A few years ago this wonderful way of outdoor cooking had almost died out, but thanks to a few devotees who keep it alive, it now flourishes.
Why is it such a great way of cooking? Because you can make anything in a dutch! Scrumptious roast meats, delightful vegetarian dishes, delectable hors d'oeuvre, aromatic breads and sinful deserts.
Dutch ovens are perfect for any type of outdoor activity. But you don't have to go on an outdoor trip to enjoy dutch oven cooking. You can cook right in your own backyard. Instead of barbecuing, do it in a dutch! Fire up the briquettes and start cooking away. Your guests will beg to be invited back Each year for the last 15 years, we've been holding a dutch oven cook-off. It's on the last day of a dutch oven class that we teach, and everyone cooks up their best dish. We'd like to share with you a few of the winning recipes. (If you're interested in more, see our publications page and an inexpensive cookbook that we have available).

by Byron Bills I'm wild about Dutch oven cooking! Having been raised in Utah, which is most likely the Dutch oven capitol of the world, I guess it's no surprise. In July of 2002 I decided to publish this web page dedicated to promoting Dutch oven and outdoor camp cooking hoping that by sharing some general Dutch oven information, a few Dutch oven cooking tips, and a handful of Dutch oven recipes, others might benefit from this information. This page is my internet gateway to Dutch oven cooking. From here you can get to any of my many pages about Dutch ovens and Dutch oven cooking. For your convenience I have placed a contents menu below to help you find the information you need a little faster. Please take a look at my other Dutch oven related pages by using the menu to the left. Each of these pages contains a brief description of the information found on the page followed by a topics menu for easier browsing. I would like to get to know the people who stop by here and possibly learn something from them. Dutch Oven Cooking Tips
A Dutch oven is a must for delicious camp-out feasts. Just about anything you cook in a regular oven-pies, bread, stewcan be whipped up in a Dutch oven. The cast-iron pot cooks on hot charcoals in the site's campfire ring. Place three times as many coals on the lid as underneath the oven. (The flat lid will hold the coals in place.) For easy cleanup, line the bottom and the sides of the Dutch oven with aluminum foil. Use a wooden spoon to stir, and always cook with the lid on. Unless you like ashes in your food, don't tilt the lid when you remove it. When you do remove the lid or handle any part of the hot oven, use cooking gloves or hot-pot tongs. Before use, the Dutch oven will have to be seasoned with oil. Once a Dutch oven is "seasoned" it should never be scrubbed with soap. A Dutch Oven won't rust if it is seasoned correctly and kept dry. Store the oven in a warm, dry place with the lid cracked so air can circulate inside. A Dutch oven seems indestructible, but it will shatter if dropped on hard cement or it will crack if cold water is poured into a very hot Dutch oven.     The reason for this book is to provide reference material for an individual who is planning or cooking a meal for six to ten people. For larger groups, most of the recipes can be easily doubled or tripled and two or more dutch ovens may be needed. Most of the information has been targeted toward the first time dutch oven user, although, the more experienced cook may find a tidbit or two here and there. Simple dutch oven recipe making eleven cups of soup, at Lisa's cooking Cache.

STEAK SOUP
1-1/2 lbs. lean ground beef
2 c. diced onions
1 c. diced carrots
1 c. diced celery
1 tbsp. minced garlic
3 cans (13 or 14 oz.) chicken broth
1 can (16 oz.) crushed tomatoes
1 tsp. red pepper sauce (can use flakes 1/2 tsp.)
2 tbsp. Worcestershire sauce
1/2 tsp. freshly ground pepper
1/4 c. margarine 1/2 c. flour Brown meat in Dutch oven over med-high heat. Drain and rinse. Add onions, carrots, celery and garlic to meat. Cook 10-12 minutes until vegetables are softened. Add broth, tomatoes, red pepper sauce, Worcestershire sauce and pepper; bring to a boil. Reduce heat, cover and simmer 15 minutes. Meanwhile, melt margarine in small pan. Stir in flour. Cook over med-high heat until deep brown. *note, it may seem like it scorches, but it needs to be dark. Whisk into soup. Cover and simmer 15 minutes more. Makes 11 cups. SUBMITTED BY CHRIS M. Dutch oven cooking has survived from the days of the open hearth, and flourishes still. When Lewis and Clark made their pioneering trek to the Northwest in 1805, they listed the Dutch oven as one of their most valued pieces of equipment. Legend has it that the Dutch oven was actually invented in colonial times by Paul Revere. The oven was then widely manufactured in the New England states, but after traders from Holland bought large numbers for barter with the Indians and frontier settlers, the name"Dutch oven" stuck. After widespread use in the colonies, the Dutch oven followed the pioneers west as an indispensable utensil in the chuck wagon and the miner's mule pack. Today, river runners, wilderness campers and even home cooks consider the Dutch oven an essential item, to whom it is affectionately referred to as the "D.O."

Regulating Oven Cooking Temperature Regulating cooking temperature is by far the hardest thing to master when learning to cook in a Dutch oven. Hopefully the few tips I have to offer will help you out. First and foremost, always use high quality briquettes . I recommend using Kingsford charcoal. Kingsford is packed tighter than most other brands so it won't pop and spit, and it tends to burn longer than other brands. Avoid using "Match Light" charcoal as it burns hot so it doesn't last as long. Kingsford charcoal will generate good heat for about an hours time. For recipes that take more than an hour to cook, after an hour remove the remaining briquettes and ash from the oven and replenish them with new briquettes. Note: because the Dutch oven is already hot, you will not need as many briquettes as when you started cooking

77. Black Eyed Pea Soup
A simple dutch oven recipe, at Lisa's cooking Cache.

BLACK EYED PEA SOUP
1/2 pound sliced bacon
2 cups diced celery
2 cups diced green peppers
2 cups diced onions
1 can beef broth
2 cans whole tomatoes
2 cans black-eyed peas
In large Dutch oven, cook bacon until crisp; remove with slotted spoon, drain on paper towel. Add celery, green pepper, and onion to bacon drippings; sauté until soft, about 5 minutes. Drain off excess drippings. Add beef broth to Dutch oven; bring to boil. Add tomatoes and black-eyed peas; bring to boil again, then lower heat and simmer 30 minutes. Serves 10.
