D ifferent foods contain different nutrients and other healthful substances. No single food can supply all the nutrients in the amounts you need. For example, oranges provide vitamin C and folate but no vitamin B ; cheese provides calcium and vitamin B ; but no vitamin C. To make sure you get all the nutrients and other substances you need for health, build a healthy base by using the Food Guide Pyramid as a starting point. Choose the recommended number of daily servings from each of the five major food groups ( box 7 ). If you avoid all foods from any of the five food groups, seek guidance to help ensure that you get all the nutrients you need.

A serving is generally defined as ½ cup or a "medium fresh" serving. Adequate intake of these foods is one of the most important steps you can take towards achieving a healthy diet and may reduce the risk of several types of cancer as well as obesity, heart disease, hypertension, and stroke. These foods provide their benefits by containing a wealth of vitamins, minerals, water (yes water!), and fiber, while being low in fat, saturated fat, calories and cholesterol-free. Despite the known health benefits, research indicates that 30 to 40 % of Americans have insufficient intake of fruits and vegetables. Common reasons include busy schedules that make grocery shopping, meal planning and meal preparation more difficult. In addition, many meals are consumed away from home - at work, eating out or on the run - when finding good choices can be a challenge. However, there are many good tips available for increasing both the quantity and variety of fruits and vegetables and improving the nutritional value of your daily diet.
