Article #1203 by Carla Helfferich This article is provided as a public service by the Geophysical Institute, University of Alaska Fairbanks, in cooperation with the UAF research community. Carla Helfferich is a science writer at the Institute. Nutrition scientists have been struggling to convince Americans to eat more healthy dietsand they've demanded that we redefine "healthy." Statistical studies established that people live longer, and have less heart disease and circulatory system problems, if they severely curtail their intake of fats, especially those associated with meat and dairy products. Never mind that generations of Americans grew up believing that the best beef had the most luxuriant marbling of fat and that the best milk contained a rich portion of golden cream. Study upon study confirmed the connection of cardiac and blood-vessel diseases with high animal fat intake. Cholesterol rises, fatty deposits build up on artery walls, trouble ensues. The dietitians could point to connections of diet with heart disease worldwide. Cultures that rely upon truly lean cuisines, heavy on vegetables and starches and light on animal products, were held up to us as models of healthy eating. That the differences were in the diet rather than the genes could be established by showing how people from those cultures eventually exhibited American patterns of heart disease if they adopted American patterns of eating.

Following Alex’s approach I have left the French title for each dish with its Niçois name underneath in Italics. Since most English cuisine uses the French vocabulary, many of these dishes will be well known, however where appropriate I have also tried to provide a brief description of each dish. I have also left the Niçois in Italics in the text and have occasionally provided a brief explanatory foot-note ( eg branda, pissalat......) “Nice” cooking !!

French Cooking Classes offers an unrivaled program of small classes taught by a master chef, excursions to local points of interest and cultural immersion amid beautiful scenery.
This six-day program is led by chef-instructor Daniel Bonnot. Daniel has cooked in some of the world’s most famous kitchens, including the Savoy Hotel in London, several top restaurants in Paris and, currently, Bizou in New Orleans. He has received numerous awards and accolades for his culinary mastery. The program takes place in our beautifully restored 18th century stone Provencal farmouse. With each session limited to ten participants, you will receive plenty of individual attention during the three to five hours of cooking instruction per day. The program also provides numerous organized excursions to local points of interest, including a lavender distillery, an olive oil mill, the famous Nyons open-air market, a goat cheese farm and a wine cooperative, as well as some historical sites. Nestled in the rural hills of Provence where the scent of lavender permeates the air, enjoy breathtaking vistas while learning classic French cooking. Besides cooking and touring the area, we invite you to enjoy an afternoon by our swimming pool or sip a glass of local wine on our terrace as you take in the sights, sounds and tastes of Provence.

    III. Site Analysis/Analyse des Sites
    While this list of numbers allows for some statistical analysis and preliminary comments, it is clear that a more thorough examination of the data is necessary. This task can appear daunting and it can be quite difficult to determine which sites will be of use and which are to be left aside -in many cases it is pure luck to find a quality site. One way of filtering the information is to divide it by the type of site i.e. commercial vs. personal. Using this approach I was able to come up with the sites that would serve as resources for my study. Bien que ces chiffres permettent une analyse statistique et certains commentaires, il est bien évident qu'il faut examiner plus profondement les données. Cette tâche semble intimidante et il est difficle de determiner quels sites seront utils et lesquels on devrait laisser de côté - bien des fois il n'est que par hasard qu'on trouve un site d'haute qualité.
