The culture that is French
Concern over France's diminishing importance in world cuisine has prompted the government to create a gourmet university, which it yesterday promised will be nothing less than the "Harvard for the art of French cooking". The university will open in October in Reims, in the heart of Champagne country, and admit 70 French and 30 foreign students in its first year, according to Renaud Dutreil, minister for small business and consumption. The chateau was built in 1607 during the reign of Henry IV. The current owner has carefully restored the chateau to its former grandeur, filling it with objets d'art and furniture from his travels around the world. Each of the five bedrooms is unique, with four-poster beds, ensuite bathrooms and lovely views over the Dordogne River.
In the sunny kitchen you will learn to prepare classic French dishes in hands-on lessons taught by Stephane Brieff. Stephane is from Bordeaux and has trained in restaurants all over the world. During lessons, Stephane will introduce guests not only to the traditional gastronomy of Southwest France, but also its culture, customs and history. High quality local produce and ingredients (such as trout, goose, and duck) will be used in the lessons to ensure authenticity of the dishes created. Excursions to nearby St. Emilion, Bordeaux, and nearby vineyards complete the holiday.

French Cooking Classes: A Week in Provence
Trip #34154 A Week in Provence is a fantastic opportunity to experience a spectacular region of France and truly engage in the life, culture and cuisine of the country. Although cooking classes form the cornerstone of the program, we are offering a truly unique mix of activities with the aim of showing participants the origins of traditional ingredients in French cuisine and exposing our guests to many facets of French culture. All is taught and mastered here, from picking cherries, apricots or plums off the trees outside for a clafoutis or tarte, to a daube Provençal or duck confit or salmon mousse, with rosemary and thyme wild for the taking. About the cooking lessons: Your instructor, Master Chef Daniel Bonnot, is a superb teacher, both charming and knowledgeable. Born in France, Chef Bonnot worked under Parisian chefs for seven years, followed by a stint at the five star Savoy Hotel in London and La Caravelle in Guadeloupe. Seventeen years again he made New Orleans his home, where he was chef/owner of Chez Daniel and Bizous. He has been named Chef of the Year in both 1980 and 1995 and Bizou was named one of the 10 best new restaurants by Esquire Magazine. You will experience the benefit of his vast talent in five, 3-5 hour cooking lessons.

    (Mango and Pear Pie ) Preparation Cooking Time Serving Style 30 Minutes 30 Minutes 6 People Dessert Ingredients:
    3 medium pears
    1 large mango
    The Dough
    2 cups flour
    1 cup softened butter
    1 egg
    2 or 3 tablespoons of water
    The Cream
    1/4 cup table cream 1/2 plain yogurt 1/2 cup sugar 3 eggs Directions: Peel the pears, remove the seeds and slice them into pieces. Put the pear pieces in a sauce pan with a cup of water and cook them on a low heat for 5 minutes. Peel the mango, remove the pit and slice it thinly. Preheat the oven at 350. Prepare the cream next. Mix the cream, yogurt, sugar and the eggs, in a bowl. Whisk everything together. Roll the dough into a circle slightly larger than your pie pan. (Have enough dough to cover the edge). Once the dough is in the pie pan, make some holes in it with a fork. Cook this crust alone for ten minutes. Remove the crust from the oven and place the pears and the mango pieces on it.
