Dear Castilleja Families, The Castilleja Food Service continues to enhance our all-inclusive nutritional program this year.
1) Baskets of whole fruit for the morning snack are located on the bookshelf outside the Library. The fruit is rotated and restocked daily. We have purposely chosen fruit for the A.M. snack to provide one of the "5-a-day" nutritional requirements for fruits and vegetables and as not to compete with class and club fund-raising bakesales.
2) Our luncheon buffet will continue to be a showcase of fresh fruits, vegetables, and healthy salads and entrees. Non-fat and calcium-loaded frozen yogurt are offered for dessert three days a week. We also offer an additional entree option of a grilled item from the kitchen.
3) The afternoon snack, available to all between 2:00 p.m. and 3:45 p.m., will be served from our Casti Snack Cafe at the entrance to the Dining Room. The emphasis for this snack will be on low-fat, fibrous, and carbo-loaded foods.

The Pinellas County School District participates in the National School Lunch/School Breakfast Program. Nutritious meals are served every school day. All meals served must meet patterns established by the U.S. Dept. of Agriculture. Students may qualify for free or reduced-price meals.
A meal application must be submitted each year for every child in the family. Applications are available throughout the school year from your school. Questions regarding free and reduced-priced meals should be directed to the food service department at (727) 547-7151.
Breakfast and lunch monies can be prepaid and put into your child's account in the cafeteria. Checks are accepted and should be made out to (name of school) Food Service (Example: Largo High School Food Service). The money remains in the student account and may be used for any meal during the year. Your child's account can be replenished at any time to avoid a negative balance. If you have any additional questions about the menu or food service in general, please ask the cafeteria manager at the school site who is always willing to answer any questions about their program.

The Surgeon General reports that the prevalence of children and adolescents being overweight has more than tripled since 1999. A child or adolescent is considered "overweight" when their Body Mass Index (BMI) places them at the > 95th percentile as determined by the Center for Disease Control (CDC). If children fall into the overweight category they are at risk for many serious health conditions such as diabetes, heart disease, cancer, and high blood pressure just to name a few. The health risks are very serious and can continue to worsen, as they get older. However, there are other serious things to consider with an overweight child such as the social implications they encounter. Overweight children may be teased about their weight by other children. This teasing can discourage involvement in recreational activities, when these children are in great need of physical activity. Physical activity is an important part of maintaining a healthy weight. Limit TV, video games, and computer use. Encourage your child to run and play after school. After dinner and on weekends go out and play with your kids. Take the entire family. Parents need exercise too! Getting active together will keep you fit, reduce stress, and bring you all closer as a family. Combining a healthy, well-balanced diet with physical activity is the key to living a healthy lifestyle.

This quotation from one of the founders of the Soil Association, made around the time of the foundation of the National Health Service, reminds us of the importance of agriculture and quality food to health a state which is beyond the mere absence of disease. Although the National Health Service has made the provision of services available to all with diseases it has moved the focus away from the wider issues which influence health including the importance of a diet of quality food. As a result, during the past half century our emphasis has been more on the suppression of disease rather than on the promotion of health. Issues related to food and health include food quality, food safety and access to quality food. A vision of the importance of access for all, to education, good housing, health care, has too often failed to address issues related to access to quality food. Scottish agriculture which has a long tradition of providing quality foods has rarely been seen as part of the totality of health care and hence as an industry justifying support because of its potential and actual contributions to health care. Although fresh produce box schemes and farmers markets have continued to grow; in 2002 the value of organic box schemes increased from £34m to £35m while the number of farmers markets increased from 345 to 370 over the same period, access to fresh produce remains a problem for many in inner city areas. Providing access, especially to locally produced produce, needs to become a priority as part of a wider Scottish health strategy.

Henry the Hand's Food Safety Information According to the Centers for Disease Control and Prevention MMWR, 2001;50:241-246, "Each year in the United States, an estimated 76 million persons contract foodborne illnesses." More than 300,000 are hospitalized and 5000 Americans die each year from foodborne illness. The cumulative costs are estimated to be as much as 17 billion dollars. In spite of the tremendous advances in food technology over the past century, we still face many threats from the way in which we handle food. Nearly 80 percent of the illness is due to food prepared in commercial or institutional environments versus 20% illness that occurs due to food preparation in the home. Some symptoms of food poisoning may be:
  • Sudden onset of vomiting and/or diarrhea Those symptoms occurring within a few hours of ingestion are due to a pre-formed bacterial toxin in the food Those symptoms occurring after 12 hours are due to either bacteria or other germs that have required incubation to produce the symptoms of diarrhea generally without vomiting Severe cases of diarrhea may be associated with blood, mucous and cramping discomfort.

Introduction (from report) Raw and minimally-processed fruits and vegetables are an essential part of people­s diet all around the world. Where land is available, families grow fruits and vegetables for their own use. Alternatively, produce is purchased from local farmers or retail outlets for further preparation by street vendors, by families at home or as part of meals eaten in restaurants and other food-service facilities. While advances in agronomic practices, processing, preservation, distribution and marketing have enabled the raw fruit and vegetable industry to supply high-quality produce to many consumers all year round, some of these same practices have also expanded the geographical distribution and incidence of human illness associated with an increasing number of pathogenic bacterial, viral and parasitic microorganisms. Six years ago, small farmers in the New North Florida Farmer Cooperative began selling collard greens to 13 schools in one county. Six years later, they are selling to 15 school districts in 3 neighboring states, and serving 300,000 students annually.
Five years ago, there were rarely more than 10 students choosing the salad bar in any given Santa Monica school. One reason is certainly that the fruits and vegetables featured in the salad bars were nowhere near as fresh, tasty and appealing as the locally-grown, farm-direct ones now purchased for the school lunches. Today there are more than 120 students per day choosing salad bar meals at any given school for a total of over 2,000 in the district.
As children learn by doing, providing healthy options in school cafeterias is key to instilling lifelong healthy eating habits. Hooking young people on healthy fare early on will be important to reducing the alarming obesity and diet-related disease rates.
