BAKE
To cook by dry heat, usually in an oven. when applied to meat, it's called roast. BASTE To moisten food while baking by pouring liquid over it BATTER A mixture of flour, liquid and other ingredients that can be beaten or stirred. BEAT To mix with an over and over motion, either by spoon, rotary beater, or electric beater. BLANCH To immerse foods briefly in boiling water, usually followed by a quick cooling in cold water. Used to whiten or remove skins and for vegetables that to be frozen. BLEND To combine two or more ingredients so that each loses it's identity. BOIL To heat until bubbles constantly break on the surface. BRAISE To simmer in a covered dish in a small amount of liquid. BROIL To cook under direct heat or over hot coals. CARAMELIZE To heat dry sugar or foods containing sugar until light brown and of a caramel flavor. CHILL To place in refrigerator or other cold place until cold.

1 onion, chopped in large pieces
1/2 cup canola oil
1 clove garlic, chopped
1/4 cup parsley, diced in small pieces
1/4 cup fresh dill, diced in small pieces
1 cup chicken broth
3 large tomatoes, cut in small chunks,
seeds removed
2 zucchini, cut in large chunks
8 new potatoes, skinned, cut in1/2" slices
2 large carrots, cut in 1/2" slices 1 green pepper, seeds removed, cut in 1/4" slices 3 stalks celery cut in 1/4" slices 10oz. Frozen peas, thawed salt and pepper to taste Directions: Saute onion in hot oil in your pressure cooker for 2 minutes. Stir in garlic, parsley and dill and cook for 1 minute. Stir in broth, vegetables and salt and pepper. Close lid and bring to high pressure. Lower heat to medium and cook for 5 minutes. Release the pressure, remove the lid and stir vegetables. Drain any excess liquid.

Barbecue Chicken 1 Ingredients
  • 2 tablespoons olive oil 1 large onion chopped 2 (15 oz each) cans tomato sauce 1 cup red wine vinegar 1/2 cup light molasses 1/4 cup Worcestershire sauce 1/3 cup brown sugar packed 1/4 teaspoon ground red cayenne pepper 2 chickens quartered
Method In a 10 inch skillet, heat olive oil over medium heat. Add onion and cook until tender, about 10 minutes. Stir in tomato sauce, vinegar, molasses, Worcestershire, brown sugar, and cayenne pepper; heat to boiling over high heat. Reduce to medium low and cook, uncovered for 45 minutes or until sauce thickens slightly. You can keep this sauce refrigerated for up to 2 weeks, covered.
Reserve 1 1/2 cups sauce to serve with grilled chicken. Place chicken quarters on grill over medium heat; cook 20 to 25 minutes, turning chicken once. Generously brush chicken with some of the remaining barbecue sauce; cook 20 minutes longer, turning pieces often and brushing with sauce frequently until juice runs clear when chicken is pierced. Serve with reserved sauce.

With microwave cooking, the trick is to learn to cook by time not sight. Many people become frustrated when attempting to cook in the microwave because they do not realize that most recipes for microwave ovens are written for the 700-watt oven (the industry standard). Don't be discouraged if your first attempt is not a glowing success. It takes time to learn how to cook in your microwave oven. Now for the few recipes that I have. One of the first things I did when I started cooking in my microwave, was to buy a microwave cooking book and followed it exactly, until I was comfortable with using the microwave. The second thing I did and this very important, I kept a notebook beside the microwave and as I experimented with different recipes, I marked down the time it took to cook that recipe. Then there was no more guessing! There is no set conversion from conventional to microwave cooking. Remember when you are converting a recipe, use less liquid (almost 1/4 less) because there is less evaporation; and you can almost eliminate using salt. Foods containing liquid, sugar and fat cook faster. So reduce the cooking time by 1/4 of conventional cooking and then gradually increase until you obtain the desired result. The pawpaw is the largest edible fruit that is native to the United States. Pawpaws are indigenous to 26 states in the U.S., in a range extending from northern Florida to southern Ontario and as far west as eastern Nebraska. They have provided delicious and nutritious food for Native Americans, European explorers and settlers, and wild animals. They are still being enjoyed in modern America, chiefly in rural areas. There are 27 varieties ( Table 1 ) currently available from more than 50 commercial nurseries in the U.S. Most enthusiasts agree that the best way to enjoy pawpaws is to eat them raw, outdoors, picked from the tree when they are perfectly ripe. But there are also numerous ways to use them in the kitchen and extend the enjoyment of their tropical flavor beyond the end of the harvest season. The unique flavor of the fruit resembles a blend of various tropical flavors, including banana, pineapple, and mango. The flavor and custard-like texture make pawpaws a good substitute for bananas in almost any recipe. The common names, 'poor man's banana,' 'American custard apple,' and 'Kentucky banana' reflect these qualities.

My main concern every Halloween, pre-darkness-falling, has always been getting real food down my kid's throats before the big sugar OD. I go out of my way to make something for dinner that is healthy but kid-appealing. The rule in this house is they absolutely have to eat at least half a plate of solid food before we hit the streets. Then they're on their own!
Well, I do try to stop them from consuming massive amounts of gut-rotting, tooth-gnashing, artificially colored food substances but it's just no fun if a grown-up is hampering their joy at every turn. Halloween is their turn to party down, HARD. Cut them some slack. Unless they're diabetic, let them go a little crazy. They'll be less likely to crave candy forever after if you let them get a little sick on it once or twice a year. Weird mom here, I know! I indulge kids mercilessly. But I truly do believe if you hamper their simple pleasures, you hamper their ability to sort out life, too. Pay more attention to the speeding cars and sidewalk pot holes and let them go a little nuts. They'll love you more. :-)
