Dr. Ragab's Pharonic Village, 26 Jan, 1999 W e spent an enjoyable afternoon at the Pharaonic Village in Cairo, where we observed Egyptians living and working just as the ancients did. We went on a guided (in English) boat ride where we saw people working on farms, making textiles, pounding papyrus reeds into paper, spinning pottery, making reed boats and baskets, quarrying stone, carving artwork on tomb walls, fishing, raising animals and pigeons, and even paying their taxes. Then we walked through the homes of a nobleman and a peasant, as well as a temple and a replica of King Tut's tomb. At the gift shop/museum we had our names printed in hieroglyphics onto handmade papyrusthe best deal of any souvenir in the store. Step back in time with us and experience living in Egypt, ancient style.

SHARKASSIAH (CIRCASSIAN STEW WITH NUT SAUCE)
½ kg. walnuts ¼ kg. hazelnuts 2 loaves dried local bread 20 garlic cloves, crushed 1 teaspoon ground coriander 1 tablespoon cooking oil salt pepper Soak the bread in water to soften. Lightly fry the hazelnuts, then peel. Crush or mince the hazelnuts and walnuts very fine. Bring the soup to the boil, then add the nuts and bread, stirring constantly for about 5 minutes. Mix garlic, coriander, salt and pepper to a smooth consistency, then sauté for 3 - 5 minutes. Toss into pot of boiling stew. Ladle one spoon of the cooking broth back into frying pan, stir and toss again into cooking pot. Cook further until sharkassiah reaches the desired thickness. As a result of subsequent colonization, foreign influence is somewhat present, specially from the Turkish cuisine (it is understandable after more than 300 years of Turkish presence in Egypt). The "Pashas" living in Cairo mainly employed the natives as help and cooks. Their kitchen doors opened to us with their culinary secrets and, hence, Turkish food became part of ours. Recipes gathered here are those known to the common Egyptian ,irrelevant of their origin. Their names in Arabic are the ones we all know and use. Ingredients used are very easily found in Middle East/Oriental specialty stores. Ancient Egyptian Food and Drink The Egyptians were very secure in that the Nile valley always yielded enough to feed the country, even when famine was present in other nearby parts of the world. The Egyptian's basic food and drink, bread and beer, were made from the main crops they grew, wheat and barely. There were many types of bread ,including pastries and cakes. Since there was no sugar, honey was used as a sweetener by the rich, and poor people used dates and fruit juices. Egyptians liked strong-tasting vegetables such as garlic and onions. They thought these were good for the health. They also ate peas and beans ,lettuce, cucumbers, and leeks. Vegetables were often served with an oil and vinegar dressing. Figs, dates, pomegranates and grapes were the only fruits that could be grown in the hot climate. The rich could afford to make wine from their grapes.

    The fertile Nile River Valley and the warm climate provided the perfect conditions for the ancient Egyptians to become expert farmers. The land around the Nile was irrigated and forced into canals where the farmers would use shadufs to scoop up the water. Fields were plowed once or twice with oxen pulling the plows.
