Program Overview The Food Manufacturing Coalition (FMC) is an ongoing, industry-driven technology transfer program. Through extensive surveys and focused prioritization of generic technology needs, industry experts under the direction of the FMC program manager developed a number of Needs Statements . To address these needs, FMC is now searching for technology from a wide variety of researchers, technology developers and laboratories including, for example, aero-space, medical, military, environmental, and process engineering sources. This activity will result in State-of-the-Art reports that document alternative technologies available for follow-up in the form of co-development, licensing, Small Business Innovation Research Grants, or other strategies leading to potential commercialization. The search for technology and subsequent collaborative technology development, economic analyses and commercialization will be conducted with industry representatives under the auspices of the Coalition at each stage of the innovation process.

In the beginning they sold fresh-made refrigerated salad dressings from old family recipes as a side business. By 1974, the salad dressings were pulling in revenues of $100,000 per year. So the Hawkins brothers decided to turn their attention to salad dressing full time. Today, their company employs 500 people and grosses $100 million annually from sales of dressings, berry glazes, and freeze-dried spice mixes, among other goods. Shoppers can buy Litehouse products in most of the 50 states and at some of America's largest supermarket chains.

    Food Safety
    Food safety research at Clemson University includes innovative processing techniques to protect meat, poultry, and dairy products from contamination by common food-borne bacteria, as well as packaging films that contain antibacterial compounds. In addition, Clemson researchers have discovered that a natural food preservative shows promise as a topical treatment for acne. The product has now been patented and is available for commercial licensing. Plant scientists are investigating ways to produce and process medicinal plants, called nutraceuticals, to optimize their active ingredients. Animal scientists have discovered and patented a way to produce more healthful low-fat milk while it's still in the cow. And food scientists are analyzing the beneficial compounds in plant foods such as soy and fruits. The Clemson Food Safety Institute is a member of a national partnership of universities and the federal government to increase the safety of the nation's food supply through coordinated research, education and outreach.

    A range of literature databases can be searched to find journal articles. The databases below will usually produce some articles on most areas of food microbiology, but each has its own emphasis (e.g. biological, medical, agricultural, technological) and it's best to choose an appropriate database for your topic. See Molecular biosciences databases for details of each database and access to it.

    SciFinder Scholar (Chemical abstracts and Medline)
    These are the most generally useful databases, especially for a biological emphasis e.g. microorganisms' characteristics and behaviour in food, and methods of analysis. PubMed may be best for public health aspects such as epidemiology, risk assessment, outbreaks. SciFinder Scholar's version of Medline has less complete searching of MESH terms than does PubMed.

    What is listeriosis?
    Listeriosis is an illness caused by eating foods contaminated with a kind of bacteria, often found in soil and water, called Listeria monocytogenes. Bacteria are too small to be seen without a microscope. Most people do not get listeriosis. However, pregnant women and newborns, older adults, and people with weakened immune systems caused by cancer treatments, AIDS, diabetes, kidney disease, etc., are at risk for becoming seriously ill from eating foods that contain Listeria monocytogenes. According to the Centers for Disease Control and Prevention (CDC), an estimated 1,100 people in the United States report serious illness from listeriosis each year. Of those reporting, approximately 25% die as a result of the illness.
    How do you know if you have listeriosis?
    Listeriosis has flu-like symptoms, such as fever and chills. Sometimes people have an upset stomach, but not always. If the infection spreads to the nervous system, symptoms such as headache, stiff neck, confusion, loss of balance, or convulsions can occur.
