(Hungarian fish soup) This superb bright-red soup is made with freshwater fishreflective of landlocked Hungary, which is blessed with Lake Balaton and many rivers. And it's traditionally cooked in a narrow-bottomed black kettle hung on a tripod over an open fire. The soul of it is big chunks of fresh fish in a savory broth absolutely larded with paprika. Serve hot to 6-8 people as a meal, with white bread, pickled salads, and a fine Hungarian wine.
  • 12 cups fish stock (ideally made with the remains of the fish fillets and sliced onions)
  • 1 Tablespoon paprika
  • 3 pounds freshwater fish fillets (perch, catfish, carp, etc.), cut in bite-sized chunks and seasoned with salt (reserve milt and roe, if available)
  • 3 Hungarian peppers , chopped (green/yellowthe pointy ones are hot, the blunt ones are mildmix them as you please; if you can't find Hungarian, use a green bell pepper and jalapenos)
  • tomato , skinned and chopped
  • salt and pepper to taste
Garnish: sliced green bell pepper , with sliced hot peppers served on the side Bring the stock to a boil and stir in the paprika. Let simmer for a minute. Add pieces of fish, their roe and milt (if available), the chopped tomato and peppers, and cook over fairly high heat for about 20 minutes. Don't stir the soup or you will break up the fishjust tilt the pan from side to side to keep the fish from sticking.

Participants of the 7th International Symposium. The symposium convened on the shores of the Baltic Sea in Tallinn, Estonia. It was a great success; scientists and students from 15 nations gathered to discuss current work related to eutrophication and hypoxia, as they affect both freshwater and marine fishes. Manuscripts from the symposium will be published in a proceedings volume and available for download from this website during 2004. Symposium sponsors included the United States Environmental Protection Agency, the Estonian Academy of Sciences, the Estonian Agricultural University, the International Section of the American Fisheries Society and Montana State University (USA). From those waters over 250 different species of freshwater fishes have been collected. This includes several rather rare native fishes and 73 species of non-native fishes (fish that come from outside of the United States and would not have been found in Florida if it were not for man's intervention).
The fish species that most people tend to think about are the larger fish that are used for recreation or food. Of those, the 33 most popular are part of the Florida Fish and Wildlife Conservation Commission's (FWC) "Big Catch" program and most are described in detail in this section of our web site (click the group you want to learn about in the table above, or i f you aren't certain of the group in which to find a fish you can pick it from the common names list) . There is also a poster (small pdf version available for download) that illustrates these fishes and is available for schools and fishing-related businesses that will publicly display it. NOTE: Freshwater fishes listed here have been collected during routine sampling by Florida Fish and Wildlife Conservation Commission biologists at sites classified as fresh water. However, some species are traditionally classified as marine (saltwater) and seldom seen in fresh water. Links under the scientific name column go to photos of the fish taken by Mr. Gray Bass or Mr. Paul Shafland, Commission Biologists. Very small rainbows (10-12 cm) have been released. I don't really understand the way fisheries dept think. By the time they grow up it will be summer time and all will die due to the water temperature. Feb 25, 2004. Lefka dam is EMPTY AGAIN. All water has been removed once more by the fisheries and water development depts and all underwater lifeform DESTROYED for the second time in less than two years. And nobody seems to care. !!! WHY ? 20-02-04. Kalopanayiotis dam is now empty. The officials will wait for some time and then fill the dam because this is what they are supposed to do. Makes you wonder, doesn't it ?
