Let's make it all as easy as possible.
This checklist will help you avoid the minefield in your own kitchen. You could start to cut down on fat and calories straight away, with a few changes to how you cook. Meals will then be healthier and just as tasty.
  • Use non-stick pans or a non-stick vegetable cooking spray instead of cooking with fats and oils.
  • Grill, bake, roast, boil, steam, stir-fry or microwave your food instead of frying.
  • Steam vegetables instead of boiling them to keep in more of their nutrients.
  • Use salsas, chutneys, relishes, pureed vegetables or garlic on meat, fish and poultry instead of creamy sauces, gravy and butter which are more fattening.
  • Remove fat and skin from poultry and excess fat from meat BEFORE cooking.
  • Buy extra lean minced meat instead of regular minced meat.
  • Look for foods with a low fat version of the same ingredient. For example, there are low fat substitutes for cheese products, mayonnaise and salad dressings.
  • Marinate foods with lemon juice, stock, low fat yoghurt, light salad dressing, vinegar or herbs instead of oil.
  • Fry vegetables in a small amount of water, wine or vegetable stock rather than oil or butter.

Preparing the main course

  • Egg yolks are very high in cholesterol. Egg whites and oil-free egg substitutes have no cholesterol. Use them instead. Limit egg yolks to three per week (including those used in cooking).

Reducing fat
  • Remove all visible fat from meats before cooking.
  • Skim the fat from the broth or meat drippings during the preparation of soups, gravies, and casseroles.

Try these methods of removing fat:
  • Refrigerate drippings, then skim fat off top after it has solidified.
  • Cool the drippings while still in the pan by placing the pan in cold water, or add a few ice cubes directly to the pan to harden the fat. Then, skim off the solidified fat.

MATZO BALLS
Ingredients:
  • 1 box regular matzos
  • 1/2 cup egg substitute (Eggbeaters, etc.)
  • 2+ cups minced onion
  • 1+ cups finely chopped fresh parsley
  • Matzo meal
  • Water or broth
  • Your best veggie broth (put lots of celery in)
Crush up matzos (the crackers) in bowl and cover with water. Let soak 1/2 hour or so. Then "squish up" through fingers until it is kind of a dough. Dry saute the onions in nonstick large deep pot (or saute them in a greased large deep pot). Remove from heat when edges are brown and liquid has mostly evaporated. Stir in "squished" matzos, then the egg-likes, then the fresh parsley. Add matzo meal or water (or broth) to get to the right consistency.

Ingredients:
  • 1/2 cup matzo meal
  • 1/2 tsp salt
  • 3/4 tsp powdered instant broth (veggie)
  • 2 Tbsp chopped parsley (optional)
  • dash of onion powder
  • 3 egg whites
  • 3 Tbsp cold club soda
Stir the dry ingredients together. Stir egg whites, club soda, and parsley slightly with a fork and pour over the dry ingredients. Mix well and refrigerate at least one hour.

1 loaf fat free French or Italian bread
2 tablespoons crumbled dried Italian herbs
2 teaspoons garlic powder
2 teaspoons onion powder
Salt
Freshly ground black pepper
Nonstick cooking spray Preheat the oven to 300 degrees and grease a baking sheet. Cut the bread into 1 1/2 inch to 2 inch cubes and place on the prepared sheet. In a small bowl, mix together the herbs, garlic powder, onion powder, salt, and pepper. Liberally spray the bread cubes with the cooking spray, sprinkle half of the herbs on top, and lightly spray again with the cooking spray. Bake for ten minutes. Flip over the bread cubes, liberally spray with the cooking spray, sprinkle the rest of the herbs on top, and lightly spray again with the cooking spray. Bake for another 10-15 minutes, or until crispy and lightly toasted. Serve warm or at room temperature. If making in advance, store in an airtight container. Makes 6 servings.

Is there such a thing as a heart-healthy french fry? The Washington State Potato Commission and Dow AgroSciences seem to think so. The key, they say, is in the oil. At the National Restaurant Association show, that opened Saturday at McCormick Place, the commission will serve up batches of fries cooked in Natreon, a new canola oil that Dow researchers say is free of artery-clogging trans fats and lower in saturated fats than other frying oils. The company has been perfecting the oil for more than six years and is starting to make it available for commercial use, said Dow representative Pablo Ilarregui. The company plans to develop a bottled version for groceries, he said. Natreon oil has no trans fats and contains less saturated fat and more monounsaturated fat the so-called good fat than the partially hydrogenated vegetable oils used by most eateries, said Shannen Bornsen of the Washington State Potato Commission. It has a light flavor and lasts longer at high temperatures, something fast-food chains look for in their frying oils.

Once again, I'll again share a couple of recipe makeovers I did, so you can enjoy them, too! An excellent white sauce for creaming veggies can be made simply by combining 1and 1/2 cups of JO's Evaporated Fat-Free Milk (the cooking tip I just shared with you) and 3-tablespoons flour, in a small covered jar. Shake well to combine. Pour the mixture into a medium-sized saucepan sprayed with butter-flavored cooking spray. Cook over medium heat, stirring constantly with a wire whisk, until mixture thickens and just starts to boil. Season as you desire. Now if you want to make cheesy white sauce, stir in 1-cup of shredded, reduced-fat, Cheddar cheese, and continue cooking and stirring until the cheese melts. However, do NOT ever use fat-free Cheddar cheese and expect it to melt correctly and if you insist on using the fat-free, you are forbidden to tell anyone it was my recipe! Nothing turns families off from eating healthier quicker than fat-free cheeses! Or maybe you're in the mood for Thai food and want to make a creamy peanut sauce. If so, then stir in 1/4-cup peanut butter (reduced-fat or regular, your choice) instead of the cheese and continue cooking and stirring until the peanut butter melts. Both creamy and chunky work well. Drizzle this over cooked carrots and celery and you won't have any problem getting your family to eat their veggies!
