A food allergy occurs when the body's immune system mistakenly believes a food is harmful and identifies an offending substance, or allergen, in that food. People with an egg allergy react to the proteins in the egg white or the yolk. The body produces antibodies that trigger an allergic reaction as they rush in to fight off the invasion. Research has shown that up to 8% of children in the United States are affected by food allergies. Eggs are among the eight foods that cause 90% of all allergic reactions in children ( milk peanuts , wheat, soy, fish, shellfish, and tree nuts are the other seven). Egg allergy, which is usually outgrown by age 5, is most often identified when the child first eats eggs or egg products. Reading Food Labels
It should come as no surprise that baked goods, baking mixes, cereals, cookies, custards, and ice cream are made with eggs, but candies, hot dogs, meatballs, and salad dressings can include egg derivatives as well. There are also many products and food ingredients that contain egg products, but whose names don't always include the word egg. Eggs may be used for a specific function and be listed as "binder," "emulsifier," or "coagulant."

For some people, food allergies can be very serious. One bite of a cookie with ground peanuts can cause a life-threatening emergency in someone with a peanut allergy, while just the smell of fish can make a highly sensitive person feel ill.
Although these are extreme reactions, it’s no wonder many people worry about food allergies. The only effective treatment is to avoid the foods, which cause the problem.
Unfortunately, however, many people are restricting their diet unnecessarily. One allergist found that, out of 23 people who thought they had a food allergy, only 4 actually did. Some of those who didn'’t have allergies were avoiding so many foods they had become sick and malnourished. Don’t guess. If you suspect you have a food allergy, have it properly diagnosed by a doctor, then obtain dietary advice from a registered dietitian.
What is a Food Allergy?
People with food allergies have an unusual sensitive immune system. For some reason, swallowing a protein from a particular food causes the person’s own antibodies to rush into action to attack the foreign substance. This starts a chain reaction of chemical changes which cause swelling and irritation in certain parts of the body.
Food allergies are most common in young children. Many young infants become sensitive to foods, such as cow’s milk, soy and eggs during their first year of life. Fortunately, most infants outgrow these sensitivities in a year or two.

Most people think that allergies are commonplace, with around one in five of the population suffering from some type of food allergy. However, food allergy is actually much rarer with about 1-2 in a hundred of the adult population actually having adverse reactions to foods. Whilst uncommon, allergic reactions to foods are real and can take a number of forms. The commonly experienced symptoms are described below and when experienced in association with the consumption of particular foods it is likely that an individual is suffering from a food allergy. Symptoms of Food Allergies
Reactions to foods are usually rapid, appearing within an hour (or sometimes even seconds) of consumption, although in some cases they may be delayed and appear up to four hours after eating.
  • Skin rashes, such as nettle rash (also called urticaria or hives) can appear which are generally short lived, disappearing within a few days. Longer lasting, chronic skin reactions (such as scaly patches) can also be experienced. Some of these longer lasting rashes are called atopic dermatitis.

A wide variety of symptoms have been attributed to food allergy -everything from hyperactivity and other behavioral complaints to life-threatening anaphylaxis -yet, in many cases, a direct connection has not been adequately demonstrated. Almost two decades of pioneering work by National Jewish researchers has helped document and clarify the true nature of food allergy.
