Preserved samples of food have even been discovered in ancient Greek urns. The techniques of food preservation can be separated into two groups: physical and chemical. Physical methods of preservation such as canning and freezing rely on killing the microorganisms present, or at least stopping their growth for long enough to allow the food to be safely consumed. Other physical methods include drying, gamma irradiation, ultraviolet or high intensity white light, ultra high pressure and filtration. Chemical preservatives work either as direct microbial poisons or by reducing the pH to a level of acidity that prevents the growth of microorganisms. Acetic acid, better known as vinegar, has also been used as a food preservative since ancient times. Salted, pickled or dried foods were about the only nourishment sailors were offered on long sea voyages before the invention of modern refrigeration and preservation techniques. Chemicals used today Two commonly used preservative chemicals are:
  • nitrates and nitrites that are used to preserve meats such as ham and bacon;

Theme Leader - Professor Mike Gasson
The understanding of food poisoning caused by microorganisms, and the development of knowledge-led approaches for its prediction and reduction, remain the core objective in the theme. This objective is approached with a whole food chain vision that requires the formation and maintenance of effective research networks so as to integrate expertise beyond the IFR focus on pathogen biology and microorganisms in food. Over the past few years we have built up a formidable capability in postgenomic analysis using DNA microarrays and proteomics and this underpins the ongoing research strategy. In addition, we continue to investigate the safety of novel food, including GM technology, providing the science needed to underpin safety evaluation. Research in the theme is arranged in five programmes:
Bacterial pathogenesis and response to environmental stress
The fundamental biology of food-borne bacterial pathogens is addressed in this programme with the emphasis on disease caused by

Our Mission
Food Safety Training for the Chinese Food Sector
The Food Safety Authority of Ireland (FSAI) has just launched the first food safety training programme specifically tailored to the needs of Ireland 's Chinese food sector, which comprises almost 6,000 restaurants and takeaways. The programme, entitled Food Safety Training for Management in the Chinese Food Sector , is available in English and Chinese and will ensure that management in the Chinese food sector have access to food safety training that is specific to their work practices. Since the FSAI first started serving enforcement orders in 2001, the Chinese food sector has consistently received 1 in 6 of all Closure Orders. It is hoped that this new programme will ultimately reduce the high number of enforcement orders being served on the sector due to breaches of food safety legislation.
