    (Note: This Information Statement was subsequently published in (2), 117-122, June 1998).
    SUMMARY Attention is drawn to the hazards to human health due to the potential presence of pathogenic bacteria in cheeses made from unpasteurised milk, particularly cheeses of the soft and semi-soft type. Recommendations are given for safe production of cheese, applying Hazard Analysis Critical Control Point (HACCP) principles which often indicate the need to use pasteurised milk, to minimise health risks from such cheeses. The IFST considers that it is impossible to ensure that raw milk is free from pathogenic micro-organisms, that subsequent hygiene measures will not remove pathogens already present and that the majority of cheese-borne outbreaks have been associated with raw milk cheeses. In order to ensure the production of safe cheese, the following measures are therefore important:
  • the raw milk should be collected and maintained in good hygienic conditions,
  • if the raw milk is not to be used immediately, it should be refrigerated to minimise multiplication of bacteria

    Faculty Listing Notable concerns about the quality and safety of foods have evoked a growing awareness of the significant hazards associated with foodborne pathogens and chemicals of natural and man-made origin. Important contemporary issues include: emerging and evolving foodborne pathogens; bioterrorism; genetically modified foods; irradiation of foods; infectious prions; food allergies; organic foods and nutraceuticals. Numerous high-profile outbreaks of foodborne illness have challenged our long-established concepts of food safety. Some newly emerging organisms are able to survive conventional food production and processing. Centralized food distribution systems and the changes in the demographic and cultural practices of consumers have also contributed greatly to the apparent increase in the number of outbreaks. In addition, promotion of international food trade has only served to augment the challenges currently facing us.
