Introduction
Being raised in an Egyptian family, I soon found out that food was of tremendous importance in our culture. Social and family gatherings were centered around large amounts and various types of food. I found the dishes my mother and grandmothers would prepare quite flavorful and grew up always adding lots of spices to whatever I ate. Spices common to Egyptian foods include cumin, garlic, onion, and allspice, and the list goes on and on. My family is Christian Coptic Orthodox to be exact. This was one of the earliest forms of Christianity and was the religion of the country until the Arab invasions. Many of the following recipes have been passed down from generation to generation. The Coptic church believes in partial fasting almost 200 days of every year. During about 60 of those days, the members eat a completely vegan diet. The remaining days they are permitted to eat fish, but no other animals or animal products. The reasons behind the fasting vary by interpretation. They look to stories in the Bible for the reasoning behind the fasts. According to the Coptic interpretation of the Bible, when God first created the world, he gave humans only vegetables as food. It was only later, when people multiplied and became sinful, that God permitted them to eat animals, only because it was in accordance with their sinful behavior. Therefore, the Copts believe humans survived for a great length of time without eating animals. In an effort to purify themselves and to make a sacrifice to God, they give up the eating of animals during these 60 days. The Copts consider the vegan food they eat during fasts to be a sacrifice because they consider such food less appetizing and less nutritious.

Yield: 4 servings
1 lb lean ground chuck
1 ea small onion, chopped
2 cn beef consomme
2 tb to 3 soy sauce
1 ts Worcestershire sauce
1 jar sliced mushrooms, drained
1 c raw rice
salt and pepper to taste

Ingredients: 2lbs cream of wheat 2.5 cups sugar 3/4 lb. butter 16 oz. plain yogurt slivered almond halves Instructions: Bring all ingredients to room temperature. In a large bowl mix sugar and cream of wheat. Add butter, mix by hand, rubbing the buuter, sugar and cream of wheat between your palms for 10 minutes or more until the mixture is very well blended. Add the yogurt and mix with your hands until the dough feels smooth in your hand. If it feels dry add one tablespoon at a time of water so when you hold it in your hands it feels like pie dough. Butter a 13x9x2" pan and pat the dough into the pan with your hand. With a sharp knife slice the dough in 2 x 2 inche squares or into diamond shapes.

These days, farmers can predict the availability of water to help them grow their crops thanks to modern dams and water irrigation projects, but there are still small farmers growing crops the way their ancestors did centuries before. The food of Egypt is much closer to the food of the countries of the Middle East than it is to the food of sub-Saharan Africa.. One activity to do with children is to have some pita (pocket) bread for them to try. Many of them may already have eaten it at home. If you cannot buy pita in your local store, it is fairly easy to find a recipe and make it (with a little trial and error!) Have some ingredients common to North African and Middle Eastern cooking, such as yogurt, feta or other goat cheese, cucumbers, tomatoes, olives (black), olive oil, almonds, dates and apricots. You can make the following recipe and invite the children to make "sandwiches" with their Ta’amia and pitas.. Serve tea flavored with mint as a beverage.

Fool Medames (or Fool Mudammas Ful Medames Ful Mudammas Fuul Medammis , etc., often just called Fool Ful or Fuul ) is an Egyptian bean stew: the basic recipe is fool ful fuul , i.e., fava) beans, cooked until tender, mashed then mixed with olive oil and seasonings, typically lemon juice and cumin. The mashed beans are usually served garnished with egg accompanied by pita bread. Fool is often eaten for breakfast, and is sold by street vendors: Egyptian fast food. What you need
  • four cups (about two pounds) dry small fava beans (broad beans or pink beans) one-half cup split red lentils, washed, rinsed, and cleaned (optional) one or two ripe tomatoes, chopped (optional) one onion, chopped (optional) four cloves garlic, crushed (optional) one teaspoon ground coriander (optional) one teaspoon cumin 1/4 cup lemon juice 1/4 cup olive oil salt and pepper, to taste

BREAKFAST DISHES:
Egyptian Ful Mudammas (Fava Bean Stew)
By Clifford A. Wright , Cook and Author The rich man's breakfast, the shopkeeper's lunch, the poor man's supper. This Arabic saying captures the versatility of ful mudammas . Ful (pronounced "FOOL"), which means "fava bean," is often eaten for breakfast. Ful mudammas, a kind of dried fava bean stew, is considered the Egyptian national dish. Read more about ful here INGREDIENTS:
  • 3 pounds small dried fava beans (about 6 cups), picked over and soaked in water to cover 24 hours
  • 1 large onion, chopped
  • 2 large ripe tomatoes, chopped
  • 3/4 cup dried red lentils, picked over and rinsed
  • 2 1/2 quarts cold water
  • Salt to taste
COOKING INSTRUCTIONS: Drain the fava beans. Bring a pot of water to a boil, add the fava beans, and boil them until they are soft enough to have their peels removed, about 10 to 15 minutes. Drain, then remove the peel by gently squeezing each bean so the skin pops off or by using a paring knife. Place the peeled fava beans in a stewpot with the onion, tomatoes, and lentils and cover with the water. Bring to a gentle boil, skim the top of foam and reduce the heat to very low or place on a heat diffuser. Cover and cook for 12 hours. Don't lift the cover at all during the entire cooking time, otherwise the beans will discolor.

Ingredients:
  • 1 jar grape leaves 1/2 lb ground beef 1.5 cups short-grain rice 2 tomatoes 2 x 1/2 medium onion 2 Tb tomato paste 1 Tb olive oil Dill weed Coriander Cayenne pepper 2 cloves garlic 1 lime + more to serve Salt and freshly ground pepper
Procedure:
  • Wash the rice and soak it in a lot of water (not strictly necessary but will make it need less water to cook). Blanch the leaves in boiling water for a few minutes (3-4) to make them pliable enough to roll and less salty. Chop one half of the onion and the two tomatoes coarsely (seed and peel the tomatoes first). Put them in a pan with 2 cups of water (= 1 1/3 x the quantity of rice). Add the juice of 1 lime, a little bit of salt, and lots of freshly ground black pepper. Bring to a boil, lower the heat, cover and cook until ready to roll the leaves. Mash the garlic in a small bowl. Add quite a bit of dill weed (maybe 1-2 Tb), some coriander, and cayenne to taste. Add a little bit of water and mix well to make a paste. Chop the other onion half finely. Saute it in about 1 Tb of olive oil (or other oil) until it begins to turn brown. Add the garlic paste and fry for about a minute. Add the ground beef, fry until it has no pink left. Lower the heat, cover and cook for about 15 minutes. Mix the ground beef and the drained rice. In a bowl, mix some water with the tomato paste to make a thick liquid. Add that to the rice mixture. Add some freshly ground black pepper if you want. Be careful if you want to add salt, check that the leaves aren't already salty enough before adding anything (I generally don't need to add salt).

    Egypt, the enlightened locale for last year's ''Protocols of the Elders of Zion'' television program, is now the source of even more anti-Semitic hatred. According to MEMRI.org, a group of Egyptians living in Switzerland, is planning to sue ''all the Jews of the world'' over gold that was allegedly stolen during the biblical exodus of the Israelites from Egypt. While this bigotry is infuriating, the utter ludicrousness of it all makes it read more like a comedy sketch. Seriously, you couldn't make this stuff up!
    The August 9, 2003 edition of the Egyptian weekly Al-Ahram Al-Arabi featured an interview with Dr. Nabil Hilmi, dean of the faculty of law at the University of Al-Zaqaziq. The following are excerpts from the interview:
    Dr. Hilmi: ''. Since the Jews make various demands of the Arabs and the world, and claim rights that they base on historical and religious sources, a group of Egyptians in Switzerland has opened the case of the so-called 'great exodus of the Jews from Pharaonic Egypt.'     In appreciation of students who chose to live on campus this year, University Housing is offering down-home cooking and hospitality as part of Southern Hospitality Day, officials say. Beth Scally, University Housing coordinator of marketing and public information, said the Southern Hospitality Day is designed to show students they are wanted and appreciated by Housing. "We try to do this every year, but last year, there were electrical problems, and we couldn't do it," she said. "This year, we want the students to know that we understand that they didn't have to choose to live here, and we appreciate the fact that they did." Scally said students will receive complimentary pens, pencils and mints, and they will have a special dinner available in all cafeterias tonight. Mary Morgan, assistant director of dining, said the dinner consists of many different Southern-type entrees for students to choose from, such as chicken and dumplings, country fried steak with white gravy, smothered pork chops with onions and mushrooms, and sliced turkey and vegetable stew. She said some of the side dishes include baked beans with apples, green beans with bacon and mashed potatoes. Ed Jones, University Housing director, said Southern Hospitality Day creates an environment Housing wants to live up to.
