Get Ready for Holiday Cooking and Eating
At this time of year more than any other, the kitchen becomes the focus of frenzied activity. It's also a time when it's important to take deep breaths, relax, and have fun. Here are a few tips to help you do just that.
  • Before you cook even one holiday recipe, remove kitchen clutter, making as much room as you can for holiday preparations. Cast a cold, hard eye on those kitchen counters. Pack away the chicken-shaped egg timer you haven't used since last Easter, or consolidate the four crocks of whisks and wooden spoons into one. Get out a large cardboard box and fill it with all the things you won't need, and stash the box in the attic or basement.
  • Attack the refrigerator. Discard everything that's past its prime, especially containers full of science experiments. Make space to chill bowls of cookie dough, batches of eggnog, and perishable food gifts you may receive.

Article The Safer Easter Egg In the past people used the dyed Easter eggs for days after Easter. The eggs were left at room temperature for long period, and the cracked eggs were still eaten. With the increased problem and /or awareness of the food borne illness issues, these practices are certainly not recommended.
There is an increased problem with the contamination of the eggs with Salmonella inside the eggs, so just making sure that the eggs are not cracked is no longer enough to insure that the eggs are free of salmonella. Heating the eggs to 160 F. does destroy the salmonella, but there are other bacteria that produce poisons that will not be destroyed by heat. Eggs are very nutritious for bacteria as well as humans. The following are suggestions from the USDA for purchasing and handling eggs.
DO NOT purchase eggs that are not refrigerated. Bacteria can grow quickly if stored at room temperature.
At the store choose Grade A or AA eggs with clean, uncracked shell.

is BellaOnline's Holiday/Seasonal Cooking Host Color Easter Eggs.. the Natural Way Here's a fun way to color Easter eggs using all natural ingredients. The longer the eggs are in the coloring the darker they will become.
(Note: This is a fun activity, but since it requires using a stove or a microwave oven, please have an adult help you.)
Golden Brown
Simmer the brown outer skins of onions for 5-10 minutes. The more skins you use, the darker the color.
Blue Mash blueberries - fresh, frozen or canned - in a pan with a little water. Simmer 5-10 minutes. For red use raspberries! Lilac Dip eggs in cold grape juice. For a darker shade, simmer the juice for 5-10 minutes. Pale Green Chop and simmer the green tops of carrots. For orange , grate the carrots, and simmer for 5-10 minutes.

Christmas Vanilla Rolled Cookies
3-1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 c. shortening 1 1/2 c. sugar 2 eggs, well beaten 1-1/2 tsp. vanilla Sift flour and measure. Add baking powder and sift again. Cream shortening. Add sugar gradually and beat until light. Add well beaten eggs and blend. Add vanilla. Combine dry ingredients with creamed mixture thoroughly and chill. Roll as thin as possible and cut with cookie cutter or form in small balls and flatten with bottom of glass. Sprinkle with sugar, chopped nuts, coconut. Bake in 400 degree oven 6 to 10 minutes. My dad's from a family of only three brothers and sisters but his mother had 14 brothers and sisters, so all the aunts and their daughters, everybody made cookies.     I think the most interesting vegetarian cooking comes around holidays. It is during festive occastions, we get to use our imagination to fill up a table (and our tummies :) ).
