Autumn Chicken and Apple Stew
1 chicken, cut in parts
1/4 cup apple cider vinegar
1/2 teaspoon nutmeg
6 whole cloves
1/2 teaspoon salt
3 carrots, peeled, sliced
1/4 teaspoon pepper
6 apples, peeled, sliced
2 teaspoons Dijon mustard
1 cup shredded cabbage 1 3/4 cups low sodium chicken broth, warm 1 cup applesauce Spray large Dutch oven with vegetable cooking spray and heat over medium high temperature. Add chicken and cook, turning to brown on all sides, about 10 minutes. Sprinkle with nutmeg, salt and pepper. Spread mustard over chicken pieces; add warm broth, vinegar, cloves and carrots; bring to a boil. Cover, reduce heat to low and cook 15 minutes. Add apples and cook 5 minutes. Add cabbage, stirring into liquid. Cook, covered, about 10 minutes more or until fork can be inserted in chicken with ease. With slotted spoon, remove chicken and vegetables to warm serving bowl and keep warm. Into liquid, stir applesauce; boil on high temperature 5 minutes and pour over chicken and vegetables. Serve with brown rice, if desired. Makes 4 servings. Per Serving: 159 calories; 19.8 g protein; 2.2 g total fat; 0.6 g saturated fat; 14.8 g carbohydrates; 49 mg cholesterol; 574 mg sodium.

    State Cooking Pot, the Dutch Oven In 1997, the Utah State Legislature approved H.B. 203 , designating the Dutch Oven as the State Cooking Pot. The following information was generously sent to the Utah State Library by the International Dutch Oven Society located in Logan, Utah. Utah is not only the headquarters of the Society but the site of World Championship Dutch Oven Cookoff which is a major event of the Festival of the American West. When the early pioneers came to Utah they used a number of things such as lumbering prairie schooners, teams of massive oxen, mossy wooden water barrels, and heavy dresses which almost dragged on the ground. For most of us, such common pioneer artifacts are difficult to relate to or use in our lives today. However, there is one very popular pioneer indispensable which thousands of Utah families are using in their everyday activities. It not only looks the same but is still made basically the same waythe tried and true Dutch oven. Explorers like Jim Bridger and Peter Skene Ogden used the kettle versions on the trail but appreciated the standard three-legged, flat top with a rim version together with its "lite" breads, tasty fruit cobblers and delicious stews when they wintered in. Mountain men who rendezvoused in Cache Valley in the 1820's used them and Osborne Russell in his Journal of a Trapper writes about how much they appreciated having some greasy, grizzly bear meat to cook because the cast-iron pots needed re-seasoning after boiling roots for meals the previous eleven days.

I am a Wood Badge trained scouter and have been working as a leader in the Boy Scouts of America for a number of years. I have worked in all four families of Scouting and currrently serve on the Boy Scout Troop Committee. Here are a couple of links to some great scouting resources online! Among my favorite hobbies is Dutch oven cooking . I have several recipes to share with you if you are interested in learning about this skill. All it takes is practice, and who doesn't like to eat? The worst you can do to your food is burn it. Otherwise, it just takes some patience and a little experience to make something really delicious. For several years I have taught a class with some friends, on Dutch oven cooking for Scouting Leaders at the BYU/UVSC Merit Badge Pow Wow in November. We give out recipes every year.

Herbed Beef Stew Recipe By : Marlene Severson, Taste of Home, Feb/Mar 93 Serving Size : 10 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient Preparation Method 2 lb beef stew meat, 1" cubes 2 tbl oil 3 c water 1 lg onion chopped 2 tsp pepper 1 tsp (or 2) salt, optional 1 1/2 tsp garlic powder 1 tsp dried rosemary crushed 1 tsp dried oregano 1 tsp dried basil 1 tsp ground marjoram 2 bay leaves 1 can (6 oz) tomato paste 2 c potatoes cubed 2 c carrots sliced 1 lg green pepper chopped 10 oz frozen green beans 10 oz frozen peas 10 oz frozen corn 1/4 lb mushrooms sliced 3 med tomatoes chopped Brown meat in oil in a Dutch oven. Add water, onion, seasonings, and tomato paste. Cover and simmer for 1 1/2 hours or until meat is tender. Stir in potatoes, carrots, and green pepper; simmer 30 minutes. Add additional water if necessary. Stir in remaining ingredients; cover and simmer 20 minutes.

SCOUT COOKING
I became interested in scout cooking after seeing my son's patrols menu for an upcoming outing. I knew there had to be more to scout cooking than beans and franks, sandwiches and cold cereal. I started with two recipes for Dutch oven cooking. I now have assembled a book with about 200 recipes for Dutch ovens. My son has even competed in a few cooking events now.

Here are some photos of the event. Minutes of the Annual Meeting. O ur first DOG was held on May 24, 2003, at Ellicott Creek Park, and between 25 and 30 were able to attend. Many great dishes were cooked and served. If today was an indication of what we have to look forward to then we may all be gaining weight before the summer is over. O ur primary mission is to promote and encourage the art and skill of Dutch oven cooking, and to provide education regarding the benefits and methods of Dutch oven cooking.
