An Indian Fourth of July Usually we celebrate the "American" holidays – Memorial Day, the Fourth of July, and Labor Day – with traditional barbecues, heavy on hamburgers, hot dogs, fried chicken, lemonade and strawberry shortcake. But sometimes we get the yen to do something different. Sometimes we do something strictly authentic, like a regional Indian dinner. Sometimes we have a grand Indian banquet that hopscotches all over the Indian sub-continent. And sometimes we cook Indian dishes and Indian-flavored dishes using American ingredients and end up with something unique, like this Fourth of July extravaganza. You could definitely cook more of fewer things, eliminating the shrimp or the chicken, cooking only string beans or potatoes. It is our pleasure to offer more variety and we find that by a little planning much of this can be prepared ahead for minimal last minute execution. Watercress Soup, Indian Style Cold and refreshing, Watercress Soup is a sprightly addition to any menu. This version is jazzed up a bit to provide an opening note to an Indian meal of many tastes. If you are a Watercress Soup aficionado, you know there are many ways to make this soup. The base can include potatoes and chicken stock or it may be made entirely from cold dairy products like buttermilk and yogurt. Watercress may be added cooked or raw. One timesaving tip for making a bunch of burgers to feed a crowd is to partially precook hamburgers in the oven.
