturated fat), and about 210 mg of cholesterol. Compared to the egg white, the yolk portion of an egg contains most of the vitamins and minerals - and cholesterol - found in the egg.

Nutrition and Obesity—What's Ahead for School Food?
D octors who gave physical examinations to young draftees during World War II were surprised to find that many of the men were severely and chronically malnourished. They were children during the Great Depression, and some remembered having being sent to school with a slice of bread, or less, for lunch. Indignant that so many American children had grown up ill-fed, Congress responded by enacting a new law, the National School Lunch Act, signed into law by President Truman in 1946, which offered federal financial assistance to school districts to provide hot lunches to children. The law and its regulations also mandated what a federally reimbursable school lunch should contain, requirements that remain in place with some modifications today. Recently, debate about the content of those lunches involves concerns about overweight and obesity in the early years of life. Social programs enacted in the 1950s and 1960s, have changed the picture of poverty and malnutritionchildren are no longer gaunt, but a great many of them, poor and affluent alike, are now too fat, a condition with equally serious implications for personal and public health. The school food program that has evolved in the past 60 years is a massive and complex undertaking—in fiscal year 2004 alone, Congress appropriated and transferred more than $11.4 billion "for necessary expenses to carry out the National School Lunch Act." That money not only pays part of the cost of most lunches served at school, it also buys, distributes, and processes commodities such as flour, ground beef, and potatoes that eventually appear on school menus. And the school lunch program is the major recipient of "donated" commodities—surplus foods that the government is obligated to buy in order to support market prices. These federal contributions, coupled with the money students pay for lunches, are the only assets most school food programs have; it is rare for states or school districts to contribute to the cost of school lunch.

April 2002 The preferred staple in the Ethiopian and Eritrean diet is engera (pronounced en-jer-a , and sometimes spelled injera ), a flat sour-like fermented pancake that is used with "wot", a stew made with spices, meats and pulses, such as lentils, beans and split peas. In Ethiopia and Eritrea, teff is the most common cereal crop used to make engera. Teff is a tiny, round, khaki-colored grain closely resembling millet. Its scientific name is Eragrostis, teff . "Teffa", the Amharic word for "lost", is so named because of teff's small size. It is the smallest grain in the world and often is lost in the harvesting and threshing process because of its size.
NUTRITIONAL INFORMATION
Teff is well known by Ethiopians and Eritreans for its superior nutritional quality. It contains 11% protein, 80% complex carbohydrate and 3% fat. It is an excellent source of essential amino acids, especially lysine, the amino acid that is most often deficient in grain foods. Teff contains more lysine than barley, millet, and wheat and slightly less than rice or oats. Teff is also an excellent source of fiber and iron, and has many times the amount of calcium, potassium and other essential minerals found in an equal amount of other grains. When teff is used to make engera, a short fermentation process allows the yeast to generate more vitamins. (http://www.wam.umd.edu/tes/tef/injera.html) Teff is nearly gluten-free, and is gaining popularity in the whole food and Health food industry in the U.S. as an alternative grain for persons with gluten sensitivity. Teff may also have applications for persons with Celiac Disease.

Enriched, Fortified or Whole: Grains Remain At The Base
New Dietary Recommendations Released in 2000
PARKER, Colo. - The new Dietary Guidelines for Americans continue to recognize the important role grain foods play in the diet by separating the grain recommendation from the fruit and vegetable guideline. Released in May 2000, the new grain guideline recommends consumers "choose a variety of grains daily, especially whole grains." In previous years, the Guidelines lumped grain foods with fruits and vegetables. The Food Guide Pyramid recommends consumers eat six to 11 daily servings of grain foods, such as breads, cereals, pasta and crackers. The American Dietetic Association also advises that at least three of the servings come from whole-grain foods. "Consumers can choose from a wide variety of grain foods, such as enriched, fortified and whole, to meet their daily recommendations of essential nutrients for health and well-being," says Judi Adams, president of the Wheat Foods Council. "All types of grain foods are valuable to overall health. It's important to make room in your pantry and eating plan for a variety." Enriched grain products are "enriched" with iron, folic acid and other B vitamins, including niacin, thiamin and riboflavin. Over the years, enrichment has helped to nearly eliminate nutrition-related diseases, such as beriberi, pellagra and severe nutritional anemia. (

http://www.aibonline.org/ AIB is a non-profit organisation founded by the North American wholesale and retail baking industries in 1919 as a technology transfer centre for bakers and food processors. The organisation's initial mission was to "put science to work for the baker," and that theme is still central to all AIB's products, programs and services.
