We thought we would experiment with homemade fat-free salad dressings. The trick was to find something that could replace the "mouth feel" of oil but not add any fat. The solution was threefold: We tried using gelatin, cornstarch, and pectin: three fat-free thickeners. The results were great. Try the Fat-Free Balsamic Vinaigrette (thickened with cornstarch), the Fat-Free Pineapple-Tarragon Dressing (thickened with fruit pectin), or the Carrot-Orange Dressing (thickened with gelatin). Cooking Tips to reduce the Fat - lowfat
The following cooking tips to reduce fat were contributed by Reba Thompson, Dietetic Intern, University of Northern Colorado.
1. Use 2 egg whites or 1/4 cup egg substitute instead of one whole egg.
2. When baking, use fruit purees, applesauce, or plain non-fat yogurt instead of oil.
3. Use evaporated "skim" milk when recipes call for evaporated or canned milk.
4. Use fat-free cream cheese or blended fat-free cottage cheese instead of regular cream cheese.
5. Use de-fatted broth, fruit juice, wine, water, or cider to saute meats and vegetables instead of oil or butter. 6. Make your own white sauce using 2 tbsp reduced-fat margarine, 2 tbsp. flour, and 1 cup skim milk. Add fat-free cheese slices for a great cheese sauce. 7. Replace the meat in your chili or other casseroles with extra beans, tofu, or tempeh. Experiment with different varieties of beans. 8. Use cream style corn instead of oil in your cornbread recipes.

A lot of recipes can be found with a little research. My wife and I married early in life and lived on simple food. Our culinary talents were limited to simple cooking. Tiring of attempting to make difficult entrees and desserts, we decided we should stick with easy recipes. You don't have to eat cheeburger, cheeburger, cheeburger. Almost anything can be made quickly and easily if you try. Don't worry; an easy recipe can be accomplished with a few condiments. Many of my favorite meals will be included in this web site. Most people learn to cook at their parents knees, parents with skills they don't realize they possess. A pinch of this, a pinch of that, and often they forget to tell you these small tricks. When you try and it doesn't taste right you give up. Our quick and easy recipes are difficult to mess up. We will teach you how to make easy recipes, often in minutes. These are simple to put together and don't involve a lot of ingredients. I have made extraordinary four course meals using only a blender and a toaster. (joke)

Woodie, I don't know what others think about it but I tried it when I lived in NY state and didn't like it. It is sweet. I guess they make it sweet to make up for the loss in fat and flavour. Maybe not everyone will notice this sweetness but for me it ruined the dish I used it in. Ann
How can there be such a thing? Isn't fat free half and half called skim milk Kind of like "jumbo shrimp." Huh?
Woodie, I think it would work just fine......I use it actually in cooking for my husband, it does have a taste of sweetness but hardly more than real half and half.....The amount of sweetness might be dependent on the brand but just to make sure I was accurate, I went and tasted my fat free and my regular and didn't find noticable difference. Try it and report back to us......I say it will work.

Feeding a child with diabetes doesn't mean that you need to prepare two sets of meals for your family. Meals that are good for your child are good for your whole family because they are part of a nutritionally balanced diet that offers long-term health benefits for people without diabetes as well, such as reducing the risk of heart disease. Remember that the three key factors affecting blood glucose control in diabetes are nutrition, physical activity, and insulin. Optimal blood glucose control involves anticipating changes in all three factors and planning accordingly. For example, extra physical activity may mean that your child will need to take less insulin or eat more carbohydrates than usual because exercise increases your child's sensitivity to the effects of insulin and increases the need for energy (calories) from food. If your child is at a healthy weight and his blood sugar control is satisfactory yet he still feels hungry after meals, allowing him to eat more food is usually appropriate (with adjustment in insulin dosage as needed to handle the extra calories). If your child needs to lose weight (or slow down the rate of weight gain with growth), then eating less (with downward adjustment of insulin dose, if needed) is the way to go. In addition, follow these tips to encourage good nutrition:

Secrets of Fat-Free Chinese Cooking Review #1 Love the recipes, hate the design Okay...first the great stuff! While dieting, its hard to find many options at a chinese resturant besides steamed veggies and plain tofu without sauce and with a bit of rice (unless your low carbing..than you can forget the rice, even) This book has none of the typical sweet and sour heavy gloppy sauces and deep fried anything... And the food is better for it. According to the author it is more *authentic* to the real cuisine and I can see that she is right. The recipes smack of healthful trasitional ethnic cuisine...with a bit less sodium and fat. In the beginning there are some general guidelines for reducing dietary fats as well as a glossary of asian ingredients...some familiar (green onions) some more esoteric (agar-agar)... and some helpful cooking hints. The book is separated into chapters of soups, springrolls and dumplimgs, rice and noodles, tofu, veggies, meat, seafood, and desserts.
