What is Food Poisoning?
Food poisoning may be caused by eating food that is contaminated, either by bacteria or by toxins produced by bacteria present in the food at some time. Bacterial food poisoning is often caused by the salmonella group of bacteria. Symptoms may develop within a few hours, or be delayed for a day or so. Toxic food poisoning is often caused by toxins produced by the bacterial group staphylococcus Symptoms usually develop rapidly, sometimes within two to six hours of consumption.
How to Prevent Food Poisoning
In order to prevent food poisoning: ensure that frozen meat and poultry are fully defrosted before cooking; cook meat, poultry and eggs thoroughly to destroy any dangerous bacteria; do not keep food lukewarm for long periods (bacteria multiply); ensure hands are clean before preparing food (wear protective gloves if hands have wounds). In cases of food poisoning, the casualty may suffer from: nausea and vomiting; cramping abdominal pains; diarrhoea (sometimes bloodstained); headache; fever; shock; collapse.

While most tick bites are harmless, several species can cause life-threatening diseases. Two of these well-known diseases are Rocky Mountain Spotted Fever and Lyme disease. Ticks can also transmit tularemia (a plague-like disease in rodents that can be transmitted to man), relapsing fever, and a newly identified ailment called ehrlichiosis (an abrupt illness consisting of fever, rash, nausea, vomiting, and weight loss). What is Lyme disease?
Lyme disease (LD) is a multi-stage, multi-system bacterial infection caused by the spirochete Borrelia burgdorferi, a spiral-shaped bacterium that is most commonly transmitted by a tick bite. According to the Centers for Disease Control and Prevention (CDC), Lyme disease continues to be a rapidly emerging infectious disease, accounting for more than 90 percent of all reported vector-borne illness reported in the United States. A mean of approximately 12,500 cases annually were reported by states to the CDC from 1993 to 1997. The disease takes its name from Lyme, Connecticut, where the illness was first identified in the United States in 1975. What types of ticks transmit LD?

TRAINING OF FIRST AIDERS
A key point made throughout this lecture is that first aid is planned and developed according to the needs of the workplace. This also applies to the training of first aiders. There is usually a basic level of training and this would be supplemented according to the special needs of the workplace. First aiders who are part of an emergency response team may need training in other aspects of emergency management such as search and rescue.
SELECTING A TRAINING PROVIDER
When selecting a training provider, care needs to be taken to check the credentials of the trainers and the standing of the institution that is offering the training. Employers may need to differentiate between first aid training for general use, such as roadside emergencies, and first aid training for the work processes carried out at the workplace. It may be possible to negotiate with trainers to provide individually tailored courses for special workplace requirements.
RETRAIN SKILLS AT LEAST ONCE PER YEAR
Retraining to refresh the skills and knowledge of first aiders should follow initial training. First aiders are often workers with a day-to-day workload and they may not be required to administer first aid on a regular basis. It is recommended that training in cardiopulmonary resuscitation (CPR) be updated at least once per year.

Managing an Unconscious Patient
A person could become unconscious due to a number of reasons. There are however a few general principles on how an unconscious patient should be handled.
  • Ensure that there is a free supply of fresh air and that the air passages are free.
  • Move the patient away from any harmful gases. If inside a room, open the door and windows. Remove false teeth. It is most important to keep back the crowds, they only obstruct.
  • Loosen the clothing at the neck, chest and waist.
  • If the weather is cold, wrap blankets around the body.
  • If breathing has stopped or is about to stop turn the patient into the required posture and start artificial respiration.
  • Breathing may be noisy or quiet. If quiet, let the patient lie on his back. Raise the shoulders slightly using a pad and turn the head to one side. Watch for some time. If the breathing becomes difficult, noisy or obstructed, change the posture to ease breathing. The changing of posture in cases of injury to the head, neck and spine is best avoided unless absolutely necessary and should be done only after knowing the specific techniques involved. If the breathing is noisy turn the patient to the three-quarter prone position and support in this position using pads. If patient is on a stretcher, raise the foot of the stretcher so that the lung secretions can drain easily.
  • Do not give any food or drinks to the patient.

    How to Treat Severe Bleeding During First Aid
    Bleeding is frequently the most serious risk to an injured person's life. If you have found severe bleeding during the primary survey (see "How to Conduct a Primary Survey of an Injured Person During First Aid"), treat it with the following steps. Steps: Put on latex gloves to prevent infection or disease transmission. Determine the location of the bleeding. Warnings: If you suspect a spinal injury, be especially careful not to move or twist the neck or spine. Have another rescuer stabilize the injured person's head and neck while you treat the bleeding (see "How to Rule out a Spinal Cord Injury During First Aid"). If the bleeding is not from a limb, then the only methods available to you out of those given below are elevation and direct pressure. Pressure points and tourniquets are of no use. Steps: Elevate the injured area above the heart.

    Your portable "Cold Weather Kit" should include the following first aid items:

    • "Space Blanket" or other heat-reflective blanket.
    • Thick sport-weight socks (children's sizes to fit dog's paws), 2 pair: to cover the paws in case of frostbite or other foot injury, plus tape to keep them on.
    • If your dog has short hair or is not used to the cold weather, take along a fitted dog-jacket, in case he gets colder than you expect.

    Frostbite
    The preliminary signs of frostbite in dogs are easily missed because the areas that are affected are usually covered with hair. The areas of the body most frequently involved are the ear tips, tail, scrotum, and other exposed extremities. When frozen or near-frozen, the skin appears very pale. As the skin warms, it becomes somewhat reddened and the area becomes painful. Eventually, the skin becomes scaly. If blood circulation has been severely affected, the tips or edges of the skin may actually die and slough off. First aid in early stages of frostbite involve warming the area gently with warm water. Do not massage the area, as this may cause release of dead tissue toxins into the blood stream or further damage already impaired tissue. Apply a protective vaseline-based ointment and cover the area, if possible. Severe cases of frostbite may necessitate amputation of affected tissue. Seek veterinary attention as soon as possible.

    In the workplace it is often the job of a Certified First Aid Provider to assist in stabilizing an injured or ill person until professional medical help arrives. Certified First Aid Providers are persons who are certified and trained to certain levels in first aid and CPR (Cardiopulmonary Resuscitation). 29 CFR 1910.151(b) states, "In the absence of an infirmary, clinic or hospital in the near proximity of the workplace which is used for the treatment of all injured employees, a person or persons shall be adequately trained to render first aid. First aid supplies approved by the consulting physician shall be readily available."
