You've recently been diagnosed with diabetes and enough of what the doctor said has sunk in that you realize you need to closely evaluate your diet. Although there was probably a lot of "don't eat this" and "be sure to watch out for that," hopefully there was also some encouragement, because a diagnosis of diabetes is not a sentence to a future of tasteless, bland cuisine.
How Does Diabetes Affect Diet?
Normally, the body produces a hormone called insulin. With diabetes, the ability to make or utilize insulin is impaired. Without insulin, the body can't properly use glucose, the simple sugar the body produces from the food we eat. Insulin is the key that unlocks cells and lets the glucose enter, thus providing energy for critical cell metabolism.
The regulation of blood sugar in the non-diabetic is automatic, adjusting to whatever foods are eaten. For the diabetic, however, extra care must be taken to balance food intake (and the resultant impact on blood sugar levels ) with insulin injections, exercise and any other glucose altering activity.

Diabetes Diet
The proper diet is critical to diabetes treatment. It can help someone with diabetes:
  • Achieve and maintain desirable weight. Many people with diabetes can control their blood glucose by losing weight and keeping it off. Maintain normal blood glucose levels. Prevent heart and blood vessel diseases, conditions that tend to occur in people with diabetes.
A doctor will usually prescribe diet as part of diabetes treatment. A dietitian or nutritionist can recommend a diet that is healthy, but also interesting and easy to follow. No one has to be limited to a preprinted, standard diet. Someone with diabetes can get assistance in the following ways:
  • A doctor can recommend a local nutritionist or dietitian. The local American Diabetes Association, American Heart Association, and American Dietetic Association can provide names of qualified dietitians or nutritionists and information about diet planning. Local diabetes centers at large medical clinics, hospitals, or medical universities usually have dietitians and nutritionists on staff.

The baby boomer generation is the first generation to be raised by mothers who were highly weight conscious, Chalmers believes. "Baby boomers have been called the children of the Weight Watchers generation ," says Chalmers. "As a result, we have more of a Diabetes dieter's mentality. "When I asked the group at the seminar 'How many people have ever been on a Diabetes diet?' every hand went up. 'Five diets?' Still every hand went up. About half the people in the seminar had been on 10 Diabetes diets or more. I had a woman in my office recently who had spent over $10,000 on Diabetes diets in the past seven years, and she's now the heaviest she's ever been in her life."
High sugars equal weight loss
But how do so many women come to believe that insulin is a root cause of their weight loss battle? Others who are using intensive insulin therapy may find they are gaining weight simply because they are over-treating low blood sugar reactions with too many calories, she says. Some of the women on intensive therapy noted that the results of the DCCT showed that people on intensive therapy are prone to modest weight gain. "So they ask me, "How do you expect me to lose weight when I'm on intensive insulin therapy? Doesn't insulin prompt you to cause your body to store weight as fat?' But that isn't what's happening at all. It's these other metabolic processes that are causing the weight loss, and the weight gain."

WHAT IS DIABETES?
The two major forms of diabetes are type 1 (previously called insulin-dependent diabetes mellitus (IDDM) or juvenile-onset diabetes) and type 2 (previously called noninsulin-dependent diabetes mellitus (NIDDM) or maturity-onset diabetes). Insulin
Both diabetes type 1 and type 2 share one central feature: elevated blood sugar ( glucose ) levels due to absolute or relative insufficiencies of insulin , a hormone produced by the pancreas. Insulin is a key regulator of the body's metabolism. It normally works in the following way:
  • During and immediately after a meal the process of digestion breaks carbohydrates down into sugar molecules (of which glucose is one) and proteins into amino acids.
  • Right after the meal, glucose and amino acids are absorbed directly into the bloodstream, and blood glucose levels rise sharply. (Glucose levels after a meal are called postprandial levels.)

If you are looking for information regarding vegetarianism and diabeties, there is an article in the Winter 1999 issue of Vegetarian Dietetics, “Can Type 2 Diabetes Be Managed Effectively with a Vegetarian Diet,” which states, “Consumption of a low fat, plant-based diet, coupled with regular exercise, can possibly reduce the risk of developing type 2 diabetes. A plant-based diet, rich in legumes and slowly digested grains, may improve glucose tolerance and insulin sensitivity and facilitate the successful management of type 2 diabetes.” The Vegetarian Way , by Virginia Messina, MPH, RD and Mark Messina, PhD, has an excellent section on diabetes and a vegetarian diet. Diabetes is a chronic condition that affects over 150 million people in the world today.
The precentage of people suffering from diabetes is increasing rapidly, to the point where many medical authorities are referring to it as an epidemic. So what is diabetes? Diabetes prevents your body from turning your food into energy. Instead glucose stays in your bloodstream, and left untreated can result in a range of complications.

How Food Affects Your Blood Glucose
Whether you have type 1 or type 2 diabetes, what, when, and how much you eat all affect your blood glucose. Blood glucose is the main sugar found in the blood and the body's main source of energy. If you have diabetes (or impaired glucose tolerance), your blood glucose can go too high if you eat too much. If your blood glucose goes too high, you can get sick. Your blood glucose can also go too high or drop too low if you don't take the right amount of diabetes medicine. If your blood glucose stays high too much of the time, you can get heart, eye, foot, kidney, and other problems. You can also have problems if your blood glucose gets too low (hypoglycemia). Keeping your blood glucose at a healthy level will prevent or slow down diabetes problems. Ask your doctor or diabetes teacher what a healthy blood glucose level is for you.

Millions of overweight Americans at high risk for type 2 diabetes can delay and possibly prevent the disease with moderate diet and exercise, a major clinical trial has found. The same study found that the oral diabetes drug metformin (Glucophage) also reduces type 2 diabetes risk, although not as effectively as lifestyle changes. Researchers announced results of the trial, called the Diabetes Prevention Program (DPP), last August after ending the study a year early. The study results are reported in the February 7 issue of the New England Journal of Medicine "This research conveys a powerful message of hope to individuals at risk for type 2 diabetes, a painful, life-threatening disease that has been increasing in this country along with obesity," said HHS Secretary Tommy G. Thompson. "By adopting a moderate, consistent diet and exercise program, many people with one or more of the risk factors for type 2 diabetes can stop the disease before it becomes irreversible." The DPP compared three approacheslifestyle modification, treatment with metformin, and standard medical advicein 3,234 overweight people with impaired glucose tolerance (IGT), a condition in which blood glucose levels are higher than normal but not yet diabetic. About 20 million people in the United States have IGT, which raises the risk of developing type 2 diabetes and cardiovascular disease. Once a person has type 2 diabetes, the risk of heart and blood vessel disease is even greatertwo to four times that of people without diabetes.
