Good German recipes haves always interested me. The foods of Germany and German cooking methods are things that I will never forget. Whenever I sampled any dishes, I would ask to speak to the chef about how it was prepared. There was usually a language problem, but I managed to get a good understanding of what went into the dish. Most of the time there is a fond memory to go along with the recipes. I remember bicycle rides along the Main River from Wurzburg in the late spring. We might ride for 50 kilometers and stop at one of the many Gast Hauses for a bratwurst and kartoffelsalat or a schnitzel and pomme frits; naturally there was a beer or two consumed. That most likely accounted for us usually taking a boat ride back, more beer on the boat too. A-a-ah, those were the days. We were just too young to appreciate them. Okay, okay, so I get carried away sometimes; but I think I'll reserve the rest of this page for more comments about German adventures. I really did learn some pretty good recipes. Here are a few.

This is also true of drinking habits in the various parts of Germany: in general, but especially in north Germany, the light Pilsener with little hops is favoured. Even in Dortmund it has displaced the classic export beer. An amber coloured Alt (a top-fermented dark beer) is popular in and in the Lower Rhine valleys. In Cologne The black beer, served in an elegant tulip glass, is starting to regain its former popularity. This very old beer is mainly brewed in the regions of the former East Germany - in Thuringia and Saxony , as well as in Mecklenburg-Vorpommern. An unbroken tradition, however, is enjoyed by the Rauchbier (smoked beer) which is brewed in Bamberg. It has a unique ham flavour because the malt that is used is dried over an open fire. If somebody were asked to describe Germany, it would be rather easy to describe the sandy hills in the tiny islands in the North Sea, the flowering of the healther on the Lüneburg Heath in summer, the scenic mountains, lakes and forests, the magnificent palaces and castles, the splendid churches with world famous masterpieces in wood-carving, relief work and wallpaintings. But if then, the next question were to describe German cuisine, one would be at a loss to do so. Does Germany not have a speciality that one could call a „national dish"? disbelievers would ask. Of course, there is Sauerkraut, Frankfurter sausages, pease pudding, fried potatoes, one could enumerate a few more. But actually there is nothing that one could call „German cuisine", but there are mouth-watering delicacies in regional cooking. Therefore we want to introduce some of these specialities to our readers. Baden-Württemberg The delicacies of Baden-Württemberg are legend. People in the German „Musterländle" (translated it means „the model region") have become experts in producing the most fascinating culinary extravagancies from the most simple ingredients. Deep-rooted regional traditions whole-heartedly are mixed with influences from neighbouring countries. Most typical is the preference for sweet dish preparations in a flour base, called Mehlspeisen. Hand-made noodle variety, called Spätzle, is something that is a must on each and every table. These are not only served with meat preparations, but make also separate dishes when they are backed with cheese or lentils.

A Challenge From Bratwurst To Something Else
When somebody thinks about Germans and eating, it is mostly the masses of Sauerkraut and Bratwurst one is thinking of. Probably Eisbein, maybe Spaetzle, but all the rest? Not existing? If one thinks of going to Germany, he thinks Heidelberg, Munich and Oktoberfest. Liters or gallons of beer. Is that Germany? If a German thinks of America, which always equals the United States, he thinks of all the millions of hamburgers, that all Americans drive at least 3 cars, surf on the beaches and run around shooting guns trying to secure themselves of all the crime and the Bonnie and Clydes of today. Would you think this is correct? Would you believe that Germany is a country with a population of 80 million people, all eating sauerkraut all their lives long? No, the times have changed. Changed towards a more lighter cooking, towards lighter Grande Cuisine. There are movements towards a new revival of the regional cuisine in Germany. The Germany that is a very small country, with a lot of differences. The North is near the stormy North Sea with the Frisians, speaking a complete different language (at least some of them), and eating different things like "Labskaus," a mix of corned beef, potatoes, beet roots, herring and such, or gravied fishes; "hamburger eel soup" which doesn't contain eel at all, and so on. Or it is the Germany of the South, with Bavaria and the Alps. They eat differently: Nice crusty "Braten" and they have "Brotzeit" a late breakfast with those wonderful brown breads and "Wurst."
