Main Course Meat patties are one of our most time-honored dishes and never seem to go out of fashion. 1 lb chuck ground beef
2 tsp salt
1 ½ tbsp potato flour or cornstarch
½ tsp pepper
½ tsp ginger
approx. 1 ½ cup (400 ml) milk
1.Add salt to the ground beef and beat well until slightly stiff. Stir in potato flour or cornstarch and seasonings. Add milk a little at a time and mix well. 2.Shape patties and fry in butter or margarine for 4-5 minutes on each side. 3.Serve meat patties with boiled potatoes, creamed cabbage and wild cranberries. Many people like a good brown gravy with meat patties. SERVE WITH:- Creamed Cabbage The secret of good creamed cabbage is the nutmeg. Approx. 1 lb white cabbage
1-1 ¼ cup (200-300 ml) water
½ tsp salt
2 tbsp butter
3 tbsp flour 1 cup + 3 tbsp (300 ml) cabbage water Approx. 1 cup (100 ml) cream Salt, nutmeg
1.Dice cabbage and cook until tender in salted water. Strain off the water and set aside. Melt butter, stir in flour and add enough cabbage water and cream to make a slightly thickened sauce. Stir well. 2.Simmer for at least 5 minutes. Add the cabbage to the sauce and mix. Season to taste with salt and plenty of grated nutmeg.

CLOQUET: Finns gear up for St. Urho's Day with a mojakka cook-off.

The Irish may have St. Patrick, corned beef and cabbage, but Finnish-Americans have St. Urho and mojakka. And Sunday, Finnish-Americans and Finns at heart gathered at the Historic Northeastern Hotel to sample and judge 10 variations of their beloved mojakka. "I'm up to number eight right now," said Paul Koskela of Esko. "I'm trying to pace myself so I get a taste of all of them. There's a lot of variety here today, and I've enjoyed them all." Mojakka (pronounced MOY-a-kah) is a soup made with fish or beef and whatever vegetables are on hand. Tim Winker organized Cloquet's first St. Urho Day Mojakka Cook-Off last year. "I decided it was time to promote it as a regional dish," he said.

Finnish Fare The Finnish diet combines traditional country fare and upper class cuisine with modern continental style cooking. Spices have been adopted from both East and West. Finns appreciate fine cuisine, but consume it in moderation. They believe gastronomic delights and healthy habits go hand in hand. Although traditional foods such as sausage are still popular, today they are consumed with a concentration on more meat and less fat. A tradition of functional, healthy ingredients continues. Among these is rye, which has been scientifically demonstrated to improve well-being. Finns, especially young adults, are health conscious. Most Finns prefer to prepare everything from scratch, but will settle for convenience foods on occasion. In comparison, Finns eat much less fast food than Americans. In Finland, the main family meal is a full breakfast. Porridges are held in high regard, and many families also go for muesli, bran, cereals, yogurt, milk, and bread - a must at most tables. A Finnish breakfast is likely to resemble an American lunch! Finland is a world leader in coffee consumption statistics, but tea is gaining ground. In addition to water, many drink milk, buttermilk or beer with their meals, while a small but growing group has discovered a love for wine.

Finland, squeezed between Sweden and Russia, stretches northward, a phalanx of forests. Its foods are those that grow in humus, in shadowed nooks, in beds of moss, or swim in any of the many lakes. For more than 600 years the Finns lived under the Swedish crown, then 100 years under the Russian czars. As a result Finnish cooking is a melange, an exciting blend of influences from both West and East.
With a third of Finland within the Arctic Circle, the seasons affect the life style and diet of its people. Winters are extremely cold, with long nights from mid-November to the first of February. The summer growing season, though mostly daylight, is very short. The Finns see food as a gift from nature and are resourceful in raising, preserving, and preparing foods so they still have a fresh natural taste.
