They were primarily farmers who came to this country, often to escape religious persecution in Europe. The cooking reflects both the German heritage and the hearty foods associated with the physical work involved in farming. Women spent a lot of time preparing three hearty meals a day. Preserving, such as canning and drying, was a necessity to help get through the winter months, and many recipes using preserved items are still popular. There are two misconceptions about the Pennsylvania Dutch that require explanation. One is caused by the use of the term "Dutch", which leads many to believe that the people came from Holland. In fact, the term came from the word "Deutsch", which is the German word for "German". Another thought is that all Pennsylvania Dutchmen are Amish. However, the Amish community represents only a small portion of the people who settled in eastern Pennsylvania during the German migration of the 18th century. The majority of the Pennsylvania Dutch are not Amish. Although the foods are very similar because of the German heritage, there are differences, probably based on the influences of the regions into which they settled. INTRODUCTION
The reason for this book is to provide reference material for an individual who is planning or cooking a meal for six to ten people. For larger groups, most of the recipies can be easily doubled or tripled and two or more dutch ovens may be needed. Most of the information has been targeted toword the first time dutch oven user, although, the more experienced cook may find a tidbit or two here and there.
I hope this book will intice all of you potential dutch oven cooks to "giv 'er a try" and you will see why I call them "man's best friend".

Dutch oven cooking has survived from the days of the open hearth, and flourishes still. When Lewis and Clark made their pioneering trek to the Northwest in 1805, they listed the Dutch oven as one of their most valued pieces of equipment. Legend has it that the Dutch oven was actually invented in colonial times by Paul Revere. The oven was then widely manufactured in the New England states, but after traders from Holland bought large numbers for barter with the Indians and frontier settlers, the name"Dutch oven" stuck. After widespread use in the colonies, the Dutch oven followed the pioneers west as an indispensable utensil in the chuck wagon and the miner's mule pack. Today, river runners, wilderness campers and even home cooks consider the Dutch oven an essential item, to whom it is affectionately referred to as the "D.O."

    Most Dutch Ovens are a cast-iron pot 10 to 12 inches wide and a few inches high that sits on hot charcoals in a campfire. (Lighter aluminum Dutch Ovens is available but not recommended.) Three-legged Dutch Ovens are the preferred design, allowing them to perch easily over the coals. When using charcoal briquettes, heat is controlled by placing 1 briquette under the pot for every 25 degrees of heat required by the recipe. Coals are sometimes placed on the lid as well, which can also be used as a skillet or griddle when placed upside down on the fire or stove. For easy cleanup, the bottom and the sides of Dutch Ovens are often lined with aluminum foil. Whether baking or boiling, a Dutch Oven is always used with the lid on to prevent ashes from falling into the food. Cooking gloves or hot-pot tongs are always used when removing the lid or handle any part of the hot oven. A wooden or bamboo spoon is best for stirring. A Dutch Oven won't rust if it is correctly "seasoned" with oil before use and properly maintained and kept dry. Never scrub Dutch Ovens (or any other cast iron appliance with soap. Store Dutch Ovens in a warm, dry place with the lid cracked so air can circulate. While appearing to be indestructible, Dutch Ovens can shatter if dropped on a hard surface, or crack if cold water is poured into them when too hot.

    The most impressive cooking I have ever demonstrated was a stacked Dutch Oven meal. You will need three Dutch Ovens. The bottom one is a 14" Dutch Oven, then you can use a 12" and a 10" oven. Have a good amount of charcoal going. In the bottom oven, layer sliced thin skinned potatoes (skin and all), sliced onions, and raw bacon. When the oven is about 3/4 full, put the lid on and add a layer of charcoal to the lid. Cover the top with charcoal. Put the 12" oven on top of the bottom oven. When the second oven is hot, put in about 2 pounds of hamburger meat (coarsely ground ok). Stir until no longer pink. Add a large can of tomatoes (we like the Rotel brand). Also add chili powder, salt, and pepper. Stir in a can of chili beans like Ranch Style beans. Put the lid on and add a layer of coals to the lid. In the top oven, put one of the cake mix cobblers. A favorite is the apple pie filling, spice cake mix, and a Dr. Pepper or root beer. I prefer to line this Dutch Oven with foil. I don't like scrubbing off the crusty sugary remains. Add the lid and put some coals on top.

    I think the first thing a person should learn about Dutch oven cooking is how to control the heat. Most of the cooking is done on the top of oven. As a general rule, you should have twice as much heat on the top of the oven as you do on the bottom. That is easy if you are using charcoal. You can simply count them. If you are using coals from a fire, it depends on what kind of wood you are using and hard woods seem to work the best. You just have try some and see what works the best. Any wood will work ,but you will find that some is surely better. I use only Kingsford charcoal because it is always the same. When I cook in the mountains of Idaho I use either aspen or fir. In the southwest cedar or mesquite seem to work well. Now that we know how to control the heat

    You can cook anything in a Dutch Oven that you can cook at home in the oven or on the stove top! You really don't need special recipes for the Dutch Oven. All that you need to do is learn some basic procedures and how to control the heat. If done properly, you can place the food in the oven and enjoy yourself while your dinner cooks. CONTROLLING HEAT
    Use charcoal if you are just starting to cook in the Dutch Oven. If you are the cook, DON'T FORGET TO BUY CHARCOAL. For a hot Dutch Oven, place the number of hot coals underneath equal to the diameter of the oven. Place double that number on top. For a 12 inch oven, 12 underneath and 24 on top. This will give you a hot oven of about 400 degrees. To reduce your oven temperature, reduce the number of coals 1 bottom and 2 top for every 25 degrees. If it is very cold and/or windy you will need to add a few extra coals. Always preheat your oven before you add the food. Your coals should last about an hour. If your cooking time is more than an hour, or if the coals are burning fast because of the wind, you must have extra hot coals ready to keep the oven temperature consistent. SPECIAL TECHNIQUES
    BAKING
    - If you are using a baking pan, use an oven rack or some small metal items (washers) under the pan to allow a hot air space between the oven and the pan.

    This is an invitation to try some of the little-known triumphs of those Pennsylvania Dutch farmers' wives whose pride, skill, crowning achievement, vocation and avocation has been- literally for two hundred and fifty years-a way with food.
    For out of the Pennsylvania Dutch farm country there has arisen a school of regional cookery second to none.
    The cooking is as simple, plain and wholesome as the people themselves-and as hearty. One of the most enlightening traditions of this "napkin under the chin" school of eating is the old one that every company table should include "seven sweets and seven sours" all served forth at once. The sweets might include currant or apple jelly, apple butter or applesauce, preserves such as quince, candied watermelon rind, or wild straw- berry; and two or three pies such as schnitz, shoofly, cheese cake, or "funeral pie" made from dried raisins or sour cherries.

    Dutch cooking A country so much characterized by its Calvinist heritage and the generally perfectly matching grey cloudy weather surely can't have a fancy cuisine, and it hasn't.
    Superficially this is only illustrated by the traditional Dutch home cooked meal: potatoes, accompanied by a piece of meat and boiled vegetables. The whole lot of it preferably covered with heaps of gravy. Herbs and spices appear to be obsolete altogether, which makes the food pretty bland. However, times are changing. Partly due to the influx of citizens from former colonies, and the Mediterranean, partly due to the formation of the global village these traditional patterns are changing.
    Nowadays the traditional Dutch meal is gradually being replaced by foods and spices from all over the world.
    So, these days one can find African, Arabian, Chinese, Indian, Indonesian, Italian and Spanish food on the Dutch dinner tables. And if not, then certainly there will be restaurants serving these kinds of food within the vicinity. Contents Dairy products Breakfast Lunch Dinnertime ...
